Water, A Luxury

I woke up early today (okay, early for me), just to brush my teeth and tinkle. There’s been construction going on near my apartment so they turned off our water for several hours today. That’s one way to ensure you get outta bed!! There was no hitting the snooze button this morning :)

I’ll admit living without water for only a few hours was pretty challenging. No peeing? No washing of the hands? We use water a lot more than we realize throughout our daily lives. Of course this morning taught me a lesson to be grateful for luxuries such as running water. I rarely think about the conveniences I am so fortunate to have until they’re gone (or temporarily shut off).

I must admit not being able to pee was the hardest part. It did NOT help that I drank coffee.

***

I had a hankering for french toast upon waking. Despite the freezing temps and heavy rain there was still no oatmeal/oatbran to be craved. Maybe tomorrow.

To make the french toast bath I combined:

  • 1 egg+2 egg whites
  • splash of almond milk
  • vanilla extract
  • pumpkin pie spice

I soaked 2 slices of whole wheat bread in the bath and pan fried away.

IMG_1811.JPG IMG_1812.JPG

I topped the French toast with microwaved apples, cinnamon, agave nectar, a dollop of almond butter and….

IMG_1814.JPG

Nutritious whipped cream! (Greek yogurt)

IMG_1816.JPG

Taste-AY. Totally hit the spot.

I’m liking these mornings without class. I can prepare a nice breakfast, answer some emails, work (chyea right), and dilly dally. I’d say so far my workouts have been half in the morning and half in the afternoon/night. It’s nice to have the option, that’s for sure.

***

I was extra hungry after just a couple of hours most likely because a) I had to wake up early to pee (only got 6 hours of sleep!) and b) I worked out intensely last night.

I tried to honor my hunger by snacking on….

Dove Peppermint Bark

IMG_1833.JPG

Sesame Honey Almonds.

IMG_1834.JPG

and 1/2 an apple

IMG_1649.JPG

During class I munched on a Luna Protein Bar for some pre-workout fuel.

IMG_1633.JPG

It worked like a charm because my workout was grrrrrreat! I was working hard yet I felt like I could go on forever. What’s up with my energy lately?

I did 60 min. on the machine below. It was seriously the only machine I could get my legs on. The gym was jam-packed!! It was fun to change things up. Then I did a full body strength routine for ~20 min.

Dinner was beefed up tofued up Annie’s Whole Wheat Shells & White Cheddar Macaroni and Cheese

IMG_1838.JPG

I made ~1/2 the box. I used almond milk to make the cheese sauce and added about 2 heaping spoonfuls of GREEK YOGURT!!! It added creaminess and thickness to the sauce. Try it if you ever make Annie’s in the future.

I bulked up my mac and cheese with veggies (broc, carrots, cauliflower, mushrooms) and tofu.

IMG_1841.JPG

Topped with some parmesan cheese.

IMG_1843.JPG

IMG_1845.JPG

So filling. So voluminous. So taste-tay!

IMG_1847.JPG

This was a humongo bowl!!

IMG_1849.JPG

I would like to note that I unknowingly picked out all the veggies to eat first and then had quite a few shells to eat at the end. My former self would have picked out all the shells first :) .

***

I ended on my LAST bag of Tazo Passion Tea

IMG_1861.JPG

And TJ’s Tart Froyo+kefir topped with mango and strawberry chunks. I swear knowing this is waiting for me at night is making the days that much easier :)

A few more sesame honey almonds may have jumped in. So good. Off to finish my food writing assignment and then gear up for recruitment tomorrow!

French toast looks sooo tasty, hm maybe tomorrow? Adding Greek yogurt to the mac’n'cheese for creaminess is brilliant. I didn’t get a chance to comment last night, but so happy you are finding a potential career path, or at least the right direction. That class and the professor sound perfect for you!

Mmm french toast! Haven’t had that in awhile! Love the kicked up mac n cheese! A friend of mine used to put cream cheese or sour cream in to make it extra smooth, so I could totally see yogurt working too! Oh and PS once the water is turned off the toilet has one last flush left in it (the water still in the tank)! Good info for future references! ;)

Oh wow, I used to love those shells before I went vegan. It sounds strange, but leftovers are supper good straight out of the fridge. That’s coming from a girl who likes her food warm and fresh so you can bet this was an exception. I love your idea to make a salad out of it. I’ll have to try that with my new dairy free shells (wahoo!) :) . I think it’s funny what you said about eating the veggies first. I admit that I always save my favorite part for last instead of first (aka, the veggies! YUM!)

Have a lovely day!

It really is funny how we don’t realize the things we take for granted, until we don’t have them anymore.

I can’t think living without water for few hours…. because I need to pee at least once every hour… hahaha……. yes. you have a point there that we should appreciate more what we have!

You are absolutely right about the water thing. We are so fortunate for what we do have, though. Imagine living like the people in Haiti right now. They don’t even have enough water for half of their country. Thinking about it is horrible. I am glad that you realized that water is not just something looked lightly upon. :)

Everyone seems to be making french toast lately and to be honest, I have had a hankering myself. Good thing this was on my mind for Sunday Morning Breakfast! :)

Love that Mac and Cheese din. I love adding Greek Yogurt to the sauce but if my husband ever found out, he would disown me! (Lol, he HATES greek yogurt!) One time I tried to trick him and tell him it was sour cream. He never lets me live that one down.

Hope you have a brilliant Friday my love!

That is an interesting looking cardio machine. I’ve never seen it. I bet it was a good workout with switching it up. :) Now I have a craving for french toast!

I experienced that water situation as well when we went canoeing in Sweden for a week. We once went to a café to beg for water because we had none anymore. :)
That dinner looks so good! And so does the french toast.

At our old gym, I had to use that cardio machine as a result of a packed gym as well– and I loved it! I ended up using it many more times!

Your french toast is making me drool all over my keyboard…

No water is hard. :( That happened to me once when they were doing construction by my house, for three days, in the summer! Almost killed me, ha! I can’t believe they have Dove, peppermint bark! I was craving some so bad, I thought I would try to make some. My gym doesn’t have an elliptical like that, heard you burn way more calories on those bad boys.
