Fresh Legs And Creamy Concoctions

I’m sad to announce that despite the snow storm (which lasted over 24 hours may I add!!), we have classes tomorrow! Whaaaaat?! When I was on campus today, all the walkways and even some of the main roads were snowy, slushy, and some ICY. I was so sure classes would be cancelled. Sad face.

THE NATIONAL WEATHER SERVICE IN RALEIGH HAS ISSUED A WINTER WEATHER ADVISORY FOR BLACK ICE… WHICH IS IN EFFECT FROM 600 PM THIS EVENING TO NOON EST MONDAY. THE LINGERING SNOW AND ICE THAT BEGAN MELTING TODAY WILL RAPIDLY FREEZE AFTER SUNSET THIS EVENING. BLACK ICE WILL BECOME A PROBLEM AS THE MELT WATER WILL QUICKLY FREEZE. MANY SECONDARY AND RESIDENTIAL STREETS AND ROADS WILL HAVE A COMBINATION OF A HARDENING SNOW AND ICE PACK… ALONG WITH DEVELOPMENT BLACK ICE. THIS WILL BE A RAPIDLY DEVELOPING HAZARD AS THE TEMPERATURES WILL FALL INTO THE 20S BY 800 PM… AND INTO THE TEENS OVERNIGHT. CONDITIONS WILL NOT IMPROVE GREATLY UNTIL NOON MONDAY.

The sun was shining all day, melting all the precious snow. It is definitely going to freeze over tonight though. It’s supposed to be 12 degrees F!! Count ‘em!!

This morning I woke up and was delighted to find out the gym was open! Funny, because then I got lazy and kept putting it off.

I had an amazing creamy coffee concoction w/ farm fresh chocolate milk, stevia, and whipped cream!

I also had a cinnamon raisin Ezekiel English Muffin w/ almond butter and banana when I realized I was gonna linger in my apartment before going to the gym.

I’m going to pass these tents in K-Ville on my way to and from the gym for the next month and a half. Students sleep in tents from now until March 6th to get into the UNC game.

Nutz. I wake up freezing under my down comforter + 2 blankets. I can’t even imagine….and I don’t wanna!

Workout:

  • Ran 2.2 miles
  • Incline walked 1 mile
  • 15 min. Arctrainer
  • 35 min. elliptical.

WHEW!!! My fresh legs just kept chugging and chugging. I was having so much fun I didn’t wanna stop. Well, more like I didn’t want to go back to the piles and piles of reading I have for tomorrow! The active rest day I had yesterday refilled the juice in my legs though that’s for sure.

My post workout meal didn’t come until 5pm…yikes. BUT I woke up at 10am. So if I woke up at 6 am like some people, it would have only been 1pm. That doesn’t seem as bad, right?!

I pan-fried a filet of mahi-mahi in TJ’s Gyoza Dipping Sauce and put it on a salad bed.

Veggies included:

  • avocado
  • red peppers
  • grape tomatoes
  • red onions
  • 1 cucumber slice :)

I also used s’more dipping sauce for dressing.

A side of kabocha slices w/ ketchup. I roasted this guy last night (1 of 2 squashies I brought back from home).

Post dinner, I made butternut squash yogurt with apple chunks and Kashi GoLean

I combined butternut squash puree with Greek yogurt, cinnamon, and stevia.

To make this creamy concoction:

Then topped it with microwaved apple slices and Kashi Go Lean.

I’ll probably have a Luna bar and some fruit w/ almond butter after I hit publish!

I’m going to go read until my eyes pop out now….NO THANX to whoever decides if we have a snow day or not!! I hope you all had lovely weekends. Do anything fun/exciting/adventurous?

Wow, just thinking of those peeps sleeping in tents in the snow makes me want to jump in my snuggie under layers of blankets. BURRR, they are Freaking CRAZY!!!! Nothing could make me do something like that….nothing! :)

Okay, how good is roasted Kabocha with ketchup? Seriously, can you imagine anything more delicious, because I can’t. Really, I could eat these combo every single day and never get sick of it. I really would choose this over any fry hands down!

Ha I know the feeling…Virginia Tech isn’t canceling classes either and we have a FOOT of snow on the ground! I was hoping for at least a delay…oh well! :)

Good job with the workout. I’ve been snacking randomly on the kabocha that I roasted up. I’ll be having kabocha soup this week. YUM. Thank you sooo much for the suggestion of where to find.

Wow college basketball is fun but not THAT fun to sleep in tents for months?! I think it could easily be enjoyed from a warm bar or home :)

Your kabocha always looks so darn yummy! I’ve been looking for it in the store but it’s nowhere!! Good luck with the studying. This is my ten minute break then back to gettin’ my study on!

My college roommate is upset that Duke is starting on time tomorrow while UNC and NC State have delays…too bad you’re not a state school? haha.

I know, I look back on my freshman tenting experience and wonder what the heck I was thinking!! I like my warm bed, thank you.

one year they had a special for those duke students who camped in kville. i think it was on espn and i guess students have to be entered into a lottery to get tickets to the unc and duke game. that’s craziness.

i wish i could go to such a college rivalry game, it sounds so awesome.

Ok, sorry but once I saw that tent stuff my brain stopped processing anything. SIX WEEKS in a tent? to see a game? This made it to top 10 shocked moments of Christina’s life. I’m scared, appalled, pity, and … really?!? for those people. Why would a game matter that much to your life – ever? EVER.

BOO the weather deciders, what Scrooges! I remember at high schhol, my school was always the one that stayed open with no-one else’s did – so annoying!!
That muffin, and that butternutsquash yogurt, and the kabocha, and the avocado in your dinner, AND the chocolate drink thing…..seriously, you just ate all my favurite foods!!
I have no good plans today – uni and work! Wild times.
Oh, and how crazy are those people to sleep in tents!!?? Excuse my french, but wtf!??

OMG I hatee when it’s slippery here and theres black ice and we still have school! I’m always SO cautious and it takes me 20 minutes to walk to class because I walk so slow!! Be careful, girl! :)
Your salad with mahi mahi looks so good! I’ve only tried it once or twice in restaurants, it’s not too bad! And butternut squash yogurt sounds so interesting and yummy!

I cannot believe how much snow ya’ll got! We just got pounded with rain. Those kids sleeping in those tents are nutso! Brrrrrr! Great eats- love the looks of the kabocha squash and the pumpkiny yogurt :) I wish we lived closer to Duke, Josh and I will have to try and come up for another game- so fun!

I was pretty upset about the snowstorm being on a Saturday… that means no chance of school being delayed or canceled, at least with my school system. :( I’m glad you had fun playing in the snow, though! The clementine eyes really give it perspective, lol.

Yummy eats, as always~ that’s some beautifully charred kabocha you’ve got there. :D

Oh my god, camping in the snow??? That’s NUTS! I almost froze my butt off while camping in France in April.. And it wasn’t really that cold to begin with and I can’t imagine what it’s like in winter! Crazy!

OMG thats certifiable insaneee to sleep in those tents! I had no idea the game was that big a deal, then again i really had NO IDEA!! wow. I would give thema huge pat on the back and maybe some hot soup :) your eats look so delicious! I havent mixed my pumpkin with greek yog in way too long! bringing it back…who says you cant have pumpkin after the winter season right??
