Easy-kiel French Toast

This morning I decided to make french toast using Cinnamon Raisin Ezekiel Bread! I still have about 1/4 of the loaf left (there are so many slices in one loaf!) and I had some eggs to use up too.

French toast is so scrumptious yet super easy to make!

I combined the following to make the egg mixture:

-1 egg

-1 egg white

-[a pinch too much] cinnamon

-2 TBSP of almond milk

I whisked it all together w/ a fork and bathed 2 slices of Ezekiel bread.

Pan fried for about 5 min. each side.

I inserted some pecans at the last minute and had a side of 1/2 a banana. I drizzled agave nectar on top!

At around noon, I had a Cantaloupe flavor Dannon Light & Fit yogurt w/ 1/4 cup of cottage cheese, and pecans.

The picture was taken after I snuck a few bites.

I also had 2 of the Aprican Almond Butter Bites (new name) I made yesterday. I’ve been experimenting with them, frozen, room temperature, raw, baked, etc. to find the best tasting version. I popped 2 in the toaster oven today and I think they taste better baked!! I’m making a batch to bring with me to the Healthy Living Summit for Caitlin’s Team in Training Bake Sale Auction to benefit The Leukemia and Lymphoma Society!

MMMM! I am for sure trying that recipe sometime. You are so creative. And I didn’t know that made Cantaloupe flavored yogurt!? I have been craving some forever!

Love how you squished the pecans in the French toast! Mmm it looks sooo good with the bananas and drizzle of agave. Hehe, love the name of the recipe too ;)

Love the name of your blog post title. Cracked me up! I made french toast this weekend, too but they didn’t look as pretty as yours :( Did I read correctly that you are you going to the Summit? Me too! If so, I can’t wait to meet you!!!
