He Lives In A Pineapple Under The Sea

I have seen SO many episodes of Sponge Bob while babysitting and now I always sing this line when I see pineapples…and when I EAT them. More on that later…

I got an urge to run when I popped out of bed yesterday. I knew I wouldn’t be able to run for very long on an empty stomach, but I figured I would play along.

It was actually a relatively nice run on the Yellow Brick Road. I ran 2 miles, walked 0.18 and called it a day because my shins were starting to hurt. I went back to our condo gym for 20 min. on the elliptical and some lower body weights while watching The View.

Despite the weather forecast for RAIN, the sun was out and about and dare I say, it was HOT outside!! What a sunny surprise.

I came back and immediately guzzled a massive green protein smoothie:

IMG_4434.JPG

  • 1/2 packet of Greens+ Superfood
  • 1 cup frozen spinach
  • 1/2 banana
  • 1/2 cup almond milk
  • Stevia
  • H2O

I use frozen spinach in my smoothies because it is cheaper than fresh spinach and I don’t feel pressured to use it up before it goes bad. It also serves as the ‘ice.’

Lunch:

TJ’s Euro yogurt with apples and a crumbled granola bar.

A leftover Oat Flour Crepe:

Granola Bar Crumbles

The first time I made the granola bars, they actually formed bars quite nicely. I tried making them again and they just would NOT stay in the form of a bar!! I made them a third time last night and changed up the ingredients slightly. They only sort of stuck together even after I put them under a jug of water overnight. Hmmm…

I’m still working on the recipe…in the mean time, it makes for a nice granola!

I ate about 1 cup of these granola bar crumbles, if not more. These are actually quite calorie dense, but they fill me up well.

Oprah re-aired the Food 101 episode with Michael Pollan so I went down for a walk on the treadmill while watching it.

Somehow, I still managed to sweat. I’m a big sweater. I sweat even when I walk to class! I usually remember NOT to wear grey t-shirts to the gym for this very reason…

Post workout snax: Apple + almond butter, more granola, and almond cheese while making….

Shrimp ‘n’ Pineapple Pizza!

He lives in a pineapple under the sea….

IMG_4455.JPG IMG_4456.JPG

I had leftover canned pineapple Sponge Bob’s Home in the fridge from the birthday carrot cake I made.

IMG_4457.JPG

TJ’s Whole Wheat Pizza Dough topped with TJ’s pizza sauce, cheese, pineapple chunks, and shrimpies (from the sea!!):

IMG_4459.JPG

….and then topped with even more cheese.

The corner piece was made with almond cheese. I wanted to test out it’s pizza making skillz.

IMG_4462.JPG

Baked at 400 F for 15 minutes. I was sort of bummed out about the burnt cheesy edge until my dad reminded me that it was the best part :) .

IMG_4467.JPG

My dad also cooked up a simple sweet corn, celery, and fish cake dish.

IMG_4471.JPG

IMG_4473.JPG

I had some on a bed of spring mix with 2 slices of shrimp ‘n’ pineapple pizza:

IMG_4481.JPG

Almond cheese and Kraft cheese: The almond cheese didn’t melt quite as gooeily (word? yeah?) but it was equally as tasty in my opinion. The almond cheese melts in the microwave so I’m not sure why it doesn’t in the oven.

IMG_4488.JPG

I had seconds of the sweet corn dish after I finished this salad:

Dessert:

Chocolate eggs, ~1 oz. unpictured dark chocolate, and biscotti + almond butter x2.

I actually did a wee little bit of work last night…I’d say about 30 minutes worth? At least I made a dent, right?

Does frozen spinach work as well in green monsters? I asked Angela about it once and she advised me against it, but if it works for you I’ll give it a shot!

I bought some of that cheese at WF yesterday, and I can’t wait to try it! I’m thinking of making a humnut pizza for my parents tonight, so I’ll have to add the cheese!

Speaking of grey tshirts-check out the moisture wicking workout tshirts at Target for $9.99. I bought two v-neck ones (one in blck one in grey) and they are amazing! So comfy and totally wick moisture but don’t stay heavy on your shirt, you know? And I definitely sweat! Pizza looks so yummy-we’re doing “make your own” pizzas with my family tonight. :) Oh and your dad needs to do a guest post-where did he learn to cook?!

Ooh, that pizza looks yummy! I’d like to give that almond cheese a try!

I don’t wear gray when I workout either, for that same reason :-)

There’s something perfect about pineapple on pizza!

We had pizza last night and it had pineapple on it too. And LOTS of hot peppers. I love the sweet with the hot.
I’m also a sweater and never wear grey because of it. I bought grey yoga pants and ran in them once – BIG mistake! I looked like I’d wet myself – sooo embaressing.

Yummm.. that pizza looks fabulous!!!!! I love pineapple in/on savory things.
And girl… I sweat like that too. When I run in the summers, even in the mornings, I am absolutely drenched in sweat by the end..like literally dripping off of me. Tis gross. I’m sure you didn’t want that mental picture..ha

totally understand that sweating thing. I have no idea how girls go to the gym and don’t sweat!!! It amazes me. I walk out looking narsty pretty much EVERY time I workout. I kinda like it though, makes me feel like I’ve worked hard.
