Stating the Obvious

1. I enjoy making muffins. Zucchini Pumpkin (and a lil’ leftover acorn squash) Walnut Muffins.

2. I hate wasting food so I put in all sorts of ingredients into my muffins instead of throwing them away :)

3. My legs do not like when I make them run. After running about a mile outside, I headed indoors for 40 min. on the elliptical.

4. I am easily influenced by infomercials. I saw an informercial for a juicer this morning during my workout. Even though I know how terribly annoying cleaning a juicer can be, I still find myself crawling back.

3. Carrot+Cucumber+Pear juice is a great way to use up almost-going-bad fruits and veggies.

4. I’m terrible at documenting random munchies: grapes, a little yogurt, another muffin, and some almond butter.

5. These leftover mashed potatoes weren’t getting eaten up and would probably go to waste. So I decided to use them to make Whole Wheat Gnocchi!

7. I didn’t add quite enough whole wheat flour to the mix and it ended up a little doughy. (I added 1 1/2 cups of WW flour and 1 egg)

8. I made the nuggets a little too big. Probably because I got tired of rolling out the [sticky] dough.

9. I would not qualify as a pasta maker. I could not figure out how to make the lined marking using a fork…so I didn’t.

10. It’s the though/taste that counts, right?

11. I love eating my food on a bed of lettuce. With some avocado, sundried tomatoes, cauliflower and U-G-L-Y gnocchi.

12. There’s nothing better than banana frozen yogurt….besides berry banana frozen yogurt that is.

I put 1 enormous frozen banana, about 1/3 cup of frozen mixed berries, and a splash of milk into the blender.

I’m driving back to school tomorrow. Back to the grindy. I’m totally NOT ready….obviously!

I am totally not ready to go back to work, but I keep thinking it’s that much closer to winter break!! :)

Wow I love that you made gnocchi!! Did you just boil them for a few minutes then? Do you put any dressing on your salads or just eat them plain? Curious to know if you have any fave dressings. You are so creative with leftovers!

Your homemade gnocchi might not be perfect, but it looks delicious to me! That juice looks so fresh and healthy. I need to get myself a juicer!

I need to try that “throw all leftovers into a muffin” trick. Delicious and economic? Count me in. :) You have so many creative ways to use leftovers! I never would’ve thought of making gnocchi with my mashed potatoes… then again, I’m pretty intimidated by dough! o_o Totally with you on school—three weeks of chugging until the next break. ><

I love the little cupcake paper, it’s adorable. Wowee I never knew juicers were that big of a mess!!!!

Do you have a basic muffin recipe you follow and then swap items out? I always mess things up when I try to tweak baked goods – it’s such a science.

Also the pic of the smoothie whirring in the blender is cool too!!!

I like how you make use of everything into muffins and into not so ugly gnocchi :D So creative! :)
getting back to school for work and to be alone after such a feast with your family would be hard. but hang in there! holiday is soooo close! :)

I cannot believe its Monday already! Where did Thanksgiving weekend go? The gnocchi looks fabulous to me! Its so fun to make. Sorry the legs are still not loving the running. Blahhh! Hope the drive back went well

I can’t believe you were able to make your own gnocchi! So impressed slash jealous- I absolutely love that stuff. And way to keep away from wasting food- there’s nothing that hurts more than throwing delicious food in the garbage!

Okay Allie–I’m totally on board with the zucchini muffs and banana-berry softserve, but I absolutely REFUSE to even think about buying a juicer!!!! Yeah yeah I know I’m strange and going against the whole raw-juicing-foodie-veganesque-bloggers out there, but I don’t care! :P Have a safe trip today chica!

What a great use of leftovers! I love the idea of throwing everything into a muffin.

I have never made gnocchi – who cares what they look like – its all about taste…

I’m a big fan of “everything but the kitchen sink” muffins! Sometimes I even make a simple batter, divide it into four separate bowls then add different mix-ins to each one so I end up with four different kinds of yummy muffins! I also love all your cute plates! Doesn’t eating off your favorite plate or drinking from a favorite mug make food and drinks taste even better :-)

I’m impressed with the gnocchi!! I love gnocchi when it’s done well. How’d the whole wheat work out?

Those are not ugly gnocchi! They look fab! I used to make homeade gnocchi with my aunt. For being a fairly simple food, I thought they were hard to roll, cut and shape. Great smoothie photo!

Whoa! Homemade gnocchi? I usually just eat my leftover mashed potatoes. I never would have thought to make gnocchi. You are awesome! And those muffins sound incredible! I love how you never waste food; you’re a gal after my own heart. BTW, have you seen the infomercial for the ‘Ab-Circle’? HAHAHA! I am glued to the tv every time it’s on!

zuch pumpkin muffins sound sooo amazing!!! i also have been craving fro yo up the wazoo, but i hear you arent supposed to eat dairy like that when you are sick and have a sore throat?! hmmmmmmmm, probably will be breaking that rule in like 30 min act. for breakfast! hahaha
