Run With Me

in Breakfast, Fitness, Groceries, Lunch, Oven Lovin' (Baking)

Last night I got sick of editing my resume so I baked some Whole Wheat Pumpkin Raisin Scones. Some people clean when they procrastinate, well, I bake :) I had been eyeing this recipe for days. I didn’t have an egg though so they turned out vegan!

IMG_8570.JPG

I have a bajillion photos to show you so I will post the recipe tomorrow morning! I triple dog promise!

You can all probably guess that I had a scone for breakfast.

IMG_8576.JPG

Warmed in the microwave and topped with almond butter and pumpkin butter.

IMG_8585.JPG

I also had some TJ’s Euro Yogurt w/ pecans and cranberries. One day I’ll get sick of topping EVERYTHING I eat with pecans and cranberries. Until then…

IMG_8587.JPG

It’s light outside when I wake up on my early class days now!! Woo hoo!

IMG_8588.JPG

After Golf Class, I decided to stay and run on the WaDuke Trail. It was the most beautiful day in NC today. Not a cloud in the sky, sunny yet breezy. If only every day were like today!!

I took my camera along to show you this lovely course. Come run with me!

First some shots of the Golf Course and the patio area that looks out onto the course.

IMG_8591.JPG

This hotel is $$$$$$ per night!! See why?

IMG_8596.JPG

The course map: Today I ran the Fit Trail (in the upper right hand corner–see?) on purpose!! Unlike last week :)

IMG_8621.JPG

Al Buehler Trail is the name.

IMG_8601.JPG

I love that the sun shines in through the trees. So peaceful.

IMG_8604.JPG

The best part is getting a peak at the gorgeous golf course along the way.

IMG_8605.JPG

IMG_8606.JPG

One of many creeks.

IMG_8607.JPG

Hydration!! There are only 2 of these but better than nothin’

IMG_8609.JPG

This race has roller coaster hills…

IMG_8612.JPG

I usually use the steeper hills for my walk breaks. Other people don’t need to :) This man was running up and down this one HUGE hill over and over again. WHEW WEE!!

IMG_8613.JPG

Today I RAN up the hill…and look what it did to my heart rate :) Thanks, Garmy.

IMG_8614.JPG

What goes up…must go UP!

IMG_8620.JPG

Just kidding…there are down hills too!

IMG_8622.JPG

Some more breathtaking shots:

IMG_8615.JPG IMG_8624.JPG

After the trail + the Fit Loop….I still had more to give. Hello ENERGY!! So I ran ~1 mile around the athletic fields and the parking lot. Which brings me to…

IMG_8626.JPG

5 exhilarating miles! I walked a total of 0.35 miles throughout the run so it was actually 4.65 miles in ~45 min of actual running.

IMG_8631.JPG

Streeeeetchin’ even though I’m pretty sure my shins are peeved now!

IMG_8633.JPG

I was all sweat smiles for the next few hours!! Holy ENDORPHINS!!!

IMG_8645.JPG

In addition to my run, I walked 4 miles to and from the Golf Course. By the time I got back to my apartment, I was hitting a major wall!

I stopped by an on-campus shop to use up some more food point$!! I got:

  • Pita Chips
  • Sun-dried Tomato Hummus
  • Intense Pear Dark Chocolate (OH MY GOODNESS)
  • Seasonal Clif Bars to eat and bring home

IMG_8656.JPG

IMG_8657.JPG

I cannot WAIT to dig into this. I love pear. I love chocolate. What more could I ask for? (It also has almonds!!!!!!)

IMG_8659.JPG

Yum.

IMG_8660.JPG

Not bad, not bad. I’m likin’ the ingredients list!

IMG_8661.JPG

For a SUPER late lunch, I made a hugh jass salad with all the goodies:

  • sweet potato
  • eggplant
  • avocado
  • goat cheese
  • kidney beans
  • grape tomatoes
  • red onions
  • cucumbers

IMG_8668.JPG

It was scarfed down pretttty fast. Too hungry for mindful eating : /

IMG_8670.JPG

I also broke into the pita chips and hummus!

IMG_8671.JPG IMG_8673.JPG

Alrighty. That’s a long enough post for today!! I hope you enjoyed the photos I took of the trail and running along with me!

Quirky Q’s

1. What’s your favorite flavor hummus? From a jar or made from scratch? I’ve never made hummus from scratch (gasp!). My favorite thus far has been eggplant hummus!

2. What’s one of your favorite TV commercials? See the video for mine.  I love the lactose intolerant line ha. ha. ha.  It gets me every time!

Wow, that’s beautiful! I’m jealous! I think the sun has been out maybe 2 days in the past month here in Chicagoland!

I’ve never made my own hummus either. I usually opt for plain, but once in awhile I like garlic.

haha I love those commercials. That woman definitely has nailed the “mom” look – the evil eye she gives them when they laugh at her. I also like the Comcast commercials w/ the Slowsky turtles. Esp. this one http://www.youtube.com/watch?v=_QuuOwQB4MQ The end cracks me up everytime!

I’ve never made hummus – and I never buy it either. I get sick of it REALLY fast so I only order it when I’m out to eat on sammichs and stuff!

One of my closest friends is Lebanese, and NOTHING compares to her grandma’s hummus. It sort of ruined all hummus for me; I am usually disappointed!
Favorite TV commercial – anything with dogs or cats as the stars except that heartbreaking, awful, but necessary Sarah Maclachlan SPCA commercial. SOB.

Looks like a gorgeous run, I had no idea that WaDu Inn had trails.

That trail looks gorgeous! I much prefer running outside vs. inside but the trail we have at UGA blows and there’s way too many hills around campus. Boo.

Wow, you don’t lie, that is a BEAUTIFUL route to take a run. Have I told you recently how jealous I am of your surroundings? Amazing food, great weather, beautiful campus….can I come visit you for a weekend? No really, I’m not even joking. I think a road trip is in my future! ;)

Good job on your run! I’d keep running if my course looked like that too :)

My favorite commercials are the Get In Shape Girl commercials from the ’80s because my sister would throw her socks at the screen whenever the girls would scream “Get in shape girl!” It always made me laugh!

What a beautiful trail to run on!

Hummus – I love Cedar’s Zesty Lemon Hummus. Yum. Or Tribe’s 40 spice.

Commercials – I love those baby e-trade ones. They always make me laugh.

I’m a baking procrastinator too! I try to think of it as testing new recipes and experimenting, rather than procrastinating though. :)

What a beautiful running trail, it would totally motivate me to run more often. Between the walking and running, you covered some major mileage today!

It’s funny, but my favorite flavor of hummus is actually sun-dried tomato. I can’t believe you have never made it from scratch, it’s super easy. Here’s a recipe if you ever want to try making it yourself:

Love it when people show me where they run/walk. Beautiful area!

Also, how lucky are you that your school has such awesome stuff available to buy with your food points. My school had crap. Not much healthy, for sure! :D

You are a baking fool these days! I should drop by more often:)
I love the Al Buehler trail too! I ran like 3 5K races there last spring and fell in love with the course’s atmosphere.
Looks like someone went shopping at Bella Union! I always stock up on Clifs there, and I highly recommend the roasted red pepper variety of hummus.

My coworker had some of the wild garden hummus in the fridge at work once and I snuck a dip of it and it was super good now I just gotta find it! Pear and dark chocolate sounds like a winning combo to me! I love regular hummus or roasted red pepper!

What pretty places to run! I love baking to procrastinate too…although I sometimes clean as well. :) Both at the same time?? The ultimate procrastination!

Those trails looks so pretty! If you ever see a 5′10″-ish blonde guy FLYING through the trails, he went to college with me and just WON a marathon in 2:33. Yikes.

LOVE this post! I’m gonna hold you to posting that scone recipe, girly! Looks awesome!!

Beautiful trail you have to run on. I don’t think I’d ever get sick of the scenery.

VERY jealous of your food buys. I adore the seasonal Clif bars. YUM!

My favorite hummus is Buffalo from Super Target! It is perfectly spicy and soooo yummy! Loved the gorgeous pictures from your run-you look too cute and all smiles after!!

I made hummus from scratch a few times, it’s surprisingly so easy to make! My non homemade favorite is usually artichoke. Yummo! I need to try some TJ hummus, for sure.

I think my favorite commercials are some of the cheesey Liberty Mutual commercials that ran last year – it would show people doing nice things for other people in this big continuous circle. It was so sweet and would make me tear up! Mainly because I am a gigantic sap.
