TWO Much Time On My Hands

It snowed today!!!

…on my oats!! No, unforch, not in real life.

Back when I ate oatmeal like it was going out of fashion, I always added Egg Beaters. I started out with adding egg whites, like I demonstrated in this post long ago. But I think using egg substitute is so much better.

I know, 1% of the ingredients is random stuff and egg whites is so much more natural, but it’s a whole different taste experience!

Some people think this is gross. I think it’s fabulous. It makes the oats SO creamy and thick. I just add about 1/4 cup (per 1/2 cup of oats) with some water before microwaving.

Then I add some stevia, cinnamon, and top it off! Today’s toppings consisted of banana, almond butter, and snow coconut.

My next project was to make some hummus! I love hummus so I thought I’d try making it myself…using Gift #2.

I got a Cuisinart Smart Stick Hand Blender from Kath and Open Sky.

So I got some tahini from Whole Foods, Googled ‘pumpkin hummus’ and got to work. (I had leftover pumpkin from my cookie making)

Pumpkin Hummus

Ingredients:

  • 1 can of chick peas
  • 2/3 cup of canned pumpkin
  • 1 clove of garlic
  • 2 TBSP tahini
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp cinnamon
  • 1 TBSP olive oil
  • pinch of salt

Directions:

  1. Combine all the ingredients
  2. Use a stick blender or food processor and blend/pulse until hummus becomes a smooth consistency
  3. Enjoy!

Easy peasy and delicious!

I ate it with some celery, carrots, green peppers, and pita points. Those carrots and celery sticks look BEAT UP!

I covered up the rest and put it in the fridge next to my first love.

While responding to some emails, I had pita+banana+almond butter warmed in the microwave (this x2).

I’m heading to the condo gym tonight to watch the Duke Basketball game! Go Blue Devils!!

Can you believe it?! TWO blog posts in one day? I must be on winter break or something.

unforch is the best term i have read in a long, long time. stealing it. thanks. i wish it was snowing! at least it snowed on your food. i used that same cusinart container to make cupcakes last night. you will see that in my post! have fun watching the game!!

Lovin’ the extra posts! Those oats look good – I just may have to try making mine with egg whites. I always find it weird seeing Kefir milk in your posts because I have only ever seen Kefir yogurt…or maybe that is weird? I am always jealous because it seems as though there are soo many things available in the US that I can’t get here in Canada! One day… :)

I have the same stick blender, except mine’s grey and black. I LOOOVE it and that little cup! It’s PERFECT!

Ohh – thanks for the idea of using an immersion blender for the hummus – pulling my food processor out is always one of my biggest “eh, maybe not right now” drawbacks to making hummus – but the immersion would be so much easier and with less cleanup! I’ll probably end up trying it tomorrow night even.

Pumpkin hummus sounds great! The hand blender is a great tool – it blends surprisingly well too!

It is cold enough to snow here – only supposed to be 20 tomorrow.

Love your blog. You are so handy to make hummus. Your oats look amazing, I don’t have a microwave, so not sure that would work for me! Bananas , oats, nut butter, etc…yum !

I love adding egg whites/beaters to my oats! I haven’t done that in awhile so thanks for the reminder.

Homemade hummus is the best. Hands down. ;)

Hot diggity, pumpkin hummus sounds fab! I am digging the oats and egg combo- I haven’t blogged for AGES, but my current obsession if your microwaveable pumpkin pie on a bed of oats topped with Greek yogurt (and almond butter, of course!) So delish and so much protein power. Love.

I say…pita like “pee-ta” but in the company of Brits, pit-a rhymes with spit-a. I hate Britishising my speech (woah, making up words here) and I hate AmericaniSing my spelling :P

I tried your oatmeal idea this morning and it was a complete FAIL, the oats took double the time to cook, and they definitely were not creamy, they were kind of chewy and tough.. maybe I did something wrong
