A Popular Day To Have a Baby

Happy Birthday to My DADDY-O!!!! (and my roommate, and Britney Spears, and Monica Seles.  Anyone else??).

Here are a few photos of my daddy and me! This photo was taken as he was making a wish on this day a few years back.

DSCF0028.JPG

The silhouette of our heads inside The Colosseum in Rome, Italy. Tee hee.

IMG_3019.JPG

Everyone tells me I look exactly like my dad. Do you see the resemblance? :)

DSCN0905.JPG

The tower of PIZZA! I love you, Daddy!!!

DSCN1078.JPG

Like I said, today is also my roommate’s birthday. My other roommate made a 4 layer funfetti cake for her AND her mom’s carrot cake!! Did you catch that?? CARROT CAKE!!!!

This was twice the size of my head. I kid you NOT.

IMG_9684.JPG

I saved my cake appetite for the morning since it was about midnight when they cut the cake and I had already brushed my teeth.

~~~~~~~~~~~~
This morning I was delighted to top my oatmeal with some oh-my-gosh-so-amazing-carrot-cake!! I also added some walnuts and banana slices.
IMG_9686.JPG
I went back for s’more carrot cake and a little bite of funfetti cake :)
IMG_9696.JPG
I had some half-caf coffee w/ pumpkin butter and cinnamon. Still no almond milk :( I’m getting used to drinking coffee without milk and it’s not too bad to tell you the truth. I’m adapting to my barren food stash.
IMG_9694.JPG
No-Guilt Fueling Breakfast
I started to feel a little bad about eating cake in the morning but then I realized I was able to eat a little and move on. I’m always better about ‘moving on’ in the mornings than I am at night (you know, going back for nibbles, bites, and chunks until half the cake is gone). So the positive side of the situation was that I ate a little in the morning rather than going all out at night. Plus you all know how much I love carrot cake. I savored every bite!
It sure fueled my workout quite well! I did a heart pumping and energetic 60 min. on the elliptical and 5 min. on the stairmaster. I was surprised how much energy I had. Goooo CARROT CAKE!
After my workout I had about a cup of sweet potato cubes undocumented (in class).
~~~~~~~~~~~~~

Linner Lunner

So if I eat ‘breakfast’ at 10 am do I call my 5 pm meal ‘lunch’ or ‘dinner’? I say Linner or Lunner!

I broke off 4 huge leaves off the head of cabbage I got yesterday to make some cabbage wraps. I didn’t have legit ingredients to wrap so I improvised with what I had on hand.

IMG_9698.JPG

Wrap #1: Hummus, eggplant, red peppers, mushrooms

IMG_9703.JPG

Wrap #2: Acorn squash, brie cheese, dried cranberries, pecan pieces

IMG_9702.JPG

Sorry for the terrible lighting. It got dark at 5pm today because it was cloudy/rainy all day. No sun to help my camera out.

IMG_9708.JPG

IMG_9709.JPG

I decided I liked wrap #2 so much that I went back for more!  This combo was pure craziness.  The sweet and salty flavors together with the different textures was awesome!!

IMG_9716.JPG

And another small slice of CARROT CAKE to keep me going through teaching lessons and a long recruitment counselor meeting. I’m meeting my little recruitment babies tonight!!!

Four-layer cake?! 8O Amazing. Happy birthday to your dad! People used to tell me I looked exactly like my dad, too… and then I guess I grew out of it?

I’m the same way—I am more comfortable about nibbling in the early hours than late at night. Carrot cake for breakfast is the best, especially in oatmeal! :)

Happy Bday to everyone.

Cake is a worthy splurge you don’t get it daily! I say eat what you want otherwise it haunts you all day.

Those lettuce wraps look soooo good! Although my favorites are no doubt the ones at PF Changs. YUUM Tofu lettuce wraps.

Girl, there is NO SHAME in enjoying a little cake for breakfast. First, it is not as though you just ate a huge peice of cake without the addition of any nutrients. Umm, hello, adding a little indulgence in your most healthy bowl of oatmeal is definitely okay. I always add a touch of something special to my oats, like a crumbled muffin or granola bar or chocolate chips. Oatmeal is a masterpeice and you shouldn’t just “like” eating it, you should be in complete and utter love with each bite!!!!!

Glad you are able to put aside any anxiety of feeling guilty because you have absolutely NO reason to feel bad at all. Honestly, you are such a healthy and happy girl. You eat so well, you are active and you are definitely entitled to your favorite cake. Even if you had it everyday, it wouldn’t hurt you one bit! ;)
