Happy Valentine’s Day!!!
Despite being single, I love this holiday! It might be because my favorite color is red and a lot of what I own is pink (i.e. my sheets and backpack). Or perhaps it’s the hearts <3 <3 <3 and love all around.
I’m going to show you some highlights from V-Day Eve (yesterday)–the more presentable eats
I had a lot ugly and un-pictured food because I’ve been studying for my exam on Tuesday.

Pumpkin French Toast

Egg Bath:
- 1 egg
- a dollop of pumpkin
- 1 tsp vanilla extract
- 1 tsp cinnamon
- a splash of almond milk
- stevia

Topped with:
Apples + Pecans + Coconut + Almond Butter Drizzle


All I’ve wanted lately are Green Tea Lattes!!! I crave these day and night….literally.

I watched the Duke vs. Maryland basketball game at the gym while studying for my exam! I was extra nervous for this game because I knew Susan, a Maryland alum, was just waiting for us to lose and earn a batch of baked goods (our bet).
BUT we WON!!! I’m still baking for Susan because she’s coming to visit this weekend!!
*This elliptical isn’t my favorite and this TV was way too small (although it has volume) so I moved to the wide screen TVs on the other side. Much better

Post workout I had an ALIVE! Shake:
- 1/2 packet Alive! Vanilla
- 1/3 banana
- 3 strawberries
- 1/2 cup almond milk
- 1/2 cup frozen spinach

And then I failed to document dinner because I had to do work before watching Twilight New Moon with my friend, Rosalie! Our school plays some movies before they are released on DVD. I have yet to read the books so I don’t have anything to compare the movies to.
One question: Do the directors make it awkward/dramatic on purpose? I try to appreciate the movie for what it is but at some points I just had to chuckle out of pure awkwardness.

I had 2 Dove Chocolates at the movie and then a kefir + frozen yogurt bowl with pumpkin, Kashi GoLean, and pecans.

Many of you have asked similar questions in previous comments, so I’m going to answer them here rather than send individual responses.
What’s with the water sitch?
There is construction going on near my apartment, so they have been turning the power and water off quite frequently. Sadly, the new facilities (small gym, eatery, common space) won’t be open until mid-March (which means mid-April) so we won’t be able to enjoy the benefits of enduring all of this muddy, noisy construction.
How do you cook your kabocha squash?
I usually roast my kabocha slices at 350 degrees F for ~30 minutes. I reheat them in the microwave for ~1 min. and they become nice and soft like sweet potatoes.
How do you cook your eggplant?
I usually slice them into disc shapes and roast them for ~10-15 min. on each side. If I am making a stir fry, I will pan fry them with the other veggies in oil and some kind of sauce. The dining hall on campus has roasted eggplant, so I’ve been getting eggplant from the salad bar lately.

happy valentines day!!!!! you’re so cheery, i love it. i’ve been ssingle every valentines day throughout my 21 years lol and i usually don’t mind it either. for some reason this year i’ve been super down in the dumps

The books are so so so much better than the movies! And I think they add the drama/emotional tension in there because it is very evident in the book. I’m jealous you got to watch it. I’m waiting for it to come out!
That pumpkin french toast is making me drool…it looks incredible! I feel the same way about the Twilight movies. They’re just so awkward! The whole time I want to yell at them to stop being so obsessed with each other. I’m a hopeless romantic, but it’s a little over the top. Plus, it’s not exactly the picture of a healthy relationship, especially considering so many really young girls are obsessed with the series.

Happy Valentine’s Day! While I don’t like eggplant, I know that its best to slice, and salt the eggplant and put paper towels on top to get the moisture out – just like tofu. It’s supposed to take the bitterness out I think?

I have never thought to put ketchup on squash but yanno that sounds kind of good! Maybe sometime soon.

Your post had some of my favorite foods- French toast and kabocha! I will usually roast my eggplant in round slices like you do. Sometimes I’ll get fancy and sautee it in veggie broth and Indian-inspired spices and serve with brown rice!
I hate edward. I don’t understand how he is considered attractive. Robert Pattison is sexy, but Edward Cullen does not look good as a shiny, muscle-less, ashen vampire. AND he is so mentally abusive, playing those mind tricks on Bella. TEAM JACOB ALL THE WAY!

And I adore the Twilight series, because I read the books, but the one criticism I have of the movies is that for people who did not read it, they are a bit intense. But on the other had, they are GREAT representations of the book. So I guess no, they didn’t try to make it awkward, there’s just super intense stuff involved
