Snax To The Rescue

Wow, thanks for all your enthusiasm about my class. I think I’m 500x more excited than I already was! I will certainly keep you posted about our weekly shenanigans. This Friday, a UNC graduate student (who missed our first class to attend a hog killing??) is bringing in a dish. He goes to UNC…figures :)

We’re also doing an interactive cooking demonstration–it just gets cooler and cooler!

I’ve been neglecting oatmeal/oatbran lately in favor of yogurt, kefir, eggs, and Ezekiel English Muffins. I just haven’t been craving it at all. I think I had it too much at the end of winter break. I need to be careful with our fragile relationship! I knew oat bran would be the perfect thing for my almost-empty-almond-butter-jar for some oats-in-a-jar but I just couldn’t picture myself satisfied afterwards.

I wanted yogurt+kefir, my true love <3, So that’s what I had. There’s a twist though!

I was adamant about using this jar for some reason. So I loaded it up with kefir, Greek yogurt, microwaved pear chunks, cinnamon shakes, and sesame honey almonds.

I think I’m going to keep the jar (wash it out of course) and use it again!! It was fun to shake things up!

So the other day I got this bar because my favorite sweet/dessert in the whole wide world is carrot cake! I love trying new bars so I gave it a whirl.

EW. This tasted bleghh. It looks like a Rice Krispie Treat but it did NOT taste anywhere near such a thing. I’m having a hard time piecing together the words to describe this bar. Cardboard? Tasteless? Dry? Ick. Bummer.

It sure smelled like carrot cake though! Brownie points for scent.

I was having some random tummy pains during class and knew an early dinner would be completely welcome. I quickly whipped up some Gyoza Tofu w/ Spring Mix, Red Peppers, and Grape Tomatoes.

I pan-fried the tofu with the TJ’s Gyoza Sauce. Purrrfect!

Midway through, I decided to grab a slice o’ bread to make a mini sandwich.

After teaching my 2 oboe students, I went to the gym to watch the Duke Basketball game. I had a surprisingly energetic workout. I’m not sure where my energy came from at 9pm since I was yawning all night.

I did a swift 60 min. on the elliptical and then 30 min. incline walking on the treadmill (by accident!!!). I got totally sucked into the game and forgot I was even working out until I suddenly got SUPER HUNGRY. Yes, I forgot I was working out. Shush up.

I was on the verge of gnawing my hand off! SNAX to the rescue! (we sure have a love/hate relationship).

Lotsa snax sounded like a better idea than a meal considering it was already 11pm. I guess I worked out pretty hard though because I am hungry again!

Girl, you do eat a lot of yogurt. ;) Your digestive system must love you, lol. Have a happy Thursday (I almost typed Friday… darn it)!

That’s so weird- I’ve never seen or heard of these bars until you and I both tried it. Yeah, I wasn’t impressed with mine either :?

the choc peppermint is by far one of my fav luna bars! well that and the white chocolate macademia nut! I love how you distributed the love in teh AB jar! Blue diamond, hands down the best I have had yet! I have tried those NUGO bars int eh trail mix flavor, pretty good! the carrot cake one looks SO GOOD! and major points for scent indeed!

Pretty crappy about that carrot cake bar, but I see you had a great Luna one to pick up the slack! Also, how did you like that Blue Diamond almong butter? I’m asking because I was disappointed with it myself…..:(
And a hog killing? Hmmmmm sounds a little disturbing, eh??? ;)

Congrats again! I wanted to send you McCann’s SF Oatmeal- but the store which you can get them at was OUT! They don’t know when they’ll get more shipments! sorry!
I also ate @ 11pm-12am last night. I went to see Craig Ferguson live (hilarious) and felt so sick when I got home that I needed to eat! Kudos on the wicked workout! You certainly work out A LOT! and for 1.5hrs?! CRAZY!! :) I wish I had your sudden burst of energy. I think I need a caffeine drip IV! Great post! I am going to haul my lazy self to the gym and then work… thanks for the inspiration! lol

I love those adorable little banana ice cream sandwiches. Great idea! Last week I read on the bike and treadmill which I never do, and it totally made the time pass and forget that I was working out, but part of me felt like I didn’t get as good of a workout…hmmm…

I hate that, when you are so hopeful for something, like carrot cake and then it’s like you said, “blegh.” I ususally just throw it away. Not worth all the “nutrients” and “vitamins” if the taste isn’t there. I’d rather eat fresh carrots :)

The workout thing, that’s so funny. Sometimes I get so distracted that I forget I’m working out too. Well, only with cardio. I am always having to read 20+ page case studies and I always do them while doing the elliptical (running is too bouncy) so before I know, it I have completed 30-40 minutes of cardio AND some homework. Two birds with one stone. Reading is not really my thing. If I’m trying to read it at home, I always fall asleep so ya, cardio + reading = perfection!

That almond butter jar looks like a pretty good size/shape for eating out of, I would keep it too!

haha, I totally understand.. I am notorious for overdoing it on my faves.Loving your apples in a jar.. not to mention that tofu. I haven’t tried pan-frying it yet. Maybe all do that tonight as my soup add-in :)
