I spent most of the day packing to go back to school (I really want to insert a ‘wahh’ along with a :( right now but I’m going to refrain). I’m leaving tomorrow night and classes start the next day, Wednesday. In true Allie fashion, I’m waiting ’til the very last minute to go back to school. This time I have an excuse…which I’ll explain tomorrow.

Anyways, packing to go back to school is always such a drag. On one hand I want to leave stuff at home since I know I probably won’t use/wear it in the next couple of months. On the other hand, I don’t want to be caught without it in case I need/want it. So in true Allie fashion, I’ve got a loaded car :)

Breakfast/Lunch in true Allie fashion:

Pumpkin Kefir Pudding with Kashi Puffs and Banana slices…you HAD to have seen this coming :)

To make the pumpkin kefir pudding, mix 1/2 cup of pumpkin puree, 3/4 cup of kefir, cinnamon, and stevia.

Served with 70% decaf + 30% caf coffee in my snowman mug. I won’t be bringing him down to school so say your goodbyes now! I’l start: Ta-ta Mr. Snowman, it’s been real.

While packing, I had 1/2 of this Stonyfield Yogurt: Chocolate Underground Vanilla Over Chocolate. Has anyone tried this?

It was pretty tasty. It had a layer of chocolate mousse (?) on the bottom. I love chocolate in general, so it’s pretty easy to win me over.

I guess packing is pretty tiring because not too long after, I was hungry again! I made a whole wheat pita stuffed with microwaved pear chunks, cinnamon cranberry goat cheese, and almond butter. Okay clearly, I’m procrastinating packing with all these radical colors.

It hit the spot…right on.

I snacked on TJ’s Pita Puffs…..this x3 while packin’ s’more.

And in true Allie fashion, I got a little more sweet snacky. Chocolate. Maybe a couple more pieces jumped in….

I accidentally ate a bowl of fried rice that my uncle made for lunch. There was a big pan leftover sitting on the stove. It’s not that I didn’t want to eat it, I just didn’t anticipate eating it. I kept walking by and having a couple spoonfuls and before I knew it, I had a bowl. I don’t even like fried rice! I guess I needed some salty in my life.

I’m keeping it light because I’m going to go down to the gym to watch Gossip Girl later tonight. Then I’ll have another light snack/dinner afterwards.

Now I’m baking and blogging. In true Allie fashion, I’m munchin’ on my baked goods fresh outta the oven (yeah, keeping it light, right?). You’ll have to wait until tomorrow to see what it is! It is smellgasmic!

Oh and I’m pretty sure the only veggie I had today was pumpkin (and the onions in the fried rice)….oops. Not so true Allie fashion :( One day without green won’t kill me though, especially considering all the green I had yesterday!

Oh the pumpkin kefir looks so good, maybe even more so because I can’t seem to find canned pumpkin anymore. Seriously, what’s up with that?

Haha….that’s ok about the veggies! Your eats all look super yum–that counts for something :) . Those TJ’s puff things look amazing! I must try.

that snowman mug is so cute, I wouldn’t leave it! ;)
fried rice is good to eat from time to time, I’ve had several times lately… almost forgot how good it is.
back to school isn’t fun! same here :( I’ve packed four suitcases!!! so many things to buy here! ;)

I always find that when I am at home I snack wayyyy too much. For example, today I had two huge bowls of raw granola with nut butter. Now I am paying for it because I am not hungry, yet I have dinner waiting for me. :(

I hope all goes well going back to school! (I know, it’s so hard to go back….only 19 more weeks for me! I can’t wait to graduate!) :D

Mmm the pumpkin kefir combo sounds delicious! I need to get my hands on some kefir soon! And I would totally wait until last minute to go back to school.. unfortunately I have to be back THREE weeks early for track practice!

Those TJ pita puffs look delish!! I would of ate the whole bag in a sitting!!! Dipped in hummus too!!! yum!!!!

Allie–your posts totally got me hooked on Kefir! I’ve got a bottle of the plain kind in my fridge and a can of unused pumpkin puree in my cabinet that I didn’t know what to do with! I’m totally trying that for my breakfast tomorrow–good luck at school and I’ll let you know how my experiment goes!!

It’s okay to skip veggies – I do it more than I should though! Have a safe drive back to Duke – make sure you stop for some Starbucks deliciousness.

Uuugh, school packing! I do not even want to thiiink about that process right now. I have never tried/seen that Stonyfield flavor, but I’m pretty sure I need to because yogurt + chocolate definitely =’s true gina fashion. :-P

One day without veggies won’t kill you. In fact, your tummy is probably much more comfortable without all the bulk. :-) But I know what you mean! I crave veggies if I go without them too long.

mmmmm that pear/goat cheese combo looks delicioussss! i just bought some goat cheese and cant wait to use it!!! im sorry that you feel how you do about school, but its almost over! make the best of the situation :) we’re all here to support you if you ever need to vent :)

That pumpkin kefir pudding looks SOOO good- your pictures always make the food look super delicious :) , and That vanilla covered chocolate moose yogurt looks delectable as well!

I finally tried Kefir and love it! I wasn’t entirely sure what to do with it (tried over granola and Museli is currently stewing), but mixed with Pumpkin sounds perfect! I’m back to school next Tuesday, so I totally feel your blues :/

pumpkin kefir looks SO good I am sure you missed it a ton while in FL…glad its back in your life and love the martini glass..true allie fashion as well :) I always love your combos of food…warmed pear, AB and cranberry cheese?!/ HELLO foodgasm!!

just think about how fun it will be back at school! stay postive!! I am moving out Feb 1st and i do NOT do well with change, so I am trying to stay as positive as i can be about it!!

I have had that chocolate/vanilla yogurt! I thought it was delish but not sure if it was worth the calories :(
