Pumpkin Tofu GM, New Shoes, TJ’s

I woke up to an e-m-p-t-y kitch!! We took all our food with us to Florida and left nothin’. So I put my thinking cap on and scrounged together breakfast/lunch. Despite how cold it is here, I was craving some icy green.

No milk. No banana. No fruit of any kind. What to do?

I experimented with silken tofu and pumpkin puree to make a quasi Green Monster.

Pumpkin Tofu Green Monster

  • ~2/3 cup of silken tofu
  • 1/2 cup pumpkin puree
  • 1/2 cup frozen chopped spinach
  • A splash of half and half and water to get the blades of my Magic Bullet turning
  • LOTSA cinnamon and stevia

It was thick ‘n’ goopy. The texture was similar to yogurt so I ate it with a spoon :) It could have used some juice…perhaps OJ?

After some cereal snackin’, my Momma and I headed out to Sports Authority because there was a $25 coupon off a purchase of $100 or more in the Sunday paper. The running shoes that I wear, Asics Gel-Kayanos, were on sale for $99.99! They are normally $139.99! So $75 is a STEAL!!

When I got there, I spotted these Gel-Kinetics on sale for $99.99 too!! These are normally $159.99. I decided I’d give them a shot instead. It’s not like I’m injury free with my current running shoes anyways (although I love them a lot alot).

I think they’re pretty good looking too :)

I still have some mileage left on my current running shoes but when a deal like this comes around, I have to go for it.

Afterwards, we headed to Trader Joe’s to pick up some whole wheat pizza dough but they were out :( I didn’t want to stock up too much since I’m leaving for school in 2 days. So I got some almond milk to bring with me, kefir (to leave here for my Momma)…and…

Oat bran, Brown Rice Tortillas, and PITA PUFFS!!!!

These were new at Trader Joe’s! They’re so fun!! I had quite a bit as a pre-workout snack.

They taste like light airy pita chips.

Now I’m about to head to the gym downstairs for a nighttime workout. Probably some incline treadmilling, ellipticalling and strength training (if I’m in the mood).  Check out the horizon!!!! This photo does not do it justice. It was 500x prettier than it looks.

After I get back, I’m going to eat what my Poppa prepared for dinner (one of my last home-cooked meals for a LOOOONG time…tear).

  • Romaine lettuce salad w/ salmon filet
  • Black-eyed pea shrimp salad

Black-Eyed Pea Shrimp Salad

  • chopped celery
  • chopped parsley
  • chopped tomatoes
  • chopped onions
  • black-eyed peas
  • cooked shrimp
  • extra-virgin olive oil
  • salt
  • pepper
  • italian seasoning
  • rice vinegar

I’ll probably have some pumpkin kefir along with my dinner plate. I wouldn’t be surprised if some holiday chocolate jumped in my mouth either! Have a great Sunday Night y’all.

aww that pic made me miss home! your smoothie looked delish as did those pita puffs. i am so bad with portion control when i buy those things i could eat the whole darn bag. enjoy your last couple of days at home before you head off to school!

those Tj’s mini pitas are sooo cute, they’re new right? I’ve never seen them before, I’d love to try them out! :D

Great bargains on the new shoes! Asics are the best, they are the only type of sneakers I will wear. :) Those pita puffs look yummy!

What a gorgeous view! I’m jealous—I can see shopping center lights, but it takes like half an hour to actually get to it. :( Trader Joe’s always has the coolest stuff! I have to remember to get those pita puffs the next time I’m there. I love their snack foods more than anything :] Have fun with your pretty new sneakers!

Mmm :) your dad’s meal looks delish. Also, the view from your gym is gorgeous. And I got some kefir from trader joe’s last week too! Ate it with pom seeds and felt like you. what do you think of the brown rice wraps from TJs? I don’t like them :[ i like the low-carb whole wheat wraps (theyre smaller in size)… they are soooooooooooo chewy.

whenever I come back from vacay, the food is always scarce in my house I make up the strangest concoctions too! your pumpkin green monster looks great though!! such a pretty color. those pita puffs look AWESOME! i want to get some at TJs when i go later!! thanks for the review :)

So I can’t help but add my 2 cents in terms of running injuries… You NEED to read Born to Run- not only is it a great book with tons of great stories, but it also talks a lot about running injuries and how to prevent that.

I’ve sworn off running shoes and run only in my Vibram 5 fingers (essentially barefoot running) in hopes of recovering a knee injury from a marathon I ran in college.

Seriously, check it out. TOTALLY worth it.
