[No]-Baking to Procrastinate

This week is going to be devoted to unpacking–>organizing–>packing all my stuff in preparation for school, which starts in 2 weeks from today. I dread this process mainly because all my stuff is scattered between storage garages, closets, suitcases, and boxes. The last couple of years have been a bit crazy with moving houses before heading to college and then my study abroad trips to Mexico and London. I feel like all I ever do is pack and unpack…just to repeat the process again!

This morning I ate some granola from last night’s batch, which included oats, almonds, pecans, dried apricots, dried raisins, dried cranberries, agave nectar, soymilk, cinnamon, and brown sugar. A similar concoction can be found here.

I added it to Dannon Light & Fit Yogurt–Cantaloupe flavor. I’m not a big fan of these yogurts because they’re runnier than Greek style yogurts and don’t keep me satiated. However, they were on sale 3 for $1 at Harris Teeter….AND I wanted to try this limited time only flavor!

I had more granola than what’s pictured….duh.

Immediately after eating this I remembered that these yogurts have ASPARTAME….GUH!! I made the decision to cut back on artificial sweeteners (not including stevia) earlier this summer. With everything going on I haven’t really had a chance to sit back and reflect on any major changes physiologically but I haven’t missed them at all, so I am going along with the decision!

Oh well, what’s done is done, right?

In an attempt to further procrastinate my UOP (unpacking/organizing/packing) project, I decided to make…

No-Bake Almond Butter Aprican Bites

Ingedients

-2 cups of rolled oats

-1/3 cup of sliced pecans

-1/3 cup of diced dried apricots

-1/4 cup of flaxseed

-1/2 cup of almond butter

-1/3 cup of agave nectar

Directions (it’s easy peazy):

1. Combine all the ingredients together in a bowl

2. Mix well to evenly coat oats, nuts and fruit w/ almond butter and agave nectar

3. Roll into 1.5 inch diameter balls

4. Freeze for 30 min. or indefinitely. **Edited to add: can also be baked for ~20-30 min. at 350 degrees.

5. Enjoy!

I just had 2 of these suckers. 

I guess it’s time to go unpack now :(

Those almond butter balls look delicious! Love all your baking creations :)

I was intrigued by the cantaloupe flavor too, but don’t like artificial sweeteners either.

Hi there! I just stumbled across your wonderful blog through Maria’s, and I have to say you really have a fantastic AND unique blog!! It’s fun to read and super educational too. :) I’m kinda like you…trying to swear off artificial sweeteners! It’s so hard to cut ‘em out completely when so many foods are sweetened by them! *sigh*

and….OH GOD the granola looks amazing!!

Ooh those balls look really good! It took me a minute to figure out what an ‘aprican’ is! ;)

Anyways–I live in Fayetteville, been here about 2 years and originally from Ohio. I really love NC and never that I’d be saying that!! Where do you go to school?
