Leftover Ingredient Rescue

Another unproductive day. I’m going to have to ban myself from the gym and the oven if I can’t get my shiz together! I woke up and did accounting homework for about an hour while munching on a pre-workout snack.

I ate half the muffin, half the Z-Bar and an Aprican Almond Butter Bite.

After working out, I had the other halves :) My workout was the only productive thing I’ve done the whole day….as usual.

  • Walked 25 min. to the gym
  • Ellipticalled for 50 min.
  • Quick lift sesh for 15 min.
  • Walked 25 min. back

I didn’t get back to my apartment until almost 4 PM! I didn’t wake up until 10 AM (yikes!) so it was actually like my ‘lunch time.’
I’ve had the following ingredients in my fridge for the past couple of weeks that NEEDED to be rescued (eaten up):

  • avocado
  • onion
  • mini peppers
  • apple
  • carrots

I never ever ever throw away food so I decided to get creative! I made a salad with goat cheese, avocado, mini peppers, tomatoes, and lettuce.

The rest of the night was just a series of random [healthy] eats.

Strawberries and banana slices with a couple bites of tart frozen yogurt and almond milk.

More leftovers….1/2 an apple and 3 carrot sticks! I’m allergic to these raw so I decided to bake ‘em up! The oven and I are joined at the hip, I swear.

While photographing my food, the UPS guy came!!! He asked, ‘Are you taking pictures of your FOOD!?’ To which I responded, ‘Yep! I’m bloggin’ about it!’

He probably thought I was psychotic…no worries. Anyways, he tossed me this package (literally, no joke). We live on the 2nd floor and he asked if I wanted to catch the package….

IF HE ONLY KNEW WHAT WAS INSIDE!!!

ohh i cannot wait to see what that pacakage is!!

the baked apple chunks look SOO good! I love warmed up apples, this sunday I chopped them in put them in my oatmeal which was soo good!

that avocado eggplant panini looks amazing too!! I forget how buttery and delicious avocado is!!

Seriously, stop it with the Zbars – I’m beyond jealous. I asked the health food store to order me some, but I have to double check that they remembered!

Maybe make yourself a deal that you can only bake if you get certain things done throughout the day. Or, if night workouts are good for you, go to the gym after your other “necessaries” are completed. I used to do that all the time.

I hate wasting food too, and sometimes we have a buttload of produce to use up, and only one mouth :X Nobody else in my household want to eat as many veggies, but buys too many! Awesome meals you made with your leftovers though :)

I ate 1/2 of that same Z-Bar today too. Pretty tasty! :)

I can’t seem to throw food away either. Its my goal every week to use every single food item in the frige. I usually do a pretty good job at it too.

I FINALLY tried the Spooky S’mores Z Bar! OMG sooooo good, definitely my favorite!

And that panini and salad look delicious–I’m obsessed with Goat Cheese right now and just bought a huge pack that I can’t wait to use!

All your food looks *FABULOUS* again!! YUM!! Do you use a point & shoot? I’m looking for an “extra” (I have a Nikon D90), but wanting one that my hubby can use and is easier to tote around than a DSLR.

hahah I’m a lovin’ the frankness with them UPS man! Sometimes it’s much easier telling a stranger about a food blog (or any blog!) than telling your friends though…nonetheless, you should be proud of your food!! Thanks for doing the open sandwich picture so we can get a good glimpse of what’s inside your sandwich!

I have to go back several posts to find recipes to your goodies. They really all look so good!!! Now i wanna know what’s in the box!! :)

I love how vibrant the colors are in your food! You have such lovely pics! I hate letting food go to waste, too! I think that may be part of the reason why I tend to overeat – eek! But at least you used your leftover foods wisely and healthily. Kudos to you! Love that eggplant, avocado and got cheese panini. I can just imagine the creaminess from the goat cheese and avocado smooshed all over the eggplant – holy yum! You are the pressed sammie queen!

girrrrrl i just caught up on SIX yes SIX posts! you busy bloggette! highlights? wheatberry salad, med wrap, gorgy muffins and getting creative with leftovers! that’s my girl! whew. i felt so out of touch. glad you have been eating well and i hope TG break comes FASSST for you!
