Seize the Weather

As predicted, I was h-h-hungry this morning. I think my late-night workout continued to burn throughout the night. Despite being hungry enough to eat anything, I wanted to make something special this morning. You know…change things up a bit. Yes, I could eat kefir + Greek yogurt bowls all the live long day (check out the tutorial if you missed it!) but I had a hankering for pancakes.

I referred to my recipe for Multigrain Butternut Squash Banana Pancakes but used OAT BRAN instead of GROUND OATS. Oh and I added a lil’ kefir :) . I simply couldn’t resist.

Butternut Banana Oat Bran Pancakes

Ingredients:

  • 1/3 cup oat bran
  • 1 egg white
  • 1/8 cup whole wheat pastry flour
  • 1/2 cup butternut squash
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 TBSP kefir (!!!)
  • 1/4 cup water or milk
  • Stevia
  • Banana slices
  • Toppings

Directions:

1. Combine all ingredients (except banana slices)

2. Pour 1/4 cup of batter into skillet

3. Gently press banana slices into pancake

4. Flip

5. Top pancakes with whatever you want!

Almond butter and Agave Nectar Drizzle

I think I hit every food group with this breakfast.   IHOP’s got nothin’ on me!!

After walking + reading (simultaneously) for ~30 min., I popped a squat at this picnic table to sip some half-caf coffee and read/write for class.

I had to take advantage of the sun + 60 degree warmth because it’s supposed to SNOW on Saturday!!! Whaaaat!?

After class, I went to the WaDuke Trail for a 5K run. I was SO JAZZED UP for this run because I had been looking forward to it since I checked the weather last weekend. The weather did not disappoint me but my legs did. UFFF my legs were dragging. I tried to take it easy on the crazy roller coaster hills to avoid injury, but even so, I was not feeling the endorphins.

So I decided I would hit the elliptical to finish out my workout. After 10 min. I made the crazy/awesome decision to go to a CARDIO DANCE class at our gym.

Despite being POOPED to the max, it was SO MUCH FUN!! I was a sweaty beast afterwards. It did not feel like a workout at all. Just fun aerobics-style dancing. I was honestly surprised my legs survived the hour long class!

The pancakes I made for breakfast held me over for sooo many hours. I snacked on some almonds throughout the morning and together they kept me going and going.

For dinner, I decided I would continue my breakfast craze…

An omelet (1 egg+2 egg whites) w/ mushrooms, broccoli and BRIE cheese!

I’m still chipping away at these mini bries I got from Costco back in October!! See? That’s exactly why I love these tubs. I can never finish a whole huge wedge. These are perfect because I can have fresh brie at my own pace.

I was too optimistic about stuffing my omelet with veggies so it ended up being uncloseable :)

That’s okay because now you get a peak at the inside!

I have a scary amount of work due tomorrow morning. Gotta get crackin’!! I’ll probably have a green monster w/ Kashi Go Lean soon since my stomach is already calling for food. I blame cardio dance :)

I’m excited for my Culinary Cultures class tomorrow!! We’re making something exotic, I hear. Okay WORK TIME!!!

How appropriate to crave pancakes! I heard today is national blueberry pancake day! hehe So silly.

That class sounds fun. I was looking into some around me, but I can barely run up a flight of stairs so I know I better not opt for an hour long class out of the blue.

Dinner looks SO GOOD. I’d eat that up in a second if you made it for me! Seriously, ea. part of it looks so yummy and perfect right now!

I love pancakes & I have a couple of new mixes at home – can’t wait to make myself a big plate!

I love classes like that (I’m assuming similar to Zumba) because there’s no workout feel to them, just FUN!

you are utilizing that panini maker to the fullest! I LOVE seeing teh grill marks on everything from toast to sweet potaters!! those little brie containers are the cutest!!! I love anything prepackaged and fresh so you can eat it at your own pace, exactly what you said!

Your pancakes look delish! And I love the mini Brie tubs. So perfect.
Omelets/eggs are definitely my lazy day dinners. My new fave is drizzling a bit of tahini overtop.

All your food looks so creative and delicious. :) I love breakfast foods any time of day! By the way, just wondering—are there any stark nutritional differences between kefir and plain yogurt? Or greek yogurt? I’ve only tried the flavored kind from Lifeway, but I’m thinking about picking up a bottle of plain kefir in lieu of goat milk yogurt from TJ’s…

60* weather? What what?! It’s supposed to snow on Saturday here, too, but it was freezing this evening! … Oh wait, it was warm during the day now that I think about it. It’s just that I was stuck inside a school building all day… lame.

Okay, no lie! For some reason, I was browsing your recipe page the other night and I saw these pancakes and suddenly got the URGE to make them. I didn’t make them yet, but am totally planning on it this weekend. CAN”T WAIT! You read my mind! :)

I sooo want pancakes but I’m saving them for tomorrow! For some reason, pancakes are strictly a weekend thing for me. It’s like I have a mental block and I can’t have them during the week! Does that happen to you? Well obviously not, but with anything else?

mmmm those pancakes sound so good! the last time i tried to make pancakes i ruined them THREE times! im not sure what it was that day haha and those mini brie cheeses are so cute!!!

Gah…so much I want to say. First of all, I MISSED YOU! And your fab blog, and am excited to do backreading now. That omelette looks awesome- something I have never mastered the art of cooking. Eggs are tricky, no? HOW FREAKING CUTE IS THAT BRIE?!!!! I love mini/individual stuff.

Cardio dance sounds right up my alley (allie! Oh haha…lol)
