Let The Fridge Cleaning Begin

I fixed Ecto!!! Whew! What a headache that was. Thanks to Miss Kelsey for the help.

Yesterday, April McGregor, the owner of Farmer’s Daughter (a local farm-driven artisan food business), came in to my Culinary Cultures class to do a biscuit-making demonstration. She talked about her experiences growing up in a small town in Mississippi as well as her pursuit of a career in food, despite getting a graduate degree in Geology.

There seems to be a common theme here. I keep meeting women who have pursued their passion–first my professor, then the Pie lady, then the bakery owner, and now April. I think it’s a sign :) .

I’ll show you the biscuits she baked in just a few photos but first, breakfast:

Strawberries ‘n’ Cream (Greek yogurt)

Necessary cup o’ joe because I got up suuuuuper early to try and fix my blog problems.

I kept it light knowing we would be eating in class.

Two people brought in food for the class:

1. Sweet Pancake

This had peanuts inside so i did not have any (allergic).

April brought in some of her preserves–on the left is a pear preserve and on the right is sorghum. I also had a dip of some chocolate gravy (which tastes like hot chocolate sauce)!

After class, I went to the gym to work off some steam/frustration. It worked like a charm! I got there totally flustered and came out calm and composed. Exercise is a wonderful thing.

Work Out:

  • 3 mile treadmill run–it felt great but I had slight shin pain by the end
  • 35 min. elliptical
  • 30 min. full body strength training and ab work

I ate this Chocolate Heart Thrive between cardio and strength training to get some sugar in my blood stream.

Pre-shower snack: my muscles needed some fuel and fast!

Spring break is in ONE week and I am now realizing that I have A LOTTA food to eat up!! Let the fridge cleaning begin.

I’ve got to finish off:

  • Greek yogurt (no worries)
  • Kefir (definitely no worries)
  • Cottage Cheese
  • Broccoli Slaw
  • Eggs
  • Strawberries
  • Pears
  • Artichokes
  • Almond Milk
  • Kumquats
  • Tofu

Got any ideas for meals/snax using these ingredients?

I took a stab at my list for dinner:

Salad w/ eggplant, artichokes, broccoli slaw, cucumbers, and tzatziki sauce dressing.

Plantain chips and dried pineapples with Naturally More Almond Butter:

I ended the night by watching the Olympics (Apolo!) and heading to bed early (12:30 AM haha). I had an early wake up call to go to the bakery!

I think a broccoli slaw – tofu stir fry might be just the ticket. You can always add in artichoke hearts depending on how many you’re trying to use up.

I watched Apolo’s race too. It was a bummer! I felt bad for him :( Better luck tonight, hopefully!

I love the way your egg whites look on top of the EEM! HA!

The biscuits look like they would melt in your mouth. What is sourghum?

Looks like you’ve got the makings for some kind of baking treat. Fruit, almond milk, cottage cheese, eggs….hmmm….

Hooray for fridge clean ups, I love them!! I think you can make the best combos when just loads of random stuff is combined :)
I’d love to hear more about how people with the wrong degree moved into food – it’d be so useful!

I’ve had tofu and ketchup, and I agree with you on how tasty it is! I’m so jealous of that class…I wish NYU offered something like it. It sounds amazing! Enjoy the rest of your weekend :)

It is so encouraging to hear people who follow their passions. I bet those thin biscottis would be amazing with nutella smeared on…and then sandwiched with ice cream in the middle! haha Maybe make some portable snacks by making a fruit salad and top with greek yogurt and/or cottage cheese? Those Heart Thrives are such a great snack after working out and before-they really stay with you! I’m going to be looking for them around here. Glad to hear the blog is all better!

Mmm your class’s goodies look so good!

I had “custard oats” for bfast this morning and they were the bomb dot com! That would be a great way to use your eggs + almond milk! (I’ll be posting my eats later tonight)

Hmm…what to do with your leftovers….I think a nice fruit salad for starters. Do you have any hummus to mix in with that broccoli slaw? Saw that on another blog today:)

you could substitute almond milk instead of regular milk.

Also how about an asian salad with the broccoli slaw, tofu, and kumquats? you could marinate the tofu in a sesame ginger dresing…mmmmm!

Hmmm, nice cleaning fridge food combos. :) I will have to try the tofu with ketchup. Did you cook the tofu at all? Tempeh with ketchup is good!

And as for the fridge cleaning, how about you start whipping up some strawberry+almond milk smoothies???

Ugh, so jealous, our spring break is still 2 weeks away..I WILL survive!

I did a refrigerator assessment yesterday too haha. I wanted to pick up sushi but had SO much food that is going to go bad before break if I dont eat it. Suggestion: big mess of salads/ omelets. Yo can throw in anything and it will be good! AH one week! I can’t wait to go home!!

My suggestion was going to be to stir fry the tofu and the broccoli slaw! Looks like you ate it though :)

You should try some almond milk/tofu/fruit and/or greek yog smoothie!!! I’ve always wanted to and they seem to come out super thick yet creamy :)

Your food is GORGEOUS! Ps! Just gorgeous. I need english muffins, strawberries and heart thrives in my life. Right now!

(Good thing I just bought the apricot flav to try sometime this week!!)
