Pack Rat

There is nothing I hate more than packing. Well, actually I hate unpacking more than packing. Maybe…

I am a pack rat through and through. I can’t bare to part with a-n-y-t-h-i-n-g…not even a single stinkin’ ballpoint pen!

I got this lovely trait from my daddy-o.

I remember when we were on vacation in Italy, my dad and I would save all the little shampoo, conditioner, and lotion bottles from each of the hotels. We had very limited luggage space but we managed to haul them around Italy AND bring them all home with us. We had to hide our shenanigans from my mom because she thought we were ridiculous.

Together we are unstoppable.

(Maybe we’ll go camera shopping this weekend and haul some SLRs with us too…uh huh :) )

I woke up this morning and worked on my paper. I think I was writing at a rate of 1 word for every 10 minutes. In fact, I started typing up this blog post mid-paper. Tee hee.

I fried up an egg and served it on a whole wheat bagel with cheese to get my brain clicking. I ate immediately so I wouldn’t be tempted to go for a run.

IMG_7154.JPG

The real reason why I’ve been eating so many eggs is because I bought a carton to make Almond Butter Blondies and there was no way I was throwing away local, cage-free eggs.

I mean, come on, I can’t even throw away a ball point pen.

I cracked open this jar of Naturally Nutty CVSB and had several spoonfuls. You know those locks they have for ice cream cartons? I need one for this jar.

Then I got to packing. I ask myself this question every year…how in the world did I live with so much crap for all these months!? HOW!?

I had a Green Smoothie as I asked myself this question over and over again this afternoon….

IMG_7162.JPG

I also had some random SNAX including biscotti, dried pineapple, tofu, and another fried egg.

Oh and Crack Cookies. Except I probably had ~5 total, not 3.

This post is severely lacking in food, so I will leave you with the recipe for

Carrot Cake Macaroons

IMG_7030.JPG

It’s actually quite simple.

Ingredients:

Dry:

  • 1 1/3 cup coconut (I used 2/3 c sweetened and 2/3 c unsweetened)
  • 2 T sugar
  • 2 T flour
  • 1/2 tsp salt

Wet:

  • 2 egg whites
  • 1/2 tsp vanilla
  • 1/4 cup carrots
  • 3 T agave nectar

Directions:

1. Combine dry ingredients in a bowl and set aside

IMG_6961.JPG

2. Whisk egg whites until frothy. Add vanilla, agave and carrots. Mix well.

IMG_6962.JPG

3. Combine wet and dry ingredients. Be careful not to over-mix.

4. Form ‘batter’ into 1 in. balls and place on a cookie sheet.

5. Bake at 325* F for 18-20 minutes.

6. Enjoy.

See you at home!!!

Ugh, packing is the worst! I am not a fan of it at all either – I hated packing up for home every summer in undergrad. Those macaroons look awesome, I can’t wait to try out the recipe!

I’m the same way, I save everything “in case” I might need it later! I also take things that people would think are trash and try to reuse them so I don’t have to buy stuff (old jars, bags, envelopes). I guess it’s a combination of trying to be resourceful, creative, cheap, and hating throwing stuff out! I don’t think it’s a bad trait to have unless we end up in one of those Hoarder shows! hehe

Good luck on the last paper, packing, and heading home! :) Thanks for the carrot cake macaroon recipe! I’ve never made macaroons but I think J and I would love these!

Oh I am totally the same – I hoard stuff like there’s no tomorrow (hello, 2 yr old magazines….), and I always pack everything, accumulate loads of junk…it’s ridiculous! I believe it’s an illness though :)
Have fun, I bet you’re exctied to be going home!!

I tend to hoard stuff at school, and then chuck it all when I travel home…I hate clutter! I definitely amassed way more stuff than I thought this year though!

Have a safe trip home!!

Safe travels home! Packing is definitely hard but gets easier the more you do it, especially when you end up moving into a tiny space that gets easily cluttered.

Argh! I’m dreading packing! There’s one thing I’m worried about though.. where do you find boxes to pack in your stuff? I magically found boxes in my house but I can’t do that while in a dorm..

I dont think there is a human being on this earth that enjoys packing. Or unpacking for that matter. Good luck, it’s all going to be over soon! ;)

I’m in the middle of packing up too — it’s such a pain. I can’t STAND living in piles of bags and suitcases! I am the opposite of you and throw things out without much thought — probably a bad thing!

Ugh… I hate packing, even just for short trips! I always have to make a list… and I hate packing for moving, too! You always discover all this crap you have and it’s always like “why? Why all this stuff?!?!??!”

Have a safe trip! :)

Aw, love the final pic of the post :)

Perhaps, we wouldn’t be suitable roommates… I am 180 degrees from a pack-rat :) mI could do the cage-free eggs & almond buttah blondies though.

Must go finish packing myself…

Hey :)

I just want to say that I have read your blog for a few months now and I really like it!!

I also know how it feels to to not have a lot of friends at uni. I started uni this year and for the first 5 weeks or so I would sit by myself and even eat lunch in my car because I didn’t want to be seen as a loner. It wasn’t a very happy time :(
But I have made a few nice friends now and I am a lot happier. I hope going home brings you that happiness.

Agree that unpacking is definitely worse! I still have all my stuff in suitcases and strewn all over my floor… and I got home a week ago haha!

Love the look of those macaroons!

It’s amazing how much ’stuff’ you can collect in such a short time. I’ve been getting better at parting with things, but I have a hard time as well.
Macaroons look great. I love carrots.

Good luck with the packing! I don’t really mind it.. it’s the UNpacking that I hate.
I’m a pack rat too. It’s RIDICULOUS.

I had the same pack-rat issues while I was in college…It’s incredible just how many things you can fit into a small space without even knowing it!

Carrot Cake Macaroons? They look delectable.

I actually like packing haha- I think it’s fun to go through everything I have and organize. Although I’m with you on the unpacking! When I go on trips my bag usually sits there for a week befor eI unpack it

I have to pack up my things since I will be going home for summer and I am the exact same way in that I hate to give up ANYTHING. However, I did give away 2 bags of clothes yesterday, soo hard!

I have a bear…and packing issues…and paper issues too! Were we seperated at birth? I’ve been dying to try sunflower seed butter. My grocery store doesn’t have much selection :(

Ugh jealous you are done…This is motivating me to get through my political philosophy paper one of the questions was to construct a conversation using 5 philosophers, and I naturally am having them drinking wine, eating cheese and discussing liberty. I think Rousseau, Marx, Hobbes, Foucault and Constant would have loved this get together I am staging…ugh. At least I have chocolate and almond butter to fuel me. (might have had almost half a jar in…oh two days…nice.) Finals week needs to end.

CONGRATS GIRL! ENJOY!
