It’s That Time of The Semester

It’s that time of the semester again. The ‘intro’ period to my classes are over and now due dates are creeping up on me….FAST! I can usually tell when this time is fast approaching because all I want to do is blog, go to the gym, and bake :) . Each of those allow me to temporarily escape my worries. Keyword: temporarily.

Better than liquor, excessive $$ spending, and aggressive behavior, I suppose!

I couldn’t figure out what I was craving when I woke up yesterday. I ran through all the possibilities but nothing spoke to me. It was probably because I had breakfast-for-dinner the day before!

1/2 an Ezekiel English Muffin topped with almond butter and half-caf coffee.

I packed some snax for class:

Apple slices + pumpkin/almond butter sammie. I promptly added banana slices to the sammie after the photo shoot!

In my heart <3 container. Like my Starbucks tumbler, it’s only relevant for a couple weeks out of the whole year, but I still use it whenever I want!

After class, I went to the gym for 60 min. on 2 different elliptical machines. It was more for the time to think and clear my head than the physical benefits. I just needed a chunk of time to be alone with my thoughts. Exercise is therapeutic!

Before my sorority meeting, I grabbed dinner at the dining hall on campus. I had to snap this photo as fast as humanly possible because the entire rowing team decided to invade my table and corner me against the wall. So much for choosing a secluded spot to photograph my food :)

Dining hall salad with tofu and sweet potato chunks, both of which I dunked in ketchup. Tofu + Ketchup was surprisingly amazing!

I also packed the last Eggplant Black Bean Burger with avocado and a slice of whole wheat bread and had it with my meal.

After I got back to my apartment, I had a kefir+tart froyo bowl with Kashi GoLean, Strawberries and choco chips.

Can you BELIEVE how long this box of cereal has lasted in my pantry!!?!? This is a record for me, that’s FO SHO.

And then I finished off my bag of chocolate chips. I had about 2x this amount.

I’m glad the bag is gone now because I’ve been munching on chocolate chips day and night for the past week! It must be that time of the semester month!

…Valentine’s Day, I mean :) :)

It’s that time of the basketball season.

Tonight is our first game (out of 2) against UNC, our rival! Throughout my time at Duke, we have only won games at UNC, never at home (If we were to win a home, there would be a humongous bonfire and I’m pretty sure the entire school would go ballistic).

Well, tonight’s game is away, but exciting nonetheless. Go DUKE!

Haha, those 3 comfort things you do are exactly like my comfort things I turn to when stressed!! Espec baking and exercise – I think the two must go hand inhand!! Darn stress and exams, it really ruins uni :(

Ah, I remember that time in the semester. The grace period is winding down. Crunch time is upon you! Majorly blows, but just think, you are that much closer to being done!!!!

Tofu and ketchup would be awesome I imagine. But then, I imagine just about anything is good dipped in ketchup.

I think it’s so funny that Duke considers UNC its big rival (which totally makes sense) but I went to Maryland and we always thought of Duke as our big rival. I’m sure you know of the UMD-Duke hatred haha.

Although UMD *did* beat UNC this weekend… :D

Ugh, don’t remind me of “that” time of the semester. I have a paper due a week from today and NO IDEA what I’m going to write for it. I love munching on chocolate chips…little buggers are addicting!

The tart+kefir combo is just divine! I wish my dining all had saad bar options like that. Mine is the lamest :(

I’m about to eat a pumpkin/almond butter sammie for breakfast!! Not the most staying power, but at least I only have 2 classes this morning!

Blogging/baking is your anti-drug! Those commercials used to make me laugh so hard!

I am just starting my semester ( last week) but I’m already stressed! In one of my classes, we have to take turns TEACHING the class. That’s like a 45 minutes of presentation – ew!

Exercise clears my mind like NOTHING else. At least one day of the week, that’s the only thing getting me to the gym! Those black bean burgers look amazing and I think they may just be on the menu for tonight!!!

I LOVE Duke basketball!! Sounds like you had a great day! I did the same thing on the eliptical…mostly just for therapeutic reasons, it feels great to just clear your head of pressures and DATES for assignments/tests for just a little bit!

Those berries look SO sweet! YUM! And I gotta buy myself more kefir ASAP. Can you believe the last tub I bought was bad??? I made a smoothie, took a sip and it was fizzy like pop. Bletch!

Girl I love your heart container too! The mini Desperate Housewife in me loves themed things!!!

love the container! i use heart decorated things all year round :) yummy eats! massive salads are the best. I have definitely gone through a WHOLE BAG of carob chips over the course of 2-3 days during that TOM ;)

yayyyyyy! Go Duke! How good does that eggplant/black bean burger look? YUM! Love the avocado on top too! I had an avocado last night- it had been too long and I forgot how creamy and delicious they are. I love your little heart container! Adorable and perfect for food transportation. mmm your pics are so pretty! those strawberries are PERFECTLY red, they look so delicious!! I cant wait for summer and berries to be in full season (and affordable!!) I buy frozen in the winter months because 1 container is about 5.99!!

that container is so cute!! I just got a LOVE mug from target, yes its out for v-day but I will use it all year long! same with my heart shaped cookie cutters!

Those berries are gorgeous! I feel the same about chocolate chips – they’re too dangerous to have around – but somehow I always do : ) Me + frozen choco chippers is not a good thing ; )

Due dates are creeping up quick for me too. I swear I have 3+ quizzes each week!

I totally know what you mean by blogging, gyming and baking being a total yet temporary escape. Those are my 3 favorite things to do when in need of an escape, but I hate the cleaning part after baking…hahaha :)

Yay for being cornered by the rowing team. Was it the all male rowing team? Nothin’ like some eye candy during your meal, don’t even need dessert right? hahaha OK just kidding, sometimes it’s just way more awesome to sit on your own and freely take pictures without possible hovering eyes. :P

Gah, I hate the due-dates-coming-up feeling. I distract myself, and then I feel guilty about not doing my work! :( But your distractions are a thousand times better than the liquor + excessive spending! At least you can EAT what you bake ;)
