Sunset Tennis

My mind is racing a million miles an hour right now!! I’m running about 5 hours behind schedule…I’m usually only ~2 hours behind hehe!

I was a total crazy baker chef this afternoon whipping up my Aprican Almond Butter Bites for the Healthy Living Summit Bake Sale this weekend. My flight to BOSTON is tomorrow at 10:52 AM so everything had to be ready to go by tonight!!

At around 6:30 my parents came home and said they were going to play tennis. Of course I wanted to tag along!! So I quickly finished baking, changed clothes, and headed to the tennis courts w/ the ‘rents.

We played a sweaty 1 hour and 15 minutes of awesome hard-hitting-cardio-tennis! It felt so great to sprint around the court, whack at balls, and sweat profusely! I had been putting off my workout all day and was almost going to go 7 days in a row (the past 2 days plus my trip this weekend) without working out. YIKES! We played while the sun was setting. It was absolutely gorgeous!

I came home and immediately hit the shower. I snacked a lot this afternoon so I wasn’t too hungry…and all I wanted was a refreshing drink that would fill me up….

It was the same Alive! Shake Green Monster as this morning. The glass was filled 3 times!

Baking

Here are some shots from my crazy afternoon of baking! I’m really enjoying baking and I am sooo tempted to follow in Angela’s footsteps!

The batch I made earlier this week used 2 cups of oats. Today’s batch was 6 cups of oats!!!! I was getting so bored rolling these bites. Good thing my uncle was in the kitchen so I could ask him a zillion questions about his life, hehe.

Your baking skills are so impressive. I wish I shared the same ability, but sadly, I have no skill what so ever in baking! The apricot balls looks amazing. Ohhhhh, I wish I was going this weekend to meet you and try one of your yummy treats.

Oooooooooh those look great!!! Do you use parchment paper or is that a silicone liner? I’m not reading anything exciting, it’s called Love & Respect. My husband got home in June from a 15 month deployment, so I’m reading it for tips to help my marriage. :)

Those apricot ab bites look absolutely fabulous! I hope you have a blast in Boston and have a safe trip :) I LOVE healthy baking too, and just found Angela’s lovely blog (there’s so much cool stuff there, that’s it’s taking me a while to look over, hehe).

Tennis with parents sounds like so much fun! Too bad the most exercise my parents get is gardening…and golf for my dad, but does that count?
