No Pun Intended

***Edited to add: This post just took me 4 1/2 hours to publish!! I’m not exaggerating at all. So frustrating!  Not a fan of the internet/Ecto/my [beloved] Macbook! Let’s just say a lot of chocolate was consumed tonight!!

I woke up this mornin’ and immediately slipped on my shin sleeves to take them on a test run (no pun intended!). I felt like a soccer player :) .  So how did they feel?!

First off, the sleeves kept my leggies so warm! I must say that they made running feel quite comfortable during and after my run.   The sleeves helped with the shock/impact of the pavement, which normally causes sharp pains in my shins. I only ran 2 miles because I am trying to slowly ease back into running. So we’ll have to see if they’ll help me with longer runs in the future.

I ran around the resort and then to the fitness center for 25 min. on the elliptical and some ab work. The workout felt great and I knew there was no frown to be seen today!

***

I came back for breakfast/lunch. Coffee and Apple + Pear Oatmeal (+1 egg white) with crumbled butter almond biscuits and pecan pieces.

IMG_1269.JPG

This time I swirled in the apple and pear chunks to mix it up a little. No pun intended :)

IMG_1276.JPG

I actually had Greek yogurt in the fridge but I decided I needed the carbs to replace my glycogen stores. I’m saving the yogurt for when I am preggo-craving it/tomorrow.

***

I used the bag of frozen shrimp to ice my shins. Gotta take precautionary measures.

I use frozen food to ice my legs a lot, especially when I don’t have actual ice. I used to tie frozen fish filets (VACUUM PACKED! Don’t worry) to my shins :) . Works like a charm!

IMG_1279.JPG

It was a cloudy day and rained on and off, so we decided to stay in. Fridge cleaning was in order since we are leaving tomorrow!!!

I had some baby carrots + tortilla chips + salsa. This is quickly becoming one of my favorite snax.

IMG_1283.JPG

Other snax included a clementine, some butter almond biscuits and a piece of peppermint bark.

IMG_1284.JPG

***

For FCD or Fridge Cleaning Dinner, I made some Crunchy Tortilla Shrimp!

IMG_1285.JPG

I coated raw shrimp with a beaten egg.

IMG_1288.JPG

Coated them with crumbled tortilla chips.

IMG_1292.JPG

Pan-fried.

IMG_1287.JPG

Amazing.

IMG_1289.JPG

No need for deep frying!

IMG_1291.JPG

I topped romaine lettuce with Crunchy Tortilla Shrimp, avocado, onions, mushrooms, and salsa.

IMG_1296.JPG

IMG_1304.JPG

For dessert, I had a piece of Pecan Pie Chocolate + a real pecan (x2), some butter biscuits, and a piece of peppermint bark.

IMG_1307.JPG

The weather forecasts are calling for SNOW in Florida tonight!?! Everything from the plants to the turtles are having trouble coping with the freezing temps down here :(

Gonna go prepare my car snax for tomorrow’s road trip back home!

4.5 hours for 1 post?! That means you’re a crazy-dedicated blogger. :) I’m glad you had a good workout and are a-smilin’ now! Love the addition of almond biscuits in your oatmeal. I love peppermint bark, especially when it’s with dark chocolate. :) Those shrimp look deliciously crunchy—I never would’ve thought of coating them with chips, haha. What does the pecan pie chocolate taste like? Does it just have pecans inside?

Wishing you a safe trip home!

Oh, and your tortilla coated shrimp with salad later looked PHENOMENAL and love that you didn’t fry the shrimp either

YUM! I have a love-hate relationship with shrimp. Sometimes I love it and sometimes I can’t stand to eat it, but I would def eat this one. so simple.

Hope you find some good snacks on the drive :)
