Olympic Dreams Are Made Of This

Who am I to disagree?

Nothing too crazy happened yesterday, besides meeting so many readers who came outta the closet to say hi!! To all of you who think your comments might get lost in a sea of comments….I definitely read each of yours at least twice and I’m in the process of responding. Y’all are so funny!!

Anyone else miss watching the Olympics every night? I miss looking forward to 8pm knowing there’s something exciting on TV.

Speaking of the Olympics, I thought I’d share with you a funny story (although not so funny at the time):

My senior year of high school, I was SO inspired by the figure skaters at the Torino Olympics that I decided I would take ice skating lessons again. When I was a wee 5 year old, I took lessons and rocked the ice! We had to skate little hearts that the instructor drew on the ice with a permanent marker and I always zoomed through them. Somewhere along the way I stopped taking lessons and regretted it for years (My Momma and I have different explanations for how that happened). The point is that as an 18 year old, I thought I would be able to pick it back up. Umm not so much.

One weekend I convinced my mom to go practice with me at the rink. While she was skating ahead of me, I called out to her and when she turned around, she fell and broke her ankle! I felt terrible! I even started crying that night because it was ALL my fault.

I wasn’t enjoying skating as much as I anticipated either so I ended up quitting lessons and that was the end of my figure skating dreams. Some things are just not meant to be. Good thing I can still dance around in front of the TV (yes, like a 5 year old) and pretend I’m skating.

(Lesson: Get your calcium ladies!! My Momma ran 5 miles a day–a bone-building exercise–yet still managed to break her ankle!)

What was your dream Olympic sport growing up ? I wanted to be an Olympic gymnast for as long as I can remember. I actually did gymnastics for many years and was even on my high school team. Despite my undying love for the sport and lifelong plan to go to the Olympics at the ages of 16 AND 20, I simply wasn’t born a gymnast and lacked the raw talent (yes, I wanted to be a two-time Olympian…once wasn’t enough). At least I still have the flexibility leftover! Sadly, not the abdominal muscles.

Story time over. Onto the food….

First up: Breakfast.

I was craving some cereal and milk so I took a break from yogurt + kefir to have almond milk and Kashi Cereal w/ pears and strawberries.

I felt so rushed eating this bowl! I hate that you can’t take your time eating cereal + milk –> soggy!

I also had a NEW combo. Fridge cleaning brings out the best combinations, I swear.

Carrots + Coconut icing (coconut butter+Greek yogurt) on top of a sandwich round. I microwaved the carrots for 30 sec. to soften them and because I’m allergic to raw carrots.

With half caf coffee (more like 1/4 caf but that doesn’t rhyme).

I was a hungry hippo in the afternoon so I kept feeding myself snacks.

Another delightful combo: Ezekiel English Muffin w/ cottage cheese and pumpkin butter.

I have a tub of cottage cheese that needs to be finished before Friday so my apologies for the cottage cheese splattered on everything!

You know how much I hate wasting food.

After class, I ventured to the gym for 45 min. on the elliptical and 25 min. of leg weights.

I split my upper body and lower body between two days and I must say I ended up doing more exercises/sets for each muscle group since I had more time and energy to devote to each half of the body. Good stuff.

I came home (WOAH not home) back to the apartment and souped up my dining hall salad with 2 egg whites and cottage cheese (I warned ya!).

I also had a whole carton of eggs that I had to finish this week. Hence the egg overload!!

I left my carbs for dessert.

I ate the other half of the Rosie’s Granola Bar along with more chocolate and a Chocolate Heart Thrive.

Aaah I’m right there with you – I HATE food wastage!! I make a point of never wasting food – if it’s starting to go off, I cook the life out of it and you wouldn’t know the difference :P
I used to dream of figure skating, gymnastics (they’re both such beautiful sports to watch! The bendiness is incredible) and dressage at the Olympics! [The latter is still my closet dream...sshhh!]
Love the ‘carrot cake’ – I’d never thought of carrots for breakfast,,,,

I too dreamed of being an olympic figure skater…many times. 16 years ago when I was 6 (so let’s see, the 1994 Olympics, I guess) I started taking the learn to skate lessons. Even now just watching the Olympics makes me want to go sign up for ice skating lessons! Not a bad idea, actually.

My mom was a figure skater. She was coached by Carlo Fassi (who also coached Dorthy Hamill, 1976 gold medalist), skated in CO Springs and Lake Placid, roomed with some of the great skaters. While she didn’t ever do anything on the national stage, I think that’s pretty cool! I keep encouraging her to get involved this many years later–maybe judge some of the kiddies.

The one thing I hold against the Olympics, both summer and winter, is that they allow too young of kids. I don’t think a 15 year old (such as Tara Lipinski) ought to win a gold medal. I wouldn’t have any problem making the age 20.

I lurve eating cottage cheese on salads – with a little bit of balsamic vinegar. Yum. I’m actually drooling. :)

And somehow I still hope to make it to the olympics one day…the whole being beyond amazing at an event is the *only* thing holding me back! lol

I definitely used to want to be an Olympic gymnast, especially since there were people at my gymnastics gym growing up who were pretty hard core. Justin Spring from this last summer games came from my gym, so it could have happened (if only I had the talent…alas)!! haha. Then I met Dominique Dawes last year when she came to Virginia Tech, and my dreams started all over again! Psha, totally still possible! She was like 24 when she went to her 3rd Olympics – we definitely still have time! :)

Too funny about the ice skating thing. I once asked my mom to make my bed for me because I didn’t feel like it and she did, but in the process of moving my bed, she feel and broke her wrist. I felt TERRIBLE!!!!

Love cottage cheese and pumpkin butter. Such a fantastic combo!

I’m a summer Olympics junkie…it’s much more exciting to me! I always thought it would be fun to be a gymnast but my cartwheels aren’t even in proper form and I am terrified to do a handstand.

Now I just want to be Kara Goucher. Who doesn’t?

I only watched ice hockey, go Finland!! :) and followed the other results from newspapers. I would have wanted to watch figure skating too, but I was never home at the time / was asleep (time difference!), well luckily they showed reruns, although they are not as exciting as watching them live.

Your little Olympic stories are too cute (except for your mom getting hurt-so sad!!). The handfuls of chocolate and Rosie bar are my picks for favorite foods you ate. :) I too hate wasting food!

I wanted to be a two (or three) time Olympian as well! I wanted to be a downhill skier with I was young. I enjoy skiing but don’t have the Olympic skills :)

I used to want to go to the Olympics for soccer!! I played my whole life but just kinda lost the desire after high school! I did pick it back up last year and played on a co-ed team! So fun! Crazy how your dreams change as you get older!

I wanted to be an Olympic gymnast too. My sister and I were obsessed. She went farther in the sport than I did. I got too tall (I’m 5′11″). I’m just not built for gymnastics. Oh well. Yoga suffices for now. It’s some of the same types of stuff. Anyway, I didn’t “come out” yesterday, but I definitely read your blog :) Love your positive attitude!

I always wanted to be an ice skater, even though I barely have skated. When Tara Lipinski won I swear I saw it as like a personal victory. I even cut her picture out of the newspaper, “laminated it” w/ tape and hung it in my room!

The pics, as usual, are beautiful! I’m always envious of the bright colors your photos have. hehe Now when I look at my food it all looks brown and drab.

ohhh so jealous of your gymnast skillz! i was in competitive cheerleading and all i wanted to be able to do was a back tuck and i never got one. did you do those?! or fulls/layouts/all of that crazy stuff?! i was a good back handspringer but could not progress beyond :)

PS: keep stretching to keep your flexibility! i still had leftover flexibility from my cheerleading days when i was in college (was good @ yoga, could still do splits, etc) but now i am BROKEN and brittle and i blame a) running b) not stretching enough. don’t be like me!

Oh my, the handful of chocolate looks delicious :) The soggy factor is just about the only thing I don’t like about cereal…luckily, I’m a fast eater, so I don’t encounter that problem too often! I totally wanted to be Tara Lipinski as a kid, but quit when my coach told me I’d have to start making it to 5 am practices. So much for commitment! Have a great night :)

awesome coconut icing idea!! :) and its in the shape of an “N” yay love it even more!

cleaning out the fridge is the best idea sometimes,look what you made!! I always wanted to do the balance beam I still do , I think its amazing what those gymnasts can do on that beam!

I kinda always wanted to be an Olympic swimmer…one can dream, right?
Thanks for reminding me to use my coconut butter–it’s been lurking in the cabinet for far too long!
I just got some of those Heart Thrive bars at Quenchers (Raisin and Apricot, I think). What’s your favorite flavor?

You may be cleaning out the fridge – but honestly – when do your eats NOT look totally killer? I don’t think I’ve seen the day yet :)
Definitely need to try coconut butter & greek yogurt. I thought about it this morning, but then changed the thought because I was afraid the coconut butter would get too hard.
I used to dream of being an olympic equestrian :P I grew up horseback riding! Stopped a year or so ago, but am going to pick it back up.

I took ice skating lessons AND gymnastics lessons, too, and I definitely can’t do either. After I saw the 1996 Summer Olympics, I desperately wanted to be an Olympian. Oh well, guess I’ll have to settle for normal girl instead :)

I’ve GOT to try that “frosting” of coconut butter and yogurt :O

I had a tub of cottage cheese I needed to finish last week… it was obscene how much dairy I consumed in 3 days.

YUM YUM YUM rosie’s bars!! I’m savoring every bite of mine :)

Ice skating and I never mixed. I went a few years ago, and there is a picture of me with the WEAKEST ankles. Looks like they are about to cave in.

so sad that your mom broke her ankle and you thought it was your fault! glad you can laugh about it now though :) . can i just tell you that you have mad plating skills? seriously, your pics are BEAUTIFUL! i was a gymnast for many years too, but sadly my flexibility nowadays is no evidence of that!

Have you tried the coconut’s milk kefir? I imagine it would tasty, but way high in calories and sat. fat!
