Drained!

I’m beat. I can barely get my mind and my fingers to work together to type up this post. I thought about skipping today because creativity and variety have taken a backseat during this busy week. However, there’s something about unloading my thoughts here that helps clear my mind and calm me down. So here goes….

I tried to keep things interesting today but my exam was the #1 priority. I woke up and studied non-stop (minus some tweeting and blog reading). Knowing that I like to eat while I study, I kept the first round on the light side.

Strawberry Short-millet-cake: Millet bread with Greek yogurt, strawberries and flax seeds.

Since I think millet bread has a pound cake texture, this worked quite well as a ’shortcake.’

Shortly after cracking open my books/notes, I pulled out a snack. Can you even spot it amongst all my notes?

Why it’s a granola bar! I actually secretly gave into the baking urge last night :) . I’m still in the process of perfecting this recipe. This batch was too dry/crunchy. It tasted great–just not perfect!

I suddenly got a massive migraine so I took my notes outside and walked ‘n’ studied for 1 hour in the sunshine. I walked a leisurely 2.5 miles.

Afterwards, I had the laaaaast 1/2 slice of millet bread with coconut butter and raw chocolate spread along with a bowl of Greek yogurt, apples, and Kashi Puffs.

It’s official, I went through a loaf of millet bread in less than a week.

Don’t worry–I restocked last night at Whole Foods :) . I also stocked up on some random stuff:

  • 1 artichoke (on sale)
  • 2 organic avocados (on sale!)
  • Organic Valley drinkable yogurt (on sale+ $1 off coupon! Is it like kefir?? We’ll have to see!!)
  • Organic Rolled Oats
  • Amazing Grass Wheat Grass
  • Alive! Shake
  • Millet Bread!

Then the exam ripped my noggin’ to shreds. I guess it didn’t help that I studied for 4 hours beforehand. My brain was tired. The exam was pretty difficult and tricky. Grrr.

After the exam, I went to the gym hoping to work off some steam. I ellipticalled for 60 min. and then did about 10 min. of jumping jacks and ab work. I missed the bus on the way back so I walked back to my apartment (takes about the same amount of time). I was POOPED!

For dinner, I had to think outside of the box to make something QUICK!

I whipped together an Egg Salad Sandwich:

  • 1 whole egg, 1 egg white (hardboiled)
  • 2 T Greek Yogurt (!!!!)
  • 1 tsp spicy mustard
  • black pepper

SO EASY!!!!!

The Greek yogurt worked perfectly as a mayonnaise substitute.

I ate so many egg salad sandwiches when I studied in London but I don’t think I’ve had one since!! It is one of my favorites.

Alive! GREEN Shake

  • 1/2 packet Alive! Vanilla
  • 1/2 banana
  • 1/2 cup almond milk
  • 1 cup spinach

I had to whip this up fast because a) I was hungry and b) I had to beat the sunset!! I made it JUST in time :) .

I’ve already dug into 1/2 a granola bar and a slice of millet bread with coconut butter and raw chocolate spread for dessert.

Believe it or not I’ve got a ton of work to do tonight. I better get on it!!

AH! I feel you! I have the worst case of senioritis. I started a midterm paper dues at 11am at 12am the night before WHOOPS. It’s also really hard for me to focus on school right now because I am ready to be done! Good eats definitely help! I’ve got to try that millet bread!

granola bars are fun to make and eat, but hard to perfect! I don’t think I’ve ever made one I’ve been completely satisfied with.

I bet you did better than you thought on that brain ripping exam! I love how you exercise/study.. that helps me focus so much. Fo’ real I think I get some of my best studying accomplished when I am on the elliptical. No distractions then (aka blogs, website, facebook).

Awesome workout and cannot wait to see what you do with that artichoke!

Whew – sorry you’ve had such a crazy day, and more work tonight. Just remember – the end is in sight!!
I lovee using greek yog as mayonnaise replacement, too. Works a charm!

I think these words could have come straight out of my mouth. Our lives seem so similar, no? You beat me though…when my variety and creativity are lacking, I don’t post : ( I think your eats look great, especially your strawberry shortcake… and what a genius idea to make egg salad with Greek! I hope you have fun in your Culinary Cultures class tomorrow and relax a little this weekend : )

My kids LOVE drinkable yogurt! I don’t think it’s like kefir, though…

Question for ya…..when making coffee using your French press, how do you prevent any coffee grounds from making their way into the cup??? Thanks, hun!!

I got the same yogurt from WF. It’s pretty good!! I kinda find it’s somewhere between kefir and regular yogurt.

Allie- Amanda and I are studying together right now and she brought me the delicious granola bars that you made. THANK YOU SO MUCH!!! I just ate one and savored every single bite. Looking forward to our walk tomorrow!!!

Aw man, sorry to hear that school is being so…sucky. At least you’ve had some amazing eats! I must try this millet bread ASAP, now that you mention its poundcake-like texture. Can’t wait to hear what you think of that drinkable yogurt!
