By the time you read this post, I will be on my way back to school. Joy. As many of you reminded me yesterday, I am oh so close to being done–forever!! Graduation is exactly 2 months from tomorrow and I know the time will fly by.
Now let’s cherish my last day at home together. Peter’s Kitchen is what my family refers to as my daddy’s cooking. I would much rather eat at Peter’s Kitchen than at a restaurant ANY day. You will see why by the end of this post.

Yesterday. There wasn’t much breakfast-y food in the house. All I had on my mind was a Cinnaraisin Ezekiel English Muffin w/ almond butter…or any form of bread for that matter. But there was none to be found so I started off with a grapefruit:

It didn’t look delicious at first glance (i.e. not super red), but boy was it a sweetie! I tried cutting it the way Kath demonstrated to get little wedges of flesh, but I don’t think I did it correctly.

Oh well. I like eating grapefruit innards anyways. More fiberrific, right?

*Note: I tried slicing them again this morning and it worked!

Finally, I decided I would make some Cranberry Scones using the box mix that Krista sent me. I knew my parents would be waking up any minute wanting something scrumptious for brunch.

Following the directions, I added 3 TBSP of canola oil and 1/2 cup of milk. We only had almond milk in the ‘fridgerator and it worked perfectly.

Rolled into a mound and cut into 6 triangles. Scones are more fun to eat in the shape of triangles. ‘Nuff said.

It only took ~15 min. in the toaster oven!!

Wow–I did not expect such great tasting scones from a box!! My parents loved ‘em…and so did I! They were fluffy, soft, and buttery (there was only oil…but oily sounds weird).

I had 1 1/2 along with s’more coffee.

I hit up the gym for the ACC Basketball Championship Game versus Georgia Tech, which we won! I did some leg weights during halftime. I went back upstairs to stretch while watching the end of the game….it got scarily close at the end and my Momma and I were definitely yelling at the TV! Whew!
I got hungry while watching the award ceremony, so I snacked on a piece of bread (that my dad had just bought), almond butter, and banana.

I FOUND an egg!! I finished the bag, but there were a couple left on the living room table

My bestie came over and we went downstairs for some Iceberry Tart Frozen Yogurt. I used to be so addicted to this and actually crave it constantly. I introduced it to my bestie and at first she hated it and said it tasted like sour cream. Well, now she loves it and is always wanting to get some together.
Since purchasing the TJ’s Tart Froyo, I haven’t really gone out for it at all. I figure 1 medium size from a shop can buy an entire half gallon and more at TJ’s! Although I will say they don’t taste exactly the same.
I got an original and honey dew swirl. AND then went back home to use my OWN TOPPINGS! I’m such a cheapo

Bananas, dried cranberries, pecans, and coconut.

I was burning through everything I ate and was hungry shortly after….so Peter started cooking dinner!
Seafood Salad:

My dad wanted to recreate a dish he ate a lot of in Egypt. He tossed together:
- celery
- tomatoes
- red onions
- corn
- shrimp
- grilled calamari rings
- olive oil
- vinegar
- S+P

I had a monstrous bowl of this to hold me over while he finished cooking dinner.


Peter’s Kitchen was also serving salmon filets w/ leek and tomatoes. I mentioned a couple weeks ago that leeks remind me of my dad’s cooking–see why?

The rest of the fam had some pork chops too. My dad got fancy schmancy with his plating by adding some random garnish…for the BLOG!

My plate: EVERYTHING on top of some romaine and avocado.


And some brown rice for grains!


I hope you enjoyed your meal at Peter’s Kitchen! No restaurant could ever beat this in my book!
I ended the night with a granola bar and a few squares of dark chocolate while reluctantly packing.

2 more months until the end of school! That is nothing, trust me and it will fly by! Especially since it’s the end and all of the due dates will creep up in no time (which isn’t usually good news but in this case, it is!!)
Your dad should totally start a restaurant called Peter’s Kitchen! I’d definitely have dinner there.

Peter’s Kitchen sounds fab, I agree! It’s awesome that your dad is such a good cook, my dad doesn’t make anything that doesn’t involve a grill! The salmon looks especially delish.

My goodness your dad looks like an amazing cook!! When I was younger, a treat from my dad’s kitchen cookery skills was fish fingers with burnt/still slightly frozen oven chips, and gateau for dessert. (From a pack no less, he didn’t make it!). If only he could’ve cooked like yourdad!!! Hope school isn’t too bad :s

Oh, I’ve totally gotten fro yo and then came home and added my own toppings! I usually do it with my mama when we get some at this self-serve place by our house, but then once home i’ll add crushed graham crackers or newman’s own oreo cookies to the mix!! Mmm, delish.
