I spent about an hour typing up this post and even saved it after every couple minutes….just to have it totally delete itself!!! I’m. so. frustrated. right. now. Let’s see what I remember…
Today was day 2 of our putting contest in Golf class. I GOT A HOLE IN ONE!!! And I got about 7 pars (hole in 2). I didn’t want to tell you this (out of sheer embarrassment) but on Tuesday, I only got 1 measly par. Perhaps Tiger W. came and sprinkled some magic golf dust on me in my sleep
.
It was a cloudy day as you can see from this poorly lit photo. I had a slice of Ezekiel Bread with almond butter and banana slices and coffee in my thermos. My appetite was still strangely low. I have a feeling it’s going to come back in full force this weekend and I’ll be hunting for some carrot cake!!

I also had a Goofy shot of Organic Lowfat Plain Kefir.

Literally….

I have been craving this ever since trying my brother’s while at home. It reminds me of tart frozen yogurt. It’s actually more like drinking a tart yogurt smoothie. I had about half the carton throughout the day…1 shot at a time
I couldn’t think of what I wanted to eat for lunch….besides yogurt and kefir. So I had exactly that with a mini box of Total Raisin Bran Cereal.

The first half was with kefir and banana slices.

The second half was with pecans, kefir, and TJ’s Greek yogurt.

Duke has a program that lends out bikes to students free of charge! The program is extremely popular so getting your hands on a bike is next to impossible. There is no wait list so you literally have to check the inventory online and RACE over there to claim it immediately. Well, today I happened to click on the site and saw that there was 1 hybrid bike available. So I booked it there and made it just in time!! I can keep it for up to 28 days! Kinda like a library for bikes!

I relearned how to bike this summer on the bike paths of Hilton Head Island–I’m not used to biking on streets! I’m scared. I used to bike as a child every day. For some reason I stopped for 10+ years and finally got back on one this past summer. My first bike ride in May was pretty terrifying amusing. Think sweaty palms, crashing into trees, and lots of “ahhhhs!”
After my afternoon class I went to the gym and ran 2 miles and ellipticalled for 30 min. It passed fairly quickly because I watched the US Open on TV and read a trashy magazine
. I BIKED back to my apartment and nearly toppled over because I was carrying my heavy one-sided shoulder bag. Plus I was running on empty and my blood sugar was low…every pedal felt like hell.
I came back and immediately made a Kefir (surprise surprise) Green Monster. It contained: 1/2 banana, 1 cup frozen spinach, 1/2 cup almond milk, 1/4 cup Pom Wonderful, 1/4 cup kefir, and water. I also had some undocumented snacks–a couple crackers, a piece of chocolate, and some pecans.

Later, I went BACK to the gym for a 60 min. Body Tone Class (I know, I know). I haven’t strength trained in a couple weeks though and I need to get back into it! The class uses dumbbells, a mat, and a step to target every major muscle group. I finally got to go to a class with today’s instructor (my favorite)–she is hilarious and her voice sounds exactly like Carrie Bradshaw’s (no joke).
My muscles felt the buuuurn! It always amazes me how quickly my body starts to decondition itself after taking a break from strength training. I hope I don’t wake up too sore!
After the class I needed to fuel up!!! So I made dinner: a rice bowl w/ quinoa, whole grain brown rice, brussel sprouts and TJ’s seafood blend. It took me less than 10 min. to prepare. That’s about all the time my stomach could wait!
I was as easy as 1-2-3. First I steamed and stir-fried the brussel sprouts. Then I stir-fried the seafood blend (frozen). Lastly, I popped a Seeds of Change Uyuni Quinoa and Whole Grain Brown Rice Pouch into the microwave for 90 seconds.

I have a secret obsession with brussel sprouts. Growing up, I always heard about how nasty they were–FALSE!! I love them, especially because they look like baby lettuce heads
. Dinner was exactly the food groups I was short on today–veggies, grains, and meat/beans/nuts. We all know I had enough dairy!

I bought this pouch from Whole Foods last year and never got around to eating it. It actually expired in June 2009–oops! I literally ripped the pouch open and popped it into the microwave. It doesn’t get any easier than that folks! The rice was perfectly cooked and the garlic flavor was a perfect combo with the brussels and seafood. Plus, Seeds of Change donates 1% of net sales to advance the cause of sustainable organic agriculture worldwide.

I had dessert while frustratingly rewriting this post so no photo. I had Tart Frozen Yogurt w/ apple pie and pecans! You’ll just have to use your imagination.

i’m impressed by your golf skills. good job girl! congratulation on getting a bike…finally. your dinner looked delicious… that seafood blend is definitely looking better than the one we got from you know where hehehe.

That is VERY cool that you get to rent such a sweet bike for free- I’m totally jealous. I haven’t tried kefir but really want to – I always see it at WFs. Have a great weekend- enjoy some carrot cake!

My school has cruiser bikes for rent, I am always jealous, but I never rent them because I always have my own bike with me!
Good luck, it gets easier (the whole riding on the road thing) but it can be nerve wracking, especially when you’re worrying if you’re doing it right or whatever!
Things I need to try: quinoa and kefir. STAT!
So cool that Duke does that! Have fun with the bike- I haven’t ridden for YEARS. Apparently you never forget? I have a feeling I would crash pretty quickly.
