Goodbye Break Hello Stress

Today was officially my last stress-free day. It all starts back up tomorrow. Classes, work, exams, meetings, job search, la la la la la. In fact, it starts off with a big bang because recruitment is in full force! I am a recruitment counselor this year so I don’t have to partake in the excruciatingly exhausting process of recruitment. However, I have meetings galore as I am the go-to person for the freshmen/sophomore girls going through recruitment. It should be fun!!

This morning I went straight to the gym after waking up because I knew there was no chance I would work out later in the day. I ran 1 mile in my shin sleeves, walked 10 min, and ellipticalled for another 20 min. I got hungry watching Paula Deen whip up some tasty lookin’ eats!

Lunch: Overnight Kefir Oats

Night B4:

  • 1/2 tbsp chia seeds
  • 1/3 cups oats
  • 1/2 cup kefir
  • splash of water

The Next Day:

  • 1/2 cup pumpkin puree
  • 1/2 banana
  • Pumpkin Coconut Pecan Granola

This was what I was baking last night!!

Pumpkin Coconut Pecan Granola

Ingredients (can be halved):

Dry

  • 4 cups rolled oats
  • 1 cup pecans
  • 1 cup unsweetened shredded coconut
  • 1 T cinnamon
  • 1/2 T Pumpkin Pie Spice

Wet

  • 3 T pumpkin butter
  • 1/2 cup pumpkin puree
  • 2 T agave nectar
  • 1/2 T vanilla extract
  • 3 T canola oil
  • splash of water

Directions:

Mix together dry and wet ingredients separately. Heat up wet ingredients in the microwave for 30-45 seconds.

Combine and Mix

Bake for 30-40 min. at 325 degrees F, stirring every so often.

Key Ingredient:

Spray oil on granola periodically during baking process. It makes it toasty and crispy!

**Be careful not to faint from the overwhelmingly delicious smellgasmic scent coming outta your oven and into your nose!

While packing (I had so much crap-ola), I broke for some kabocha squash fries and CATCH-up.

After busting my bootay loading up the car and cleaning up my room, I had an early din din.

A Mixing Bowl Salad with romaine, tomatoes, and cranberry cinnamon goat cheese.

Topped with Ginger Sesame Vinaigrette.  SO glad to have green again.  I could not WAIT to get this in my mouth.

And a side of salmon sashimi for some p-p-protein with soy sauce + wasabi.

Now why am I driving to school so late at night!?

Because my hair is long overdue for a cut!! I haven’t cut it since August (yeeps!). MY hairdresser is a busy lady and I did not plan ahead this time so it had to be tonight (last minute, obvi). She’s been cutting my hair for several years now and while I could go to someone else, I am always happier with HER snipping away at my mop.

I like my hair LONG but it has gotten so straggly and I’ve got a sea of split ends!! I’m gonna ask for 2″ off but she’s gonna cut 3-4″ I know it :)

The next time you hear from me I’ll be back at school. There was a robbery last night near my apartment so hopefully nothing happens to me while I’m carrying my crap-pola in the door. Maybe I’ll call campus police to watch over me.

Don’t kill me, girl, but…with BlueHost (where you bought your domain), can you tell me if you pay yearly/monthly and how much it costs for just one domain? I’ve been doing some research myself, would like a straight answer from a customer : )

Totally understand the hairdresser thing, I finally found someone new because I moved across the country but I still go to my fave girl when I am home! Have a safe trip back and hopefully no robbers!!

Mm that granola looks delicious! I am dying to try and make my own sometime soon. For overnight oats do you have to cook them at all? I haven’t made them myself but I want to try soon!

This break was so wonderful for you that it makes me sad to see it’s all over. But that’s okay, this semester is going to ROCK for you!

I made Overnight Oats too!!! I love the gooey texture that OO creates. Don’t get me wrong, stove top is where its at, especially in the winter, but sometimes a change in texture is nice.

that’s good you’re a rho chi–that’ll def help with your stress level and not having to fake smile all the way during FR haha. i’ll be at winthrop and elon for their FR and am super excited! safe travels down to NC and i hope that situation at your apartment is taken care of. scaryy.

Mm kabocha squash fries! I’m glad I don’t start school until next week, but I’m ready to actually be back up at college. I really need to get a haircut before heading back. It’s been foreverrr, but I’m liking letting it get long, and like you say, they’ll cut twice as much as I ask!

I’m completely like that with my hairdresser. I can only get it cut twice a year because it’s the only time I’m home! yuck

Try not to stress too much! I’m worried about getting back to school too, but just think, it’s OUR LAST SEMESTER! We’ll enjoy it and have a great time.

You’ll love being a Recruitment Couselor! I was on the Panhellenic Exec Council last semester and it was the best experience I’ve ever had, so rewarding. :)

Ah same!! Today was the first day of classes and i’m already stressed for the upcoming semester, and officially done with my fave routine of a comforting breakfast + coffee/tea and tv with my mama, in the mornings! sadd :( Until summer or spring break, at least…

But i’m also gonna be a RC! But next year!! GOOD LUCK!! I’m sure its gonna be crazyy handling all the little froshies! XOXO
