Yesterday was a weird day for me. Not sure what was going on but I was just feeling blah. It was probably a combination of the clouds, the hormones and feeling lonely that hit me all at once. I only documented some eats but I did do a lot of baking so I’ll show you that. Oh and I finished watching Gossip Girl season 2, finally! T’was a very productive day…
Saturday
My muscles felt tired so I decided to take the day off from the gym. I started with a monstrous pomegranate!

I could eat pomegranate day and night. I love the burst when you bite into the seeds!!

With some yogurt…

I was craving something sweet so I had a piece of whole wheat bread with raw chocolate coconut spread, almond butter, pecans, and unsweetened coconut. Folded up!

Let the baking begin!
I found a recipe for Pumpkin Carrot Muffins on Sparkpeople that I modified:

Pumpkin Carrot Muffins
Ingredients
- 1/2 cup pumpkin
- 1/4 cup brown sugar
- 2 tbsp olive oil
- 1 egg, beaten
- 1 cup grated carrots
- 3/4 cup of whole wheat flour
- 1/4 tsp salt
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1 tsp baking powder
Directions
1. Beat together wet ingredients (pumpkin, brown sugar, oil, egg, and carrots)
2. Mix dry ingredients (flour, salt, spices, soda, and powder)
3. Add dry ingredients to wet ingredients.
4. Fill 6-lined muffin tins.
5. Bake at 350 degrees for 18-20 min. Makes 6 muffins.
These muffins turned out quite fluffy! They were not as dense as typical muffins from a store–more cup cakey.

I also baked some Aprican Almond Butter Bars. I used the same recipe as the bites except I added 2 small scoops of chia seeds and I pressed them into a square pan to make bars instead instead of bites.

I wanted to make some bars so a) I wouldn’t have to spend money buying bars at the store and b) I could take them along with me on the days that I am busy busy.

I did, however, use the leftovers to make more bites ha!

Sunday
I woke up and went to the gym immediately. I needed to shake off the weird, crappy day I had–just get it out of my system and get my energy going. I ran 3 miles and ellipticalled for 30 min. I didn’t feel like 100 bucks but it still did the trick.
I was frozen when I came home so I made some warm oat bran w/ banana, pumpkin butter, almond butter, pecans, and flaxseed.

I also crumbled a Pumpkin Carrot Muffin on top!

After two long meetings, I grabbed dinner at the dining hall before hitting up the libs.

- Eggplant
- Sweet potato
- Kidney Beans
- Tofu (w/ cinnamon??)
- Pita w/ hummus

- Red Peppers
- Grape Tomatoes
- Red Onions
- Dried Cranberries
- Sunflower Seeds

1) Did you do anything fun this weekend? Nope! Other than a lot of baking, which I guess would be fun for me if I didn’t have work looming over my shoulders. Next weekend, however, will be full of jam-packed fun with the rents.
2) In which city have you had the best culinary experience? Not sure, probably Las Vegas with all the amazing buffets
The places I visited in Europe could have been great but I didn’t have the money to afford the amazing food…sad.

EASILY are the best food of my life in San Francisco. I’m sure the fact that I was working at a catering company helped, but there are soooooooooo many good resturants in that city. I miss it so so much.

The food our honeymoon cruise had was AMAZING. I swear I want to go on another cruise just for the food alone. It was unbelievable!

Hmm this weekend flew by! I did a lot of snuggling in bed watching TV, which is always fun for lazy days and I baked. I think that’s it!
Best food experience city is probably NYC – I never leave dissatisfied. Restaurant, street car, tiny walk in place, deli, market, etc. always has something I love! The diversity is great, there’s literally something for everybody and a taste for every mood.

My weekend went by so fast. I had a busy saturday and I slept in sunday and relaxed ALL day. It was a great weekend overall!
Best culinary experience is probably Chicago. I love all the food places in Chicago, esp. China town! lol

I’ve got to make more. I went to a mexican restaurant with my boy and friends for a little celebration. But it wasn’t really fun 
The best food experience would be in Prague. I haven’t been to Paris or fancy towns like that, but Prague has some delicious eats. And great beer!

Yummy food! I haven’t had pomegranate in ages, its such a fun snack to eat but i always end up staining my clothes haha. Your dining hall has a kick a$s salad bar my schools cafeteria got a half star rating for its food – yes half a star soo bad! I went to verona this sunday and that is where I had my best culinary experience… pizza en funghi (mushrooms)it was soo good!

1) I went to the State Fair this weekend—and it was bunches of fun!
2) Best culinary experience: Paris, France. The breads were amazing probably the best I will have in my life.

1) I watched football! 2) New York… every time I visit, I fall in love with another restaurant. I could never possibly go return to every place that I loved the last time and still try something new so my list of food-loves in Lower Manhattan is quite long.

Pomegranates and yogurt…yum! I never think to pick up pomegranates when I’m at the store…mental note to self.
This weekend I was in Charleston celebrating turning 30 with 5 of my high school friends!
We would be fantastic roommates with all our baking experiences!
Everything tastes better simply for being eaten in Europe…although I must say anything in Italy is AMAZING. Especially pizza.
