Jumping back to hump day…
Yesterday I had yet another Waffle Mountain or HUMP haha (and some additional yogurt on the side). I’m thinking this is going to be a new breakfast addiction of mine. I can’t get over how amazing it is!

Yogurt, almond butter, pumpkin, banana, pecans.


Between classes, I hopped on the Arctrainer for 50 min. My heart rate hovered between 140 and 160 bpm. Thanks, Garmy for tellin’ me so!
Afterwards I grabbed this salad from the dining hall to eat for dinner. I ate the sweet potatoes, red peppers and hummus to hold me over.

After I got back to the apartment, I topped the salad with tofu marinated and grilled in TJs Sesame Soy Ginger Dressing.

It’s weird that I grew up eating tofu not because it was a ‘vegetarian’ food, more so just another ingredient to cook with. I eat it now for the protein! I really liked the taste of the 365 Organic Extra Firm tofu from Whole Foods that I used. It was $1.69 for a 5 serving container too.

I got a mini dish of cous cous from the salad bar as well. Just to try it!

Dessert was bunch of unphotographed eats mostly in the form of kefir, yogurt, dried fig, and almond butter.

Before I go, I wanted to answer a question that Carla asked a couple days ago….
“Do you use a point and shoot [camera]? I’m looking for an extra, but wanting one that my hubby can use and is easier to tote around than a DSLR.”
Yes, I use a point and shoot. I have a Canon PowerShot SD 600. Yep, 600 (they’re up to the 1000s now!!). I got it almost 3 years ago on Black Friday
I’m surprised it is still working so well. When taking food photos, I usually put it on the macro setting, don’t zoom in (!!!) and hold still. I would love to have a DSLR but unfortunately that won’t be happening ANYTIME soon! I love my Canon and if I ever get another camera you betcha I’m getting another Canon.

Also to clarify, my Recruitment Counselor position isn’t actually a job!! It’s just a position I’ll have for 2 weeks during Sorority Recruitment in January! An actual job would get it’s own post

tofu is one of my favorite food, so versatile… love adding it to everything!

allie–it always AMAZES me that you eat this way in COLLEGE. I was a canned soup/omelet QUEEN… really didn’t span beyond those cooking efforts (while I was in the dorm, any way).
i also use a pt & shoot from canon SD 780–and i love! the large and in charge cameras are reeeeally tempting…and i’d feel really badass toting one around…but they just aren’t practical for me since i really only take pics of my food and my drunken friends… haha
Co-sign on the Canon cameras. I love mine. I bought another brand and I was not nearly as happy with it and it broke within a year. I went back to Canon after that.
Very cool that you made the salad into two meals. I would’ve scarfed the whole thing down it looks so good!
The flash on my camera stopped working yesterday. Time for a new camera! I’m going to look into the Powershot.

Your dining hall salads always look so fresh and delicious. Most college students steer clear of all that healthy stuff. You are lucky your school has so many yummy options.
I am also obsessed with waffles topped with yogurt and fruit, they are so quick and easy to eat.

Great looking waffle! When you say, don’t zoom in, do you then crop your pics? Or just hold the camera close to the food? Your pics are so clear and I have some sort of canon powershot! I get a ton of fuzzy photos!
I told my Garmy that you got a new Garmy and she def got a little jealous!! They’re different breeds, but I think we should get them together.

That tofu looks phenom! I have yet to venture into TJ’s salad dressings…this could be dangerous.
