Brocamole

Today was one of those days where 3 hours would pass and I would try to think back to what exactly I did….and come up with absolutely nothing. NOTHING! What am I doing!? I don’t have time to waste like this!!!

Thanks for all the HRM advice! I’ve been leaning towards getting a Garmin for the GPS capabilities. I’ll let you know when I click the purchase button! I’m going to dwell on it for another couple days/weeks because that’s what I do when it comes to expensive purchases.

I drank/ate breakfast while trying to locate my missing textbook (from an Amazon seller). I won’t hear back from the carrier until Monday. Cross your fingers that he finds it!

Mornin’ Monster: 1 cup frozen spinach, 1/2 cup almond milk, 1/4 cup kefir, a splash of pomegranate juice, 1/2 banana.

Slice of Ezekiel Bread w/ almond butter, banana, and pecans.

Flatbread cracker w/ goat cheese and avocado….random, I know :)

Then I went to the gym for 20 intense minutes on the elliptical and 20 more on the Arc trainer. I could have kept going but I got too bored. Meh.

I wasn’t really hungry so I made a little smoked salmon, avocado, goat cheese on Ezekiel wrap quesadilla.

I wanted to use up my avocado before it went bad so I made some…

Brocamole With Ezekiel Chips

What you need:

-1 cup Brocolli

-1/2 cup mashed avocado

-1/4 cup chopped onions

-Pepper

-Salt

**I would have added tomatoes and lime juice if I had it on hand

What to do:

1) Blend cooked broccoli in Magic Bullet/food processor

2) Mix in the mashed avocado

3) Mix in the onions, pepper and salt

I put the Ezekiel Wrap in the oven for about 10 min. at 375 degrees F so they would get crispy!

Between showering and leaving the house at 5pm, I have absolutely no idea what I was doing (minus making Brocamole). It is all a blur.

I finally went to Starbucks to try and do some work. I wasn’t very successful…I blame it on the venti decaf coffee I got.

I gave up after about 90 min. and went to TJ’s and Whole Foods. I just needed some excitement :) I got a bunch of goodies that I munched on. I couldn’t awkwardly take a photo of all my groceries though because my roommates have about 10 people over tonight…and that would be WEIRD :) I’ll be sure to share them with you this week!

broccamole sounds delish, and that coffee looks divine. I am DYING for an iced coffee here in australia. They have NO idea what iced coffee is. I saw some girl with starbucks in her hand and almost pounced asking here where she got it!

I totally just go to TJs and Whole Foods when I’m bored!! LOVE the eats in this post! i found it through the brocamole link and I am SO excited to try making some…yum!! also the avocado/cottage cheese and crackers is so good..I’ve actually had that combo before…and on toast! it’s unbelievable!!
