So Fresh

FRESH Coffee

Yesterday I didn’t feel like making coffee using the personal-cup method, which I demonstrated a few months ago nor did I want to use my roomie’s coffee machine. Enter the Bodum Cafetiere (French Press) I received from Kath’s Open Sky promotion back in December! (I can’t believe I waited this long to take it out of the box!).

IMG_2604.JPG

I haven’t used a cafetiere since my London days. My coworkers actually called it a ‘cafetiere’ so that’s what usually comes to mind when I see these, as opposed to ‘French press.’

Short story: When I studied abroad in London, I interned with an advertising/brand consultancy firm. For a couple of weeks,  I worked on a commercial shoot. I was the ‘runner’ (aka witch with a B) so one of my main tasks was to make coffee for the crew members….using a cafetiere! Needless to say, I have A LOT of practice using this contraption.

That takes skill :)

Pre-Workout Breakfast

Ezekiel English Muffin with Almond Butter

…and a super soft ‘n’ juicy pear from the dining hall. I need to load up on these ugly pears–they are so damn good.

With my candy vitamins :)

I also had a snack of Kashi Go Lean, chocolate chips, and walnuts. I’m lovin’ this combo!

Fresh [Gonna Be] Sore Legs

I worked out (elliptical and incline walking) while watching the Duke basketball game at the gym. It was a longer workout than I anticipated because I couldn’t peel my eyes off the TV screen! Usually I’ll leave in the 2nd half if I know we’ll win but yesterday’s game got tiiiiiight at the very end. I figured I would be okay since the walking portion on my workout was low intensity and I was feeling pretty good throughout.

FRESH Smoothie

Post-workout shake. I am trying to incorporate more protein in my post-workout eats because I’ve been skimping on the important macronutrient lately.

IMG_2626.JPG

  • 1/2 of a Vega Smoothie Infusion Packet (leftover from AUGUST!!!)
  • A sprinkle of Amazing Meal
  • 1/2 cup spinach
  • 1/3 banana
  • 1/2 cup almond milk

I love that the Vega Smoothie Infusion has protein from yellow peas, hemp, and brown rice. Cool, huh?

I also wanted to get in a ’snack’ so I could take some quality time to prepare dinner. I was just going to whip up something fast but then I got the brilliant idea to make:

Eggplant Black Bean Burgers!!

IMG_2651.JPG

Just you wait and see what these are made out of! I turned it into a cheeseburger with melted brie cheese.

IMG_2653.JPG

Ketchup makes the world go ’round.

IMG_2656.JPG

I also added some avocado to make it that much better.

IMG_2664.JPG

The bun was an Ezekiel English Muffin

IMG_2661.JPG

With a FRESH 2 day-old dining hall salad. Spicy Brown Mustard=delicious salad dressing!

IMG_2658.JPG

I’ll post the recipe for these eggplant black bean burgers in my next post. This post is getting super long already!

***

What to do with the leftover can of black beans? Make black bean brownies!

IMG_2674.JPG

I wanted to make chick pea blondies but the whole point was to finish off my open can of black beans :) . I’ll post the changes I made to the recipe and my thoughts on them along the burger recipe.

Before I go, my Momma sent me photos she took of the massive snow storm that hit the mid-atlantic area. She sent me a link to 84 photos….so I narrowed it down to 3 :) .

1. Does your mom live in Bethesda?
2. Recipe, please! Those look and sound YUMMY!
3. We were meant to be friends. I also studied abroad in London — MAJOR love — and had absolutely the best time ever. I was there in Fall 07, you? Great idea have a photo tab, I might “borrow” that idea on my site. :)

I got a FP for Christmas but have yet to use it. I am so lazy on the weekdays and stick with instant. I think I have just gotten so use to it that I actually really like the taste over brewed! LoL

Adding some extra protein after workouts is definitely a good thing. I always try to add in a little extra with some cottage cheese or peanut butter with my breakfast. Refueling is just as important as fueling but I think so many people forget that little fact. ;)

Black Bean Brownies! YES PLEASE! Can’t wait to see more of your recipes! :)

Damn girl, you really are well-traveled! I’m super jealous, hehe. ;) Those black bean brownies look SUPER fudgy! I just finished off my last can of black beans from 2009 yesterday, too. Thinking back on it, maybe I should’ve tried the brownie thing… I’ll wait to hear what you think of them though :D

Yeah. We have another snow day over here for tomorrow… at this rate, they’ll be cutting into spring/summer break in no time :(

So much good stuff here. I LOVE Ezekiel english muffins – they are so versatile – almond butter, burgers. Love that. And black bean brownies are definitely a favorite. It bulks them up and makes them more nutritious + often they are extra fudgy. What’s up with chickpea blondies all over the blogosphere lately? I feel like it’s such a trend these days. Are they really good?

I love hearing about your worldly adventures! I can’t wait to see the eggplant and the bean brownie recipe! My new favorite after workout snack is cottage cheese mixed with fruity (raspberry and acai) apple sauce-I can’t remember the brand but they are just fruit and so good!

I am horrible at making homemade brownies. Or else maybe I just don’t like the taste and much as boxed brownies. I tried to make chickpea brownies on friday, but they were so beany and awful. Do you have any hints?

Okay, this recipe overlap is getting a bit crazy, – the black bean brownies have been on my “to make” list for the past month or so (whenever it showed up on thekitchn). We seem to be well suited food buddies! Can’t wait to read about your thoughts on the brownies later on.
I’m also having snow jealousy – I’m sure I wouldn’t if I lived in snow country, but since I don’t – I see those pictures and think wow, how awesome!

You study abroad sounds great, even if you did end up being someone’s B, at least you learned some awesome coffee skills (I heard those french presses can be tricky!) Good luck with your legs, too. Bonus that you got to watch a great game and get in extra walking at the same time! Your legs will thank you :) .
Oh. My. The black bean burgers sound heavenly. Please please please post the recipe! Also, the black bean brownies and chickpea blondies sound great. What recipe do you use for them? So many good eats!
Have a lovely day!

Ugly fruit is usually the tastiest, eh? :)

Those burgers look great even though I dislike eggplant!

And I can’t believe the snow so places got. I’m just glad it didn’t head our way….
