The Fastest Week Ever

…at least by an hour!

Just the thought of heading back to school tomorrow is already making my head spin. Why oh why does that place make me go c-c-crazy? Not to mention it’s coming an hour sooner since Daylight Savings Time is tomorrow. As if my sleep cycle isn’t skewed enough…now I’ll be waking up at 11 AM?

I’ve gotta catch you up on yesterday and then it’s work work work….and a movie (Law Abiding Citizens–has anyone seen it!? Good? Bad? So-so?). I was just going to skip over yesterday but then I found all these photos on my camera that just couldn’t go unviewed….

Pre-Duke Basketball Game Brunch:

I made some overnight oats by soaking 1/3 cup of oats in almond milk (in the fridgerrr) for ~10 hours. The next morning, I added 1/2 cup of precious pumpkin. This was the very last can I’ve been able to get my hands. I think I’m going to freeze the rest of this pumpkin so I can make my favorite granola later.

I added 1/2 a nuked apple and 1/2 a crumbled granola bar:

I used a teensy too much almond milk so it was more like overnight oats SOUP!

Dangeroussssss!! Before the gym I ate 1 1/2 of these. I’m getting closer to making them stick!

I ellitipcalled while watching my Blue Devils beat UVA in the quarterfinals of the ACC Championship. I did 10 min. of ab work during half time. Okay, more like 3 min. of ab work and 7 min. of wiping my sweat but who’s counting, right?

The combo worked so beautifully together. It reminded me of Lunchables but with apples instead of ham. I LOVED Lunchables as a child and I would always get super giddy when I occasionally got to bring ‘em to school. I think it was the candy bar that won me over. Anyone else!?!

Yogurt w/ Kashi Puffs, Cranberries + Pecans (we haven’t seen this combo here in awhile, huh??)

Birthday blogger meet up at Sunflower Vegetarian Restaurant:

From left to right: Yours truly, Maya, Ileana, and Stephanie. My bestie came along too and took this photo for us. She wasn’t sure if she would be able to see me again before I went back to school so she accompanied me to Sunflower…yet again. Awwwww!

I ordered the Macrobiotic Tofu: Organic soft tofu, lily flower, wakame, carrots, burdock, Chinese wolfberry, goji berries and broccoli in light ginger sauce. Served with brown rice.

I couldn’t decide on what to order and finally just picked something at the verrrry last second!! Too many choices. It was good, but I probably wouldn’t get it again.

I sent each of them off with some granola bars to taste test!

Of course, I had a brownie cupcake with Sugar Cookie Sleigh Ride Tea aaaaaand 1/2 a granola bar aaaand a few chocolate eggs to end the night.

See what I mean? It was completely necessary for me to put off work just to show you these photos. Completely.

Now if you’ll excuse me, I’m gonna go stress out about school :( .

haha i used to love the nacho lunchables!! and the pizza ones!

love all the chocolaty goodness in this post. i have the hershey’s cookies ‘n cream eggs in my common room and i keep sneaking them by the handful lol.

Ah man, I am so jealous that you got to bring Lunchables–they were strictly forbidden in my house. I always thought the pizza ones were SO cool.

LOVED lunchables. Except the only one available to little vegetarian Maya was the pizza one. I hate cold pizza, yet the lunchables cold tomato sauce cracker pizzas are so appealing to little kids. Maybe it is the candy bar!

I love your granola bars! And like I said, I don’t usually like chewy granola bars, but yours have awesome flavor. Can’t wait for the final recipe!

Great day of eats :) Those granola bars look so so good. I much prefer the homemade version to anything you can buy in the store. Fun blogger meet up too- the food there looks incredible. I am so happy more vegetarian/vegan friendly restaurants are opening up. Good luck with all the work

I kid you not, I was just thinking about how much I loved lunchables as I kid! I so wish they weren’t so highly processed because I believe that I would have no problem diving into one right now! Oh so good back when I was a child!

Oh girl, I’m sorry you’re stressing about heading back to school, you know that I can relate! But just think, once spring break is over, the semester flies! (that’s what I tell myself anyways)…so we will be done before we know it!

I love homemade granola bars. SO much tastier. I’m not sure if you use honey in yours, but when I make mine, I need at least (1/2 cup of honey + 1/3 cup of brown sugar) for every (2 cup of oats + 2 cup of additional nuts or seeds) added, so that they don’t stick …

I thought of you today while I was at the gym and saw DUKE mentionings on ESPN.

So jealous of all these blogger meet up you keep getting to have! I have yet to have a meet up and cannot wait for one to actually happen sometimes hopefully soon!

Haha Allie I would so be with you with those granola bars! It would be competition with cookie monster for sure :) Those brownie cupcakes look yummy! Just remember, you have WEEKS left, not years, not really even months, WEEKS! Almost finished!!!
