Whole Wheat Apple Nut Muffins

This week needs to fly by lightning fast because I need to get out of here!! I’ve been feeling a little bit down the last couple of days. I’m more sensitive than normal and I even started tearing up last night at 2 am. Why I was up that late I have no idea. This happened almost exactly a month ago so I have a hunch as to what’s going on.

I soothed my soul last night with chicken soup a baking experiment: Whole Wheat Apple Nut Muffins

I adapted the recipe from RecipeZaar.

Wet Ingredients:

  • 2 eggs (I used 1 egg)
  • 2 tbsp olive oil
  • 1 cup buttermilk or yogurt (I used 1/2 cup Greek Yogurt and 1/2 cup almond milk)
  • 3 tbsp molasses (I used 3 tbsp of agave nectar)
  • 2 tbps honey or barley malt syrup (I omitted this)
  • **I added 2 tbsp ground flax seed

Dry Ingredients:

  • 1/3 cup oat bran
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup rolled oats (I used ground oats)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ginger (I used 1 tsp pumpkin pie spice)
  • 1/8 tsp nutmeg (I omitted this)
  • 1 chopped apple
  • 1/2 cup pecans

Directions:

1) Mix together wet ingredients.

2) Add oat bran to mixture.

3) Mix together dry ingredients (excluding oat bran).

4) Combine wet and dry ingredients

5) Fold in apple and pecan pieces, careful not to over mix.

6) Place in lined muffin tin and bake at 350 degrees for 20-25 minutes.

I found these snowmen print baking cups at Target the other day. They make me smile :)

Of course the muffin photo shoot had to wait for the sun to come back up….

I didn’t realize how little sugar I used until it was too late. I didn’t substitute enough agave nectar for the molasses and honey that the recipe called for. I will definitely add brown sugar when I make these again. I will also add some apple sauce or more yogurt to give them some more moisture.

The muffins are quite healthy tasting and serve as a great breakfast addition and/or dessert.

I hope you’re going to feel better soon. Me too sometimes I feel down for almost no reason. Maybe it’s the time change? Or less light during the day. When I feel down I don’t even want to cook and usually I like to cook.

These muffins seems to be yummy. I like when there is big chunks of apple.

Oh Allie, I’m sorry you aren’t feeling well. But, if you stay busy and keep studying (and baking), I’m sure time will fly and you’ll be home before you know it. Cheer up! We all love you!

I love those muffins! I need to make muffins ASAP. I wanted to make a batch this past weekend but I got sick and I didn’t want to bake in my germs – does that sound weird? HAHA.

I can relate about being extra sensitive sometimes. Have you noticed if you tear up around a ‘particular time of the month’? It could just be a crazy girl thing. Take care!
