I’m Gonna Turn Into a Pumpkin

…just like Cinderella’s carriage!

I had quite a pumpkiny day yesterday and to tell you the truth, I didn’t realize it until I uploaded all my photos just now. I am a day behind blogging so this was yesterday. All the days are the same to me since I’m on b-r-e-a-k!!

Breakfast started out with Stonyfield Pumpkin Pie Yogurt w/ TJ’s Euro, banana slices and….

Trader Joe’s Country Pumpkin Spice Granola.

I got the granola months ago but never got around to opening it up. For good reason, because the granola has now been demolished!!!

Then my dad, uncle, and I hit up the outlets (even though it was pouring rain!). Can you believe they were more into shopping than I was? I used to be the queen of shopping. I literally went to the mall every single weekend. Some weeks, I went during the week and then on the weekends as well.

Now I just spend my money on food and Starbucks…

Need I even tell you what’s inside the festive cup? Hint: Pumpkin Spice!

I bypassed all the clothing stores when I spotted Crate and Barrel! So many festive items.

Alas, I came home with nothing. Nothing from the outlets. We DID stop by Costco and of course I found stuff there :)

Dinner was made with some new Costco products that I’ll show you in my next post. There are far too many photos in this one already!

Pita w/ goat cheese, mini crab cakes, and spring mix.

I also got in s’more greens by making a salad with pom seeds and papaya chunks.

Next up, I did some baking! This Cali Bowl (2 total) is gift #1 from the free Holiday Gifts I received courtesy of Kath and Open Sky. I really liked the inner sloping lip of the bowl.  Nothing went flying out!!

I baked some Pumpkin Oatmeal Raisin Cookies, adapted from Tina’s recipe.

Ingredients:

  • 1 cup old fashioned oats
  • 1/4 cup all-purpose flour (I used whole wheat flour)
  • 1/3 cup brown sugar (I used 2 TBSP brown sugar and 2 TBSP agave nectar)
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 1 cup mashed sweet potato (I used canned pumpkin)
  • 1/4 cup canola oil (I used 2 TBSP canola oil and 2 TBSP applesauce)
  • I also added pecans to the whole batch and chocolate chips to half the batch

Combine all ingredients and bake at 350 degrees for 20 minutes.

I used the toaster oven to save energy! It is an unspoken rule in our household :)

They were so soft and moist, sort of like a mini muffin top!

Your yogurt creations always look so pretty! And good for you for coming away with nothing! Shopping at outlets? Girl, you deserve some kind of medal or something! But who could resist Costco? ;-)

Yay pumpkin! Keep this up, and you’ll end up with orange-tinted skin like me:)

Mmm I love the way you adapted Tina’s recipe–I need to just keep a file going of all your baking creations in one spot on my computer! Look for a baking job in Chicago! :)

allliiieee i love love love your blog. Way ta keep me in the pumpkin spirits! I love everything you eat. hahaha from the pumpkin granola (i’ve been meaning to bake some at home!) to the cookies!! They really sound and look fantastic…gotta make me some of that! You’re gonna turn orange soon dear!!! Starbucks should hire you as their pumpkin spice spokesperson. :P

Ahhhh. I still have a week and a half before my break starts! :( And this week is just laden with little needles. x_x

Hahahaha, we would still love you if you turned into a pumpkin ;) Don’t worrrry~ pumpkin up! Is that granola new? I’ve never seen it at TJ’s before! Though I kind of want to make my own granola…

I used to be a total shopaholic too—every weekend, yes! Now I’d much rather go to grocery stores. :) How things have changed since I discovered food blogs… Your pita, by the way, is awesome. Love those mini crab cakes ;)

Mm looking good! I have never tried a fresh papaya I don’t think. What does it taste like? Similar to any common fruits? We also use the toaster oven often so we don’t heat up the whole big oven. I was reading an energy saving article once and this MORON was talking about how her “Electric bill is so much less now that she got a toaster oven. Who knew making toast in the oven would be wasteful?” Ugh, I had to slap my forehead for that one. TOAST? in the OVEN???

So, I am convinced that I am slowly turning into a pumpkin and have orange hands to prove this! ;) Good thing I like the color orange and even better thing that I am in love with pumpkin!!!

But Allie, you are killing me girl with all of these amazing baked goods. You have no idea how much I sit here and envy every goodie you bake. Everything always looks just so fantastic that it makes me melt! :)

crate and barrel has the cutest holiday stuff, I was just in there yesterday! I dont even celebrate xmas and I wanted everything! all the pretty plates and bowls!

those cookies look Phenomenal! I could use one for dessert right about now!

Hey, thanks for checking out the blog :) . My comment isn’t quite related to this post (though everything does look fantastic!) but at the store today I saw the Pomegranate Creme Brulee Kefir that you talked about and it was on sale so of course I bought some. I tried a little with granola and it was yumm!! I am adding it to oatmeal tomorrow morning ASAP!

When I found out you got the mini crabcakes from costco I got excited! I’m going there NOW now now to re-stock on food. And I’ve been trying to find the Stonyfarm Pumpkin Pie, no luck, but I’m going to keep tryin’ :) Love all your pictures.

Hi Allie :) I just made these tonight and they are so YUMMY! I actually put the whole mix into a 8×8 pan and baked for 25 min. I also omitted the raisons (not a big raison fan) and added the pecans and dark choc chips. Very good!

Oh Lori, you are digging up all my old recipes. Ones that I almost forgot about myself. I like the idea of making it more of a blondie/bar instead of a cookie.
