Green Orange Pink

I woke up feeling a bit under the weather. I feel fine now, so I think it was just from being horizontal all night, ya know?

Regardless, I wanted an energy/vitamin boost so I made an Amazing Meal Smoothie:

  • 1/3 packet Amazing Meal
  • 1/3 cup frozen spinach
  • 1/2 cup almond milk
  • 3 slices frozen peaches

While Emerile Lagasse made some pasta :) . P.S. My roommate got cable because she wanted to be able to watch March Madness and the Olympics. I really don’t have time to watch TV when I’m at school, but I hope to catch at least some of the Olympics.

The Olympics start tonight, right!? Wow…almost forgot!

Shortly after, my tummy started grumbling so I prepped breakfast WATERLESS! I woke up 30 min. before they told us the water would get shut off so I could pee but they shut it off an hour earlier than said.

…so I washed my face out of a bowl of water…like I was living in the 1800s!

Then I took to slaughtering my 2nd (and last) kabocha squash from home. I was afraid it would start to rot if I saved it any longer.

I brought the rest of the granola bar with me to the Think Pink Women’s Basketball Game. My sorority attends this game every year because our philanthropy is Breast Cancer Education and Awareness.

While waiting, I cracked open Animal, Vegetable, Miracle. I’m reading this book for my Food and Energy class! One of my sorority sisters said her TA last year was Camille Kingsolver, the daughter of the author!!! I didn’t know she was a Duke student, although it clearly states that on the back cover :) .

After I came back, I enjoyed a green tea latte, while baking for my class tomorrow. Of course, I had a serving of what I baked fresh outta the oven with some almond milk.

You’ll have to wait and see what I made for my classmates!!

P.S. If you emailed me or asked me a question sometime this week, I’m working on getting back to you!! My inbox stands at 84 new emails as we speak. I’m hoping to catch up this weekend.

I have to read parts of Animal. Vegetable. Miracle for my Ethics of Food class! Let me know how it is :) And how do you eat your kombucha? Do you cook it or eat it raw?

I heard squashes keep for up to 6months in a cool dark place…I’m too scared to try that theory though in case I waste one! They’re too precious for that :p
I have no idea when the Winter Olympics start – I feel sorry for them, it seems a huge deal is made out of the summer ones, but (over here anyway) no-one seems to care about the winters!

I love your orange snack plate! I am a big fan of beta-carotene myself. :) And, I am really wanting to read Animal, Vegetable, Miracle…as well as Omnivore’s Dilemma. There are a few others out there too that I can’t put my finger on.

I am guessing that you baked cookies for your class! Or a blondie/brownie-type thing. :)

Girl you are going to turn orange, just like me! No worries, orange is the new tan. Amen to beta carotene. :)

I am always looking forward to seeing your snacks each day. Really, you give me so much inspiration for bedtime snacks. I love your combinations.

Oh gurl! India is amazing, but you kinda make me miss having access to regular food…….like fresh veggies, green monsters, saladssssssss, and whole grain cereal. LE SIGH! only 3 more weeks though!

i am running late but needed to comment real quick so excuse my shortness:

a) love the orange plate — over christmas break my mom swore i was going to turn orange because i tend to gravitate to orange veggies/etc..

b) OLYMPICS TONIGHT YES! work will be fun.. something to watch besides basketball sports wise

You’ll have to let us know how that book is – I read one of her books I think freshmen year of high school, The Bean Trees & remember liking it.

That salad looks yummy – how do you cook your eggplant? I feel like every time I try to cook it, it comes out funk. Maybe the ones I use aren’t ripe?

I rarely watch TV…watching the news right now though, and yes, “apparently” the Olympics start today? haha

I had some kashi this morning too, and guess what, I hunted down some Anthropologie bowls last week thanks to inspiration from who else but YOU!!! I LOOOVE them!!! SO perfect for oatmeal and cereal and even thick chunky soup. :)

Yay kabocha! I went to buy one today and all they had were crown princess squashes- have you tried those? I didn’t get one because they looked a funny colour and I wanted to google how they are supposed to look :P

I’ve never had peaches in my green smoothies… Good idea! I never forgot my candy vitamins either when I was taking them. It’s amazing how I always seem to forget my multivitamin now that it doesn’t taste good!
