Four-Legged Food

Despite feeling fairly hungry this morning (thanks to working out late last night), I didn’t know what I wanted for breakfast. So I had some mini plates.

Mango cut tortoise shell style. My favorite way to eat mango. It usually looks prettier but today’s mango was hairy and slushy. Tasty nonetheless!

A slice of bread w/ chunky almond butter and banana. I ate the other half moments later.

A cookie jumped in my mouth when I wasn’t looking!! I swear it had legs!

I walked to Barnes and Noble and Starbucks to look drool at Eat Drink & Be Vegan and Veganomicon. I NEED to buy these books. I couldn’t muster up the courage today to shell out $60 bucks though.

Of course, I had a Pumpkin Spice Coffee while doing some work….or it jumped in :)

I had Another cookie jumped in before I went downstairs to the condo gym for 40 min. on the elliptical and 20 min. of full body strength training. It felt good to jump pump some I-R-O-N!

I came home and had one of these babies immediately.

For an awkwardly early dinner, I quickly whipped up a wrap/giant taco with:

  • dried tofu
  • broccoli slaw (oh yes, I brought it back 300 miles from school) I’m serious when I say I hate wasting food!
  • avocado
  • ICKY lettuce (I’ll explain!)
  • sesame ginger dressing

I started by toasting up a whole wheat wrap. Did you know you can warm up your tortilla in about 6 seconds on the stove!? My Mexican family (my host family when I went abroad) did this all the time. The very first time, I almost screamed bloody murder thinking the house would burn down. Nope, it just toasts lightning fast!!!

I then sliced up some dried tofu that I found in the fridge. I love that you can just snack on it straight!

Oh yes, I brought my beloved leaf plate home with me. I mean…what’s Thanksgiving without the leaf plate!?!?

“Icky” and “lettuce” should never go in the same sentence. Lettuce is delicious. Except when you buy it rotten!! We got this YESTERDAY from Costco and it looked like this today:

I was peeling my cucumber today and I decided to just keep peeling and peeling away….

…and I ended up with cucumber spirals!!!

I also topped it with some microwaved MINI pear slices. Look at this baby!!

Not sure what’s on the cookie dessert menu considering all the cookies have vanished. They must have gotten up and run away….or jumped in a certain girl’s mouth. Perhaps some ice cream is in my future? Sounds good to me!

I’ll eat a juicy, ripe mango any day, though the hairy ones are sort of annoying because the “hairs” always get stuck in my teeth. >< Cookies are mysterious like that. There one second and gone the next… and gone where?!

Dried tofu is so yummy—love the chewiness. Rotten lettuce juice, on the other hand, is pure nastiness. It has to be brown, too. D: Props for creative thinking on the spiralizer sub! :P

I can’t tell you how many cookies have accidentally jumped into my mouth before. In fact, my roommate is making cookies now…just sayin’.

Gross lettuce is the worst!! Ugh. Bummer!

I totally hear you on not wasting food. I plan to bring a giant bag of food to my parents house for us to eat over the weekend because I don’t want it to go bad. I’m totally going to be that old lady who puts rolls in her purse at restaurants. Or maybe just that lady, who is 26. ;)

wasting food is the worse–i am the same way! i love to reuse stuff into new foods. it’s good not to be wasteful!

i love love sitting at b+n and reading their books for free. i figure if you buy a $4 coffee, it all averages out!

Get out, the same thing happened to me the other day with the rancid lettuce. I brought it home, opened it up and it was all rotten! Gross, and the sell by date was two weeks dated. Ugh, I almost took it back, but then I realized I would probably waste more mula in gass than it was worth.

Okay, I am going to email you soon about this Blogger Christmas Dinner next month. I;ve been working on some ideas…. ;)

So much yum. I love mini plates- SO prefer them to one big meal. Mango- looks so juicy! I bought some of those mini pears the other week- they were delicious! Have a great thanksgiving

A. I loooooooove mangoses. Especcially super ripe juicy ones.

B. I splurged and bought Veganomicon with a gift card and I have never regretted it. Such a great cookbook. As far as ED&BV goes, I haven’t bought it yet, but I always take it out from the library to make the recipes out of it!

C. I miss having a gas stove. Its the best way to warm tortillas, but I can’t with my silly electric stove.

Hahaha I LOVE your “spiralized” zucchini!! So creative :) And that four legged food must be all over the place because I’m pretty sure all my cereal and chocolate have four legs over here!

Mangoes have always been one of my favorite fruits. I love that you brought that leaf plate home with you! It’s been on my island with gourds sitting on it since I bought it after you! I think the day after Thanksgiving will be when I put it away.

I’ve already gone through half a box of those baby oranges! I love them this time of year. We always got them in our stockings, too!

Ugh, I HATE that about lettuce! I once saw on Dinner Impossible the guy ranting about the box of lettuce, saying that it “rots from the inside out.” I was thinking “what is he talking about!?” but it took me a few boxes to see! It looks fine, but there’s a bad clump in the middle and it all goes nasty. That’s the worst to pick through and try to find salvagable pieces to use, I just did it last week before our trip in my fridge use up!

That’s happened to me before with the juicy lettuce–gross!!

That is such a good idea to warm up torillas on the stove!! I am so going to try that, thank you!!

Not going to lie, kind of happy you are done with all the cookies… Just looking at them time and time again is making me drool! If there is anything I miss in Spain, it’s a chocolate chip cookie. And I LOVE sitting at Barnes and Noble and tend to do the same thing… It’s so hard to muster up the will to throw in the money even though it’s so worth it!

Tacos yum.

It’s scary how quick and agile those stealthy cookies can be. They are like covert operative. They go in for a sneak attack and you can’t resist. Sigh guerrilla warfare ;)

Annie’s bunnies have much the same attack, but they hop in your mouth.

I didn’t know dried tofu exist…kind of a moot point I suppose since I don’t eat regular tofu…
