A Berry Tasty Day

**I battled with Ecto for a good 3+ hours last night to try and write this post. Ecto won and I lost a LOTTA precious time! GUFF!! This morning it magically started working again. Thank goodness!

Yesterday, I took a day off from the gym. I decided a Dave Farmar Yoga Podcast was in order to stretch out my muscles. However, I got rather hungry and tired within 20 min….way too many chatarungas for my sore body. I need to get back into yoga!

A Berry Good Breakfast:

I’ve decided these dried pineapple slices are so great because they taste like my ultimate childhood favorite: FRUIT ROLL UPS!!!!!

My brother and I used to roll up fruit roll ups (tongue twister!) into massive balls and stuff ‘em in our mouths in 1 go. Ohhh the good ol’ days….

Strawberries ‘n’ Cream (Greek Yogurt):

Strawberry Cheesecake Oat Bran

1/2 cup oatbran + 1/3 cup 2% cottage cheese + Strawberries

Snack: Naturally More Almond Butter + Apples.

Almond Naturally More contains flax seeds and egg whites to boost protein, fiber, and omega 3 values. I love the texture that the flaxseed gives–like crackling almond buttah!

I may or may not have 3 different jars of almond butter open now!

So many of you listed peanut butter filled pretzels as your favorite TJ’s snack. I swear, every time I go to TJ’s I check to see if they have almond butter filled pretzels because I’m allergic to PB :( . I think I should write them a letter and suggest they come up with the product. I mean, wouldn’t YOU tear them off the shelves?

In the mean time, I’ll have to dip pretzels in almond butter. Totes not the same.

The other day, I picked up these Trimmed Leeks from Trader Joe’s. My daddy-o always cooks dishes with leeks and I have been missing his cooking big time! One more week and I can enjoy my daddy-o’s cookin’ again.

The package reads: Leeks are closely related to onions, shallots and scallions…Their flavor is sweeter and more delicate than onions. They add a subtle touch to recipes without overpowering other flavors.

I stir fried the leeks with cubes of tofu and TJ’s Gyoza Dipping Sauce.

I’m off to the bakery now to chit chat with the owner and the manager. So excited!! Gotta run. I’ll be back with the deets!

PS It was snowing just now!! Seriously!?

Pumpkin ice cream with kefir and biscotti looks awesome. So does the strawberry cheesecake bowl of oats. Yumm.

Fruit Roll Ups were a fave of mine growing up too! Lately I have been eating Clif Kids Organic Fruit Twists because the remind me so much of way back when my Memaw kept a “junk drawer” filled with goodies, including Fruit Roll Ups, for me and my brother.

AH!! It’s snowing here like crazy. I worked at the bakery last night and we couldn’t keep bread on the shelves. They are predicting a big storm and naturally people have to “stock up”. I seriously couldn’t believe how busy it was I usually just stand around and occasionally slice/ eat bread on Wednesdays. STAY WARM!! Nora

I dont know how you can handle the taste of Keifer and you seem to love it too.
I buy it often and try and force myself to have even just a table spoon because it’s so good for you. I GAG every.single.time.

I stir-fried tofu for dinner with some garlic, ginger, and soy sauce last night. And felt very asian. But on the topic of leeks, I recently made a really yummy leek, salmon, and arugula with Fage instead of cream. I didn’t realize how many things you could substitute Fage for… now you’ve got me putting it in my oatmeal and on my bread! :)

ahhah Allie I am INFAMOUS for putting stir fry on top of my salads. My boyfriend makes fun of me cuz i don’t like my salads cold, so I’ll but stew/chili/stirfry…you name it!! SO much better yeah? I love leeks…so this stir fry would totally float my boat!

Ahhh i wish i were near NC or DC! Your birthday will be such a blast! I wish I could meet you in person one day!!

I love leeks…hate the cleaning process! I’m hoping I can find then pre cleaned in my parts!

My son sticks a whole fruit roll up in his mouth. Then he “tries” to laugh around it. I swear he’s gonna choke someday!!! LOL!

Ooh I love leeks! I made a delicious artichoke leek soup from Giada di Laurentiis not so long ago! Sooo good!

Almond butter filled pretzels WOULD be delicious!! I’m obsessed with the PB filled ones. I’m only allowed to buy them once or twice a year!

So I finally took a trip to TJ’s b/c of your blog! I’m in love. I always take a couple of hours to browse Whole Foods but I found out that I’m more keen on TJ’s. I’ve been curious abuot Kefir…what does it taste like?!?!?!?!

Yes I love the texture the flaxseeds give to that almond butter! I’ve seen the p.b and a.b at TJ’s that now have flaxseeds but I haven’t bought it because I have way too many jars of pb and ab to justify it! I think the only thing I’ve made with leeks was in a barley soup and it was good! Your dish looks yummy-I remember seeing pics of your amazing spreads over the holidays and oh my goodness, your dad’s food looks so delcious!

Such pretty platters! Loving that white dish. I pretty much already know what my dishware is going to be when I actually have a house for it – classic white! Definitely planning on picking up leeks this weekend! Love them but haven’t had them in a while. And biscotti….mmmmm!

i am not to sure how cottage cheese and oats taste combined but maybe maybe one day I will try it. Does it compare to yogurt & oat combination because I am not a big fan of that…

I’ve really been enjoying dried pineapple lately too — such a versatile snack. I haven’t cooked with leeks, but your leek dish looks fabulous. It actually made me seriously crave some tofu. And I haven’t had kumquats in forreeevvveerrr. I need some. *le sigh*
