I’m Cool Like That

I’m happy to report that baking was a success last night…..work on the other hand umm not so much. Oopsies. I got antsy about 3/4ths of the way through my paper and headed straight for the oven. Don’t worry, I woke up a little earlier this morning and finished it up just in time for class.

This kind of behavior would have never passed 3 years ago. However, one thing I’ve learned throughout the years is how to determine what really matters and what really doesn’t. Some assignments are just not worth fretting over. Usually when I worry about an assignment, I don’t get much completed anyways so I figure I might as well just wait ’til the last minute and let the pressure motivate me. Three cheers for Senioritis!

Last night, I baked a loaf of Avocado Banana Bread for my dietician. Not being able to cut into this loaf and actually taste it was killing me. Was it undercooked? Overcooked? I don’t know!!

(I finally went out and bought a loaf pan :) )

I also baked 2 1/2 batches of AllieBars. 2 for a reader and 1/2 for moi!

Of course, it made an appearance at breakfast this morning:

Along with some Greek yogurt, millet bread cubes and pineapple chunks.

I kept breakfast light thinking we would eat in my Culinary Cultures Class but we didn’t! I brought in my Magic Bullet to make Green Smoothies for the whole class so I had about a 1/2 cup of a smoothie….mmm not enough!

My professor was so intrigued by the infomercials for the Magic Bullet that she just had to see one in action. She also pokes fun at the fact that I put spinach in my smoothies, hence the class demo. She was pleasantly surprised that the banana masked the taste of the spinach so well.

After class I was pretty hungry, so I had 1/2 an AllieBar before heading to the gym.

Workout:

  • 50 min. Elliptical
  • 10 min. StairMill (I’m gonna start calling this the SWEATMILL!)
  • 20 min. leg weights, squats, lunges, etc.

I ended with some foam rolling. While I have a foam roller in my room, I rarely use it in my apartment. It just doesn’t feel right if I’m not in my gym clothes for some reason. Our gym got 2 new foam rollers (the old one was gross–it was as soft as a sponge!!) so I gave my muscles a massage.

Oooooooooowie!!!! I could barely keep the curse words in my mouth when I rolled out my IT band and shins. Yikes!

Post Workout:

I came back and shoveled in the other 1/2 AllieBar before I could even jump in the shower. I was hungry!

All wanted was a Green Smoothie:

  • 1 scoop Green Superfood
  • 1/2 banana
  • 1/2 cup almond milk
  • 1/2 Greek yogurt (protein!)
  • 1 cup spinach

I wasn’t in the mood for a real meal (AKA anything salty) so I just kept the SNAX going and going and going….

Millet bread with cottage cheese, banana and cinnamon:

Then I had 2 3 extra large spoonfuls of Sunflower Seed Butter, a square of dark chocolate, and a cookie. Apparently dessert came at 5pm today!

I’m probably going to have a 2nd dinner later this evening that will either be a Deconstructed Omelet or an Everything-But-The-Kitchen-Sink Salad…OR the rest of the Sunflower Seed Butter jar (just kidding!).

I’ve got a lot of work to do tonight :( but I’ll be sure to catch Jamie Oliver’s Food Revolution, which is easily the highlight of my Friday nights.

Yeeeah, I’m cool like that.

Your food looks delicious! I never had cottage cheese on toast before … must try that soon. I’m seriously addicted to cottage cheese right now.

Toast with Cottage cheese is one of my favorite things ever. But I don’t think I’ve tried it with the Millet bread yet. I can only imagine it’s wonderful!

and i agree with the posts above- never thought to put cottage cheese on bread! i like the Friendship 1% fat with pineapple in it. yum!!

I would have to agree that baking > writing papers. I think you made the right decision! If I had access to an oven here at school I honestly don’t think I would get any work done.

I am obsessed with Food Revolution – tonight was a good one! I definitely need to pick up some of that Millet bread at Whole Foods soon. Your eats look good today – I love your healthy attitude towards snacking and eating exactly what you’re craving.

I’ve looked everywhere and I just can’t find any darn millet bread!! I’m dying!!

I love that you call it the sweat mill it really is I think the hardest thing in the gym and the machine that makes you sweat the most. Ridiculous swimming pool amounts of sweat!

I love that you made green smoothies for everyone in your class. Way to spread the green smoothie loving!

You have the magic bullet!?! I have always wondered about that! Do you like it? I have been using this cheap $20 blender that produced awfully chunky, never smooth, smoothies – i know it is time for an upgrade, but i just can’t bring myself to make a big purchase like that. But the bullets are pretty affordable…
would you recommend it?
p.s. love your blog! I just came across it – one of my new favorites!

You sound exactly like me. I can’t motivate myself to do work as of late, and my mind has completely in a different place. All I can think about is what is next…and since I HOPE it is something in the food/wine industry my cooking/research etc in that realm has been greater than my school work attempts.
