Greetings LLE Blogglings,

Allie here blogging from a very public location on campus. I’ll reveal where I am at the end–teehee :) . I usually blog from the comforts of my room but tonight, I’m busy busy busy. Today has been on-the-go and it’s FAR from over. Here’s a skeleton of my day:

Brunch –> Class –> Gym –> YOU ARE HERE –> Sorority Meeting –> To Apt. –> Shower –> Interview Momma for Class –> WORK –> Sleep

Let’s back track shall we?

Ezekiel Egg ‘n’ Cheese Muffin:

The combination of egg and cheese always reminds me of the breakfasts my momma would cook me almost every morning as a child. 1-2 eggs slathered with melted cheese. I would eat this up in 3 seconds flat! Well, let’s be honest, I would gobble up anything with cheese on top, even broccoli!

While I could have used a more ‘natural’ cheese, I decided to revisit the good ol’ days with Kraft American! To make the egg so perfectly round, I microwaved 2 egg whites (+ some yolk) in a small bowl. It fit perfectly like Cinderella’s glass slipper :) .

I wanted hot coffee but I had some leftover coffee from yesterday that I needed to use up.  I don’t waste anything, remember?  Although I’ve been craving iced coffee lately, this morning was so cold that I reluctantly drank this guy.

A couple hours later, I was still thinking about a hot mug o’ coffee, so I made some half-caf. You can still see the steam coming out of the mug!! I also had another Ezekiel English Muffin w/ almond butter and banana slices.

I know, I’m an Ezekiel Whore, but I was extra hungry this morning because I didn’t fuel enough yesterday post Body Tone. I tried though! I ate a good 500 calories at 10:30 PM and was positively stuffed. I guess my body used it all up while I was snoozing?

I was hungry again a few hours later (gufff) so I munched on some Kashi Go Lean + M&Ms + Sesame Honey Almonds before heading to class (repeat photo). I’ve been scarfing down the winning combo of chocolate and Kashi Go Lean recently!

After class I went to the gym for 15 min. on the Octane Fitness Elliptical (the weird looking one) and then 45 min. on the Arctrainer. I was pretty tired. I think I’m still recovering from yesterday’s Body Tone class…haha I guess it really did push me!

Dinner On Campus

Between working out and my meeting I decided it would be a better use of my time to stay on campus than go back to my apartment and then back to campus again…..even if it means I’ll be sweaty at my meeting (shhhh) :) .

I hit up the salad bar and added the leftover Mahi Mahi filet I pan-fried over the weekend as well as some avocado. Ohhhh yeah, I totally suped up my salad :) .

Highlights from my salad include:

  • Sweet potatoes
  • Eggplant (I’ve missed you, Mr. Eggplant!!)
  • Red Peppers
  • Mushrooms
  • Grape Tomatoes
  • Cucumbers

I also packed some kabocha slices and grabbed a pink pear from the fruit basket.

I tried to take these photos as fast as humanly possible because I was in a verrrrry public place!

THE DINING HALL!!!! Okay that wasn’t as mysterious and exciting as say Hogwarts, but at least it looks like it….right!?

Alrighty blogglings. I’m gonna go search for some sweet before my sorority meeting. I’m thinking some chocolate. You can never ever go wrong with chocolate.  Too bad I can’t make a Kashi Krispie until I get back to my apartment!

Haha. Your dining hall really does look like Hogwarts. Hope you had luck find some chocolate. I’m curious to know what a Kashi Krispie is. Have a good night =)

I want to visit duke just to pretend like I’m eating in the hogwarts dining hall! Those M&M’s are so funky! I love all the different sizes!

waitttt your dining hall REALLY does look like hogwarts!

i love my fancy cheeses, but when it comes to omelets and egg sandwiches–i always revert to the kraft. it’s very necessary :)

Guess what I had for dinner…..ROASTED SQUASH AND KETCHUP DUH!!!! Oh it was fantastic and I thought of you with every bite! :)

I can never get my microwaved eggs to fit like a glass slipper! I always have to smush them down with a fork so it doesn’t topple over.

I love microwaving my eggs in a perfect bowl like that too! The simple joys in life, eh?
That Kraft cheese looks so good to me right now! hehe The commercial has been giving me cravings, but now seeing it in a pic might make me need to buy it!

Yes! I am part of TFA and will become an “alum” of the program in June. Email any questions that you have about the program in the future. Glad to answer :) Ahhh…i seriously miss those jam packed days in college where you just go go go and then its night. Is that strange?! haha Nice dinner!!

Whoa, seriously it really does look like Hogwarts! It just needs some floating candles in the air! A couple years ago I ate homemade “healthy” breakfast sandwiches a lot-and it was with the fake American cheese too! It just melts so nicely darnit.

The dining hall in Princeton (at least the one for the grad students) definitely looks like Hogwarts! It’s crazy. Although all the buildings in Princeton are a bit ridiculous…

My grandmother always used to make me a single fried egg for breakfast every morning. And she would yell at me when I refused to eat the crust on my toast. I didn’t realize how much I loved cheese until 5th grade… mmmmm, sharp white cheddar <3

lol, that Gothic-style (sort of) window does make it look like Hogwarts! With AWESOME food ;)

Your dining hall looks pretty fancy!

My Mom used to make me soft boiled eggs with toast fingers when I was a kid. I still eat them when I’m not feeling well!

And I often “hide” food under cheese so that my son will eat it. Works like a charm!! ;)

i am the queen of jazzing up salads! esp half salad bar and half leftovers! its a great way to save some money too! those salad bars can add up (ahem-whole foods-ahem) i swear I have never gotten a salad that costs less that 12 bucks! your dining hall is insaneee! I love it :) so fun that you get to eat there :)

That’s your dining hall?!? Nothing like the underground dining hall at American University. I’m actually a bit intimidated. I’d feel pressured to use only the best table manners if it looked like that…

Wow, it really does look like Hogwarts! Girl I am all over taking pics in the dining halls and everywhere else. Sometimes it’s a little hard to explain the concept of food blogging, but generally I find people aren’t too turned off :-P
