Apple Almond Avalanche

T’was a fairly regular school day hump day today. We had the Assistant Dean and Director of Substance Abuse Prevention and Health Promotion come in to talk about alcohol at Duke and on college campuses in general. I heard him speak in my Diet and Nutrition class last year but he still managed to scare my of-legal-age butt all over again. There are some crazy kids out there that need to wake up and be careful!

For breakfast I had a mountain of a waffle. The microwaved apple slices drizzled in almond butter were on the brink of a major AVALANCHE!

A few pieces came tumbling down as I took a bite!  AVALAAAANCHE!!

I also had some TJ’s Euro Yogurt mixed with Green Tea powder topped with strawberries

I got this about 2 years ago and I love mixing it into green smoothies, yogurt, steamed milk, etc.

It only has a touch of stevia added for sweetness!

Between classes, I hopped on the elliptical to loosen up my tight muscles. I ended up doing a light 50 min.

I went to the Career Center to have my resume looked at and the rather old experienced woman had good tips for me. More editing to do! When does this process come to an end? Ever?

I ate this Navel Orange and Whole Wheat Pumpkin Raisin Scone during my next class as a post-workout snack. Do they call these navel oranges because of the little navel butt that they have?

I munched on some lots of pita chips while chatting with my BFF on the phone. These are going fast!!

For dinner I prepared a salad and sandwich combo. The salad contained:

  • Tomatoes
  • Goat Cheese
  • Avocado
  • Broccoli Slaw (totally made the salad tip top!)
  • Red Onions

The sandwich contained hummus, eggplant, and lettuce. Since when does it start getting dark at 5:30pm!? Oh yeah, since we gained that glorious hour on Sunday!

Hence, my poor-lit photo…excuses excuses :)

For dessert I had two THREE squares of Lindt Intense Pear Dark Chocolate. This chocolate is amazing! I love the crunch of the almonds with the flavor of pear. Too perfect!

I also had some kefir and TJ’s Tart Frozen Yogurt. <3

I’ve got the busiest and most exciting weekend coming up. It’s going to be pretty frickin’ cool. I’m dying to tell you all about it!! Don’t worry, I won’t leave you hanging for too long. Get ready for some action though!!! (NO, not like THAT!)

1. What’s your favorite kind of chocolate? I’m talking brand/flavor/add-ins/dark/milk/white/Cocoa %… I love dark chocolate 70% and higher. Milk chocolate is good once in awhile too! My favorite is probably Green and Blacks Dark & Gingerbread. It was a seasonal flavor that I tried in London last year. It had crunchy gingerbread pieces embedded in the chocolate….so good!!

Stacy’s Pita Chips are my vice. Have you tried the Cinnamon Sugar flavor? To DIE FOr!! Really, these things are dangerously amazing.

That chocolate = true perfection. Wait, it even gets better…Dark Chocolate and Gingerbread chocolate? Are you serious???? :)

I am so excited for you and I don’t even know what you are doing this weekend. You’ve built up the anticipation girly, just don’t forget to fill me in. I’m so pumped! ;)

Can’t wait to hear what this exciting weekend contains! Question-do your feet ever fall asleep on the elliptical? Mine do! Yes, those pita chips are dangerous! My current new fave is spicy three pepper pita chips (New York Style Brand). Oh chocolate, where to begin? I do love Trader Joe’s Organic 73% super dark chocolate (in the purple wrapper). I love Lindt’s dark chocolate too-I’ve had a chili one that was good and an orange and almond one that was amazing. That gingerbread kind sounds fab!!

I just love chocolate, really! My current favs are TJs Dark Chocolate Mint UFOs and xoxo brand with cherries & chili or cherries & almond!

i don’t really eat bar chocolate, so no favorite flav. vanilla almond is bomb flavor combination! try the granola. it’s rockin! it’s not too sweet and the almond flavor is nice!

so good plain!

YUM YUM YUM!
That’s all I have to say about your recent blog post, hehe. That waffle looks absolutely heavenly! And you just inspired me to put a few splahes of orange juice in my TJ fro yo!

I used to (before ED) LOVEE dark chocolate with either: pb, mint, espresso.. I also love the dark chocolate/pretzel combo.. Nothing beats sweet & salty in one bite :)

I don’t think resume editing ever ends. Even after you graduate and get a job you have to keep it at the top of its game in case you ever need it. Quite a pain in the behind!!!

Also, my favorite chocolate has quickly became Hershey’s Bliss dark chocolate. I used to hate dark chocolate, but my husband always loved it. He’s won me over. And the bitterness makes me slow down and really enjoy it.

Yeah, that lecturer totally freaked me out today too. I will be having nightmares about date rate drugs tonight, thank you very little.
I really love Lindt 70% mini squares. That way I don’t feel quite so bad about eating 7 of them:)
Also, any dark chocolate with coconut involved is A-OK in my book.

GINGERBREAD dark chocolate? I need to find that , asap!
I love dark chocolate the best. 80% or higher :) Greens and Black is a great brand.. and there is one brand (forget the name) but it is really good, and proceeds go towards saving the animals or rainforests :)

The mountain of apples on top of the waffle drizzled in almond butter is the MOST BEAUTIFUL thing I have seen all day! Such a healthy breakfast but I bet it tastes like a decadent dessert. YUM! Now that is all I can think about…

I can’t say I don’t like milk chocolate, specially Milka. That brand has some good ones, really.But I love dark chocolate too, plain or with some flavor.

I love those oranges too! My favourite chocolate? Difficult! Most of the times it’s a really dark milk chocolate, with hazelnuts for instance…

The whole resume thing – I hear ya! I am so tired of resumes, cover letters, and interviews…. and I doubt it is going to get any better next semester when the internship search process becomes even more intense!

My favorite chocolate is a tie between Lindt Creme Brule, Lindt Chocolate Balls, and Ferrero Roche.

We have people who come in with “accidental overdose” of drugs/alcohol/both. People need to learn a little about what they’re putting into their bodies.

Ahhhhh resumes! Everyone has their own opinion about what makes one good and what you need to put on it, etc etc. Such a pain.

Could that waffle look any more delicious?! I am not happy to admit that white chocolate is actually my favorite! Then milk chocolate, then dark choclate. I know dark chocolate is so much better for you, but I can’t resist white choclate sometimes :) Have you ever had the white hot chocolate from Starbuck’s? Too die for!

I love broccoli slaw! I add it to my stir-frys. Do you have a World Market by you? They have the best selection of chocolate – my favorite so far is dark chocolate with sea salt – I made smores with this chocolate, and while I didn’t eat it (diabetic!) everyone raved about it!

I got my brother that chocolate last year- he LOVED it! I’ll see if I can hunt some down this year to send you. I’m a milk chocolate person- Cadbury’s crunchie, Boost, milk ways (the British ones!), Reece’s Pieces…mmmmmmm :)

I also love your kefir and froyo idea!! I have yet to try TJ’s frozen yogurt, but i know i’m in love with their frozen fruit mixes!!
