You know you’re not a typical college student when you add carrots to your morning bowl of oatmeal/oat bran. I wanted to make a carrot cake oatmeal last night for dinner but the water sitch sort of threw my for a loop. So 12 hours later…

My belated National Carrot Cake Day celebratory meal:

  • 1/4 cup oats
  • 1/4 cup oat bran
  • 4 baby carrots (shredded)
  • 1 egg white
  • almond milk
  • walnuts
  • shredded coconut
  • raisins

Unforch, I did not have an opportunity to enjoy a REAL carrot cake. Not many of you were reading when my internship coworkers bought me a Carrot Hazelnut Cake as a send off present (LLE was still weeks old then). It’s fun to backtrack and see the 4 comments I got that day :) Thank you, Lauren, Krista, and Erica for supporting me when LLE was still a baby bloggie.

And, you know you’re a carrot cake lover when your send off present is a carrot cake (as opposed to something lasting).

The ‘cream cheese icing’ was a delicious mixture of Greek yogurt and Coconut Butter. This was incredible…I kept licking it while stirring, as if it were icing for a cake :)

You know you’re a gym rat when wearing your last sports bra means it’s laundry time (and your laundry load is 90% workout clothes).

I spent $7.50 on laundry today, which is precisely why I always hold out as long as possible. Because that makes a difference in the amount of laundry I have ‘n’ all….

You know you’re Cheapy McCheaperson when you are outraged that dryer costs increased from $1 to $1.25 per cycle!!!

You know you’re not alone when you say there’s nothing quite as comforting as fresh, warm, laundry straight from the dryer!

You know you have a grocery shopping problem when you go to WF’s to pick up pumpkin and pumpkin butter and your return with the above loot.

The food I’m bringing in for my Culinary Cultures class will include pumpkin and pumpkin butter. Sadly, a can of pumpkin was $3 (!!!!!) @WF’s and they were out of pumpkin butter.

I wanted to try a new almond milk for kicks. Warning: this was not as good as Almond Breeze or Pacific. In fact, I’m really disappointed I got this! It tastes like water with a hint of FAKE almond flavor.

I also picked up some coconut oil to bake with. I’m going to include it in the food I bring in to class. I’ve never baked with coconut oil…I’m excited!!

what a perfect ‘carrot cake oatmeal’ concoction… that idea for the cream cheese icing is smart. mmm!

i also eat the skin on nearly everything… except like, bananas. lol.

awwww wilson! i miss duke’s gym. there have been many an hour spent on those treadmills. (actually, if i were to add up all the house i spent on those treadmills, i’m sure i’d hate myself. so i won’t.)

Love the carrot cake oatmeal!
And I love that I can relate to like, everything you wrote! I leave the peel on evvveeerything (I actually think it tastes the best), and you thought that shopping loot was bad!? I can go into a shop for a newspaper and come out with (literally) 3 or 4 bagfuls of stuff :s I figure it’s an ‘essential’…..:P
And I also love that you’re getting excited by the little things in life, like lots of circles :P I’m like that all the time!! I get excited if I peel an orange and all the skin comes off in one go, or if I slice a loaf of bread really straight..it’s the littlethings!

haha, I had carrot cake oatmeal the day before National Carrot Cake day…and got really weirded out when the next day, all of a sudden it was all people were eating! I was sort of relieved when I discovered there WAS a reason behind it…but sad I celebrated a day early :P Yours looks great! I was halfway through my bowl when I remembered the coconut…

And I’m with you on the leaving sweet potatoes and apples with their peels on.

Forgot to add – I am the same way with the grocery shopping “problem,” lol.

But have you tried the Silk PureAlmond almond milk? I just picked some up the other day but it’s so good it’s just about gone – by far the best almond milk I’ve had.

My primary reason for laundry is ALWAYS because I’m out of clean gym clothes. I really need to buy more- they are darn expensive though!!

I’m so glad I got your warning about fake almond flavor taste- I hateeee almond extract, but love all other things almond.

I totally agree- Almond Dream is like water compared to Almond Breeze! I’ll shell out the extra 50 cents for creamy milk.

Love the carrot cake oatmeal. My friend and I are celebrating National Carrot Cake day tomorrow night with a HUGE REAL CARROT CAKE! Can not wait! I would celebrate this day every day of my life if I could. :)

Your laundry situation sounds just like mine…I feel like all my laundry is workout clothing…and I do my laundry based on how many sports bras I have left, too! haha :)

The carrot cake oatmeal looks SO GOOD! I used to hate carrot cake, but recently I’ve started to love it, espescially with cream cheese frosting! I’m the same way with laundry…I always have an entire load of workout clothes! And Almond Breeze definitely beats Almond Dream, but Dream is more convenient because it comes in that huge size!

i so love your carrot cake oatmeal. OMG. carrot cake is such a weakness of mine but I think this oatmeal is a way healthier version. Awesome. Oh I totally understand about the laundry. When I was in college I couldnt wait to get my own washer and dryer and now, 5 years out of school and I still dont have my own washer and dryer. hahah. Oh the little things! haha im drinking that almond milk rite now as im eating cereal and reading the morning bloggies…its my go to almond milk!! i love it! ive had almond breeze before when the grocer ran out of this one but i didnt note any huge difference…i guess when i eat cereal i just need something to get it soggy lol sucks u didnt like it tho :(

Those oats look delish! I meant to get some of that coconut butter when I was in NY but ran out of space. Next time! Kind of thinking everyday should be carrot cake day, no?

I need to pick up coconut oil this weekend- I just got the Babycakes cookbook and am so excited to make the spelt carrot cupcakes I ate in NY!

clothes straight out of the drier are SOOO nice! im so curious to hear how your cooking/baking with coconut oil goes! when im home and can cook i usually cook my eggs in it (because for some reason my eggs stick less than when i cook them in olive oil…hmmm)

The day I stopped using quarters for laundry was an awesome day in my life…I hated it and would shove as many clothes as possible into the washer/dryer. Probably not the best way to do it…but my clothes aren’t fancy or anything. (Especially not in college!)

The icing sounds amazing-seems like it really would have a cream cheese flavor! I love baking with coconut oil! I love coconut oil period. I keep separate jars for face/body and kitchen. It’s pretty much the only moisturizer I use now (face,legs, hands). Love that stuff! Have you tried Silk’s almond milk (refrigerated)? It is my favorite! Hope you have an amazing weekend, Allie!

haha loved this post allie!! I also go to WF for 1 thing and walk out with SO much stuff, sometimes not even what I walked in for! I got that almond milk as well and was dissapointed :( it did not taste like almond breeze at all! BUT the HUGE thing was 3 bucks! so i went for it! since I am a trainer and workout a ton, is it normal that usually my laundry is only workout gear?!?!

I would try taking that Almond Milk back to WF for a refund. It used to be on their website that if you are not satisfied with a product they will take it back. You can also ask them to sample anything. They will open anything up for you to try.
