I had a great workout yesterday on an empty stomach. I really don’t know where in the world my energy came from. I walked the 20 min. to the gym (no parking on weekdays allowed for low-lifes like me!) ellipticalled for 50 min. Afterwards, I randomly decided to do a 35 min. full body strength training workout using mostly dumbbells, body weight, and a few machines. Lastly, I walked the 20 min. back to my apartment. WHEW!
I finally decided to crack open my vintage can o’ pumpkin! I got 3 of these on clearance last year from Target after Thanksgiving. I’m so glad I saved one because of the pumpkin shortage this year….is that still in effect?

I decided to make the easiest microwave pumpkin pie that I definitely ate several times a week last fall/winter. I got the inspiration from one of Kath’s recipes way long ago!
- 1/2 cup of pumpkin
- 1 egg white
- pumpkin pie spice
- stevia
Mix well with a fork and microwave for 2-3 minutes!

Voila!! I topped it with yogurt and pecans this time for a faux cream cheese frosting!

When hunger finally struck, I had TJ’s European Style yogurt with Kashi Puffs, bananas, strawberries, pecans, and dried cranberries.

Little Bear wanted you to see that there really was yogurt hiding underneath!!
Also, it was a dreary day so my bed was the ONLY place I could get any decent lighting.

Warning: it was quite a snackie day! I don’t have classes on Mondays, so I don’t have to eat around any classes or meetings–I can just snack away!
I had a Pecan Pumpkin Butter Cookie…more like a bite/chew/patty.

Next up, I decided on a veggie snack plate. I tried to make it as pretty as those of Gliding Calm’s.

I also had a Spiced Pumpkin Pie Clif Bar throughout the night. I had little nudges of it at a time. That’s the last of these Clif Bars. Now that I’ve tried the Fall flavors, I need to take a break!

Half a cranberry+brie+almond butter BANINI. Look at the little banana butt stickin’ out!! This combo was perty good if I do say so myself

I decided to butcher my butternut squash too! Can you tell I was totally procrastinating work?!?!
Anyways, cutting him open almost led to some fingers getting cut off in the process….and a process it WAS.

I ate about 1/4 of the squashie and then had another snack: Brie, almond butter, cranberry, butternut squashadilla! Not the greatest photo but definitely the greatest tasting!!
I honestly can’t get over this combo. Get ready for more to come!

Needless to say, my tummy was pleasantly happy from all those little snacks! It was not the most productive day on the work front. I just can’t seem to buckle down until it’s seriously crunch time. Not good. Not good.
Today’s a pretty crazy day full of classes and Initiation for my sorority, which will take 2+++ hours!!!

1) What is your favorite combo of flavors? Currently mine is brie+cranberry sauce….reminds me of T-DAY!
2) Do you prefer to eat 3 square meals or many snacks? It depends on my schedule for the day. If I’m lounging around the house (by lounging I mean hard at work!!), I like to snack away. If I’ve got a busy day, I like to eat larger meals so keep me satiated. I HATE being hungry in class and not being able to do anything about it!!

Homegirl I just want to sit and have you feed me one day. These eats are UH-MAZING. I need to get my hands on some cranberry flavored something ASAP.
I love avocado with everything but I am really loving avos and grape tomatoes. I used to graze all day, then I did 3 meals a day, and now I eat when I am hungry. I like to eat lighter meals in the day and heavier meals later.
i’m all about the snacks!!!!! the more nomnomnoming the better!
i’d rather have many small meals than 2-3 large ones
I’m totally a 3 meals a day and two snack kind of girl. It’s what works for me. Eating 6 small meals or just snacking all day doesn’t work for me on many different levels. I feel like I’ve done nothing but eat all day and never feel truly full. I have found this is what works best for me!

I like to eat 5 small meals. It keeps my blood sugar level and I’m never hungry. Plus, I tend to overeat less because I know I’ll be eating again in a few hours.
I’m definitely more of a grazer, but I pretty much shove my face full of food before going to work because I don’t know when/if I’ll eat dinner! It’s pretty terrible, but there’s a 50/50 chance I won’t get to eat my delicious dinner.
My main meals are maaybe a bit larger, but I love snacking. I don’t have only 2 snack meals, I just go and snack on something when I feel like it. I guess that’s not so good
I know its bad but when I exercise on a empty stomach i usually have the best workout… I have no idea why but I do? OMG I need to try that pumpkin pie microwave recipe it looks soo good & simple! I love bbq sauce and cinnamon together… I like many snacks. I’m a total grazer but before I left for italy I was trying to have breaky & dinner then a few small snacks throughout the day but since being that is shot to h$ll.
I love the combo of chocolate and peanut butter. Perfection. I eat a solid breakfast and dinner but sometimes lunch might be spread out throughout the afternoon. I’m a snacker too!

The way I like to eat really depends on the day. During the week I typically eat 3 meals but on weekends when I’m home more I like to snack throughout the day.
B-nut squashes are a pain to cut, but SO worth it!!!

Love all those eats and snacks! I really love mixing flavours too. Can’t think of any favourite, way too difficult. It would include some of this: hummus, baba ghanoush, avocado, goat cheese, brie, yogurt, mango chutney, peach… Ha ha, way too many;)

I’m liking pumpkin, AB, and yogurt combo these days.
2) I am a snacker and like snacking, but sometimes I just don’t feel satisfied with it, so I try to eat meals instead. Plus, while I’m at school, it’s hard to eat often when there’s no food allowed in labs >.< although I still eat anyways!
I need to eat three square meals. The days I eat smaller meals/snacks I tend to be hungry all day long.
Hmm…combo of flavors is a tough one. I’m gonna go with vanilla ice cream and sweet potatoe fries. Sweet & salty!
YESSS brie & cranberry!! I just made a sandwich inspired by that combo for lunch (I had neither haha so I had to substitute!)…
And I think I like snacking better because I’m pretty good at turning “snacks” into mini-meals. Any formula to pack more delicious eats into one day get bonus points in my book

I read that the pumpkin shortage should be over. It seems like we have the normal amount of pumpkin here now so if you don’t, I would think you would be getting more soon? Hopefully! ; )
1) Fresh utz + sundried tomatoes…
2) I do a combination of both because of my schedule. Breakfast and dinner are square meals, during the day I just eat when I can. : )
