Adding to the Pile

Another day of nothing to add to the pile. I need some excitement in my life! Not really, because in 2 short days I’ll be heading back to school for the hustle and bustle that is final exams. I can never find a balance. When there’s nothing to do, I’m bored. When there’s too much to do, I’m stressed. Story of my life.

I decided to experiment with my green monster this morning by adding silken tofu. See it at the bottom of the bullet?

In the bullet went:

  • 1/3 banana
  • 1/3 cup frozen mixed berries
  • 1 cup frozen spinach
  • 1/3 cup TJ’s Euro Yogurt
  • 1/2 cup silken tofu

Dun dun dun….

It actually turned out quite delicious! I could barely taste the tofu and it added some creaminess and about 6g of protein!

I then tried really hard to focus on work. I sipped on Tazo Passion Tea in my snowman mug to help me along. I got a little bit done but not nearly as much as I needed to.

I then broke for some oatmeal with banana and almond butter. I used to eat a huge bowl of oatmeal at least once per day. However, I started to associate oatmeal with my not-so-healthy-eating-behavior span of time and eating oatmeal in my head equated to restriction. I got sick of eating oatmeal when I got sick of restricting.

I’ve missed oatmeal a lot though and I think I’m ready to repair our broken relationship.

My movement of the day consisted of walking 2 miles (according to Garmin) to retrieve my prescription from CVS. It was nice to get away from all the hard work I was doing. doing nothing.

I came home and while reading Maria’s blog post, I got the idea to de-seed my 2 pomegranates under water! WOW! Am I the only one that didn’t know about this technique!? This took a fraction of the time it normally takes for me to pick the seeds out with my fingers…while splashing my shirt/counter/face with dark red juice!

Look how strikingly different the insides of my 2 pomegranates were. They looked identical from the outside. Weird, huh?

I ate the entire bowl on the right :)

For dinner, I whipped up a salad w/ avocado, dried tofu, and cucumber. I also finished off the acorn squash from Thanksgiving dinner and baked up some carrot fries.

Can you believe this plate is the equivalent of 4 fresh carrots?

I finished off with some almond butter straight outta the jar. I’m pleasantly full now and ready to get back to work….after I bake up some muffins :) What kinda muffins? You’ll have to wait and see!

Thats the way I always peel my pomegranates..love that method!!

I’ve have been seeing a lot of carrot fries around – intriguing, but not sure they’re something I’d dig! Same with the Silken Tofu – I wanna make a dessert with it, but it freaks me out!

Ha, that is a huge pomegranate difference … the one on the right looks like the perfect choice :D

I feel the same way!! I haven’t been doing much school work for thanksgiving break, and i know as soon as i get back to boston, its going to be stress city :( oh well, we’ll make it through!!
and i just found out about peeling the arils underwater this year-genius!!!

I just read that same trick about the POM. I think I need to try to tackle one again, because my last attempt wasn’t so scucessful. I cut it open and it was all rotten! Nuts! :(

Hope you are having a wonderful vacay. And by the way, there is absolutely nothing wrong with sitting around all day and doing nothing when you are on break! ;)

so glad you’re adding oatmeal back into your life. oatmeal’s the best! thanks for the tip about the pom seeds. i always wear my red apron when i de-seed them so i don’t turn my clothes all red.

I’m not sure I’v seen dried tofu..Would that be similar to the baked? At any rate it looks good on your salads.

My brother has to get the pomegranate seeds for a salad at the restaurant he works at. He told me about the water trick. I’ve also seen chefs on TV turn it upside down and bang a spoon on the skin so the seeds fall out on their own and let gravity do the work!

Silken tofu sounds like a great addition to the green smoothie. Must try it now :)

The pom idea is brilliant! I haven’t had pom in a while, so I need to get some stat!

mmm i love muffins! i just saw new moon today and the scene where they eat these gigantic muffins excited (almost as much as taylor lautner’s newly toned body ;) nothing beats the oats/nut butter/banana combo – it’s the best!

Ah shooooot, I forgot to try out those carrot fries!!! Oh well, will do over winter break!! So much to eat….so little time. ;)

And I feel ya girl!! I’m either incredibly stressed out or in need of WORK, to keep me busy!! We’re never satisfied, huh!? hahaha….love that snowman mug by the way! Too adorable. xoxo

I’m the same, getting bored or stressing out, no middle point! :(
It’s interesting how we related food to a certain period of our life, even it’s a healthy one like oatmeal. I’m glad you decide to repair that broken relationship! :)

Ugh, I know what you mean – we’re starting finals when I go back to, and I have a problem finding that same balance. I know that you’ll get through it though with a clear head and fabulous grades. :-)

I know what you mean about finding the balance between stress and boredom. I’m really looking forward to my week off work and no stress, but then by the end of the week I’ll probably run out of things to do and get bored.

I feel EXACTLY the same way when things get stressful!!! I’m starting to relish my downtime though and have enjoyed doing a whole lotta nothing today!! The carrot fries look like a neat little idea, I’m going to have to look into that! :)

I need to try carrot fries – I keep forgetting to buy carrots at the grocery store.

Enjoy the downtime – its ok to relax and do nothing sometimes!
