Friday’s Boos and Yays

I’m back trackin’ to Friday Fun day Fail day because I fell off the face of the Earth for a couple days….sorry! The exam went not so well, boo :( I definitely needed about 10 more measly minutes. Oh well, it’s over and the rest of the assignments for this class will be easier to do well on….I hope. Yay?

Breakfast (yay) was this amazing Creamy Butternut Squash ‘n Apple Breakfast Treat I made from the HungryGirl Cookbook. I used to read HungryGirl a lot but not so much anymore, mostly because of their use of artificial sweeteners, fat-free and processed products. I did purchase the cookbook back in the day so I thought I’d flip through it just for kicks.

I made it with the butternut squash I roasted from last week, apple, almond milk, stevia, brown sugar, pumpkin pie spice, and maple syrup.

The next morning, I topped my yogurt (of COURSE) with veggies and fruit (!!!) and added pecans, flaxseed, and TJ’s Cranberry and Apple Butter. It was De-VINE!

I broke for lunch while frantically studying for this exam. I was sooo scared-y cat for this test it was borderline ridiculous!!! I needed some comfort food!!

I couldn’t decide on 1 flavor panini so I made 2 different halves!  Double yay!

Each one had this magical combo–brie and cranberry!

The 1st half had microwaved apple slices (boo allergy to raw apples!) and lettuce.

After class I only got in 25 min. on the Octane Fitness Elliptical because I was informed the gym was closing at 5pm!!! WHAT!?!? BOO! Oh well, my muscles needed a breaky.

For dinner I had a bed of LETT with cucumbers, avocado, red onion, dried cranberries, AND a wheat berry salad!

These wheat berry salads are great for using up random ingredients in the fridge.  Yay! I used olive oil, feta cheese, tomatoes, onions, and avocado.

Afterwards my school BFF and I went to WFs (yay) to pick up these 2 ingredients to make Megan’s Pumpkin Coconut Chocolate Chip Bars.

I made some slight changes to the recipe such as these Vegan Carob Chips instead of chocolate chips. I also used 1/3 cup brown sugar instead of 2/3 cup regular sugar because I was using sweetened applesauce.

These were ooey-gooey-delicious! They are perfect to have for a healthy dessert or even for breakfast. They totally hit the Friday-night-spot!!

I’m spending this weekend writing a paper (boo), catching up on all your lovely blogs (yay) and answering all the emails I put on hold this week!

awesome eats, especially that pumpkin coconut bar… looks delish~~~ I wish we lived close so I can have a bite without having to baking it! hahahha……. yes, I’m that lazy lately! :)

Your allergic to raw apples & carrots ah thats horrible! Loving the cranberry and brie combo always a winner in my books. Sorry about the exam but there is still half a semester to fix your grade. Good luck with the paper this weekend, rock it!

Drooling over basically EVERYTHING you ate.

& don’t be too jealous of my dehydrator – it’s not one of those super snazzy excalibur ones – we had it for years, at least 10 I say. :)

Two sandwiches out of one is a great idea. I love variety. Dessert looks amazing. Too bad I can’t bake cus I will end up eating it all by myself.

Holy cow, pumpkin coconut chocolate chip bars??? Three of the best ingredients and one delicious form :D

I do the half sandwich thing all the time! There are just too many delicious combos and one stomach!

I’m glad that you are forgetting about that not so good exam. Totally not worth your time!

I love a lot of the ideas HG has, but I too never use their recipes because of the artificial sweeteners, mainly. I am totally against using artificial sweeteners, but they are definitely advocates.

Sorry to hear the exam didn’t go over well!

Both the panini’s look really good. I’m liking the brie/cranberry combo.

umm I want your bfast in my mouth!! looks sooooooo good right about now. I still get the hungrygirl emails, but rarely use them because of the artificial JUNK. I made one delicious treat from the new cookbook though, these fruit treats in baked wonton wrappers SO GOOD. Try it if you get the chance :)

I agree about Hungry Girl. I treat her stuff like a lot of other cookbooks… just take ideas and make them my own. No artificial sweeteners for this girl.
