Carrot Cake Almond Butter Bars

I have a massive crush on carrot cake. It makes me weak in the knees. It makes my heart flutter. It’s actually somewhat debilitating.

A couple weeks ago I made Almond Butter Blondies (gluten free and only 6 ingredients) from Elanas Pantry for my intern fam (and me, obvi). The texture of these bars was just like cake–chewy and gooey–despite having no flour!

Well cravings for carrot cake surfaced (probably because Tina and Jenna have been eating it recently!) and all of a sudden it came to me that I could adapt this recipe to make a carrot cake-bar!

My first baking recipe–a success!!! It came out perfectly, I was shocked to tell you the truth. I was afraid the carrots would make it soggy. but the addition of oats prevented that.

There were fireworks going off in my mouth. It tasted like carrot cake but because there was NO FLOUR it was chewy and gooey–think brownie-texture. This recipe is SO SIMPLE. Just take a look at the ingredient list and directions and you’ll see!

Carrot Cake Almond Butter Bars

Adapted from Elanas Pantry: Almond Butter Blondies

Ingredients:

-6 oz. almond butter

-1 egg

-1/4 cup agave nectar

-pinch salt

-1/2 tsp baking soda

-1/2 tsp pumpkin pie spice

-1 1/2 cups of shredded carrots (strained)

-1/3 cup oats

-1.25 oz. (2 1/2 mini boxes) of raisins

Directions:

1. Beat almond butter, egg, agave nectar, salt, baking soda, pumpkin pie spice with a hand blender.

2. Mix in carrots, oats and raisins.

3. Bake at 325 degrees for about 30 min. until toothpick is clean.

The ingredients are so basic and easy to find.

Sounds deliciousa and healthy without the flour. I think I will try this one. I generally avoid flourless bread because they tend to have more calories with the added butter and eggs. The almond butter is a much healthier fat, so I think we can do this one. Thanks for the idea and good luck on your fitness and recipes.
