Road Snax Take 2

We made it home!! This time, we left early afternoon and drove until the wee hours of the night/morning (2AM!!). That way we wouldn’t have to wake up super early and be groggy throughout the drive. We’re a night owl fam!

I woke up a little bit earlier to fit in a workout before boarding the car for 14 long hours. I was hoping that some movement early in the day would make sitting in the car a little less painful. I did 60 min. on the elliptical while watching The Food Network :) .

Then we packed it all up and hit the road [Jack].

Road Snax!

One of my favorite snax from this summer: Banana Almond Butter Ice Cream Sandwiches

I ate these so much during the summer. First, you cut half a banana into slices. Top it with a dollop of almond butter.

Then cover with the other half of the banana.

Freeze.

They taste like ice cream sandwiches. TRY IT!!

Pomelo (part of the citrus fam)

I parents grew up eating this fruit, and so have I! Pomelo is a large citrus fruit that tastes similar to grapefruit but without the bitterness.

This guy was especially monstrous–4 pounds!! Look at him compared to the jar of almond butter. I told ya he was HUGE! They are usually a bit smaller than this one. (I’ve seen them sold at Costco in packs of 4)

My Momma would always cut the [WAY THICK] peel off in the shape of a hat for us to wear around the house.

I can’t believe I wore it on my freshly showered mop! Oh the sacrifices I make for the bloggy :) .

I love this fruit because I get such a kick out of peeling the skin to unveil fresh, juicy meat!!

I ate some pomelo with my Greek yogurt for breakfast along with pear slices and 1/2 cup of coffee.

Last meal on this table, which I’ve grown to like a lot this week :) .

I also had an undocumented 1/2 bagel with almond butter to get some post-workout carbs.

Other Road Snax included:

  • Romaine w/ avocado and salsa (fridge cleaning–had to use up the last of it!!)
  • Hard-boiled Egg Whites (more fridge cleaning)
  • Butter Biscuits
  • LOTSA Chocolate!! And I mean LOTS!

Okay, time for bed. I’m pretty sure all the Disney Marathoners are already awake while I am about to hit the hay. They’ll probably be done with 26.2 miles by the time I wake up!!

I totally had pomelo one time at my parent’s house. They could NOT explain for the life of them what exactly that fruit was! I knew it was not a grapefruit…but it really looked like one! It is really good though. Mmmm…makes me want one right now.

Your food pics are always so pretty girl. You arrange your foods so nicely! I just slop it together so the faster I can take a picture, the faster I can eat! :)

Good for you for getting a workout in before the long ride!

That’s funny– I saw pomelos just yesterday at the grocery store and thought, “Hmm..I wonder what those taste like!” But then I passed them up in favor of regular ol’ oranges. I’ll have to try some next time!

ahhhh im so jealous of your food network watching :( cablevision doesnt get it anymore and im devastated/going through severe withdrawal! :( those banana sandwhich things look SO good (note to self…) and that pomelo is GIGANTIC!!!! its crazy how thick the skin is. so glad you had a great trip back!

You are too cute with the pom hat. And the ice cream sammiches = fabulous. I feel like you’d be excellent working somewhere where you had to design easy, healthy snacks with random ingredients. Let’s find out where those jobs are, shall we?! ;)

Pomelo is amazing!! My parents grew up on that fruit too so of course I’m in love with it now too! And your banana sandwich idea sounds so good! I need to try it sometime :) Glad you made it home safe and sound!

Thanks for the banana/AB snack idea – love it. I meant to tell you I made your Aprican Balls the other day, but they didn’t quite turn out. Perhaps less oats next time or more AB? The ones I froze tasted delish, the ones I burnt in the oven…not so much : )

Banana sandwiches look great! As in as soon as I hit submit I’m going to go make myself some so they’ll be ready for a snack this afternoon.
The pomelo hat is a great idea for kids! I remember the first time we cut into a pomelo, we were amazed at the thickness of the skin. It’s crazy, we discovered it because there’s a pomelo tree at my husband’s school. Random.

Your blog never fails to disapoint Allie. I never tried pomelo before…looks like a grapefruit. You are too cute with your food…yes, get some carbs girl…more bagels :)

I love traveling those hours too – a lot less cars on the road and it’s just less stressful and a lot more peaceful. You don’t need to worry about the big packs of traffic, or the little Honda zipping in and out of lanes trying to inch his way 2 cars ahead b/c in the end it’s a HUGE DEAL. (sarcasm)

Love the hat!!! haha I’ve never seen one of those, but wow they are huge! Also, I loooove the little banana sandwiches! I need to try those, and coincedentally we have the exact same bowls!

Ahh those sound amazing!! Frozen bananas are my favorite thing, but i always forget to pop ‘em in the freezer. They taste 10 X sweeter and more dessert-like frozen though, right??

But freezing the bananas WITH pb…oh my, must try! Thanks for the great idea love!!

I love pummelos and they are huge! Next time I buy one I’ll have to cut it open like that and “make” the kids where it like you. Too cute! :)

The pomelo hat is amazing. Amazing! I have never had it-but I love the idea of grapefruit without the bitterness! I’ll have to look at my Costco. Glad to hear you’re home safe and sound!
