On My Derriere

I wish I could say this post is late because I was super busy yesterday but in actuality, I didn’t do much of anything. I hit up my favorite sites for some quality intellectual stimulation while sitting on my derriere. Does walking to Harris Teeter to buy a lotto ticket count as a workout? If so, that was it. Before you get too excited over there…no I didn’t win the $54 million jackpot. I didn’t even match a single number. Sad stuff.

Lunch (I woke up so late that this cannot even be called breakfast).

1/2 a grapefruit the size of my head (which is shrinking as we speak!)

Slice of millet bread with Cinnamon Vanilla Sunflower Seed Butter and bananas

A parfait made with Kashi puffs, ground flax seeds, cottage cheese, TJ’s European Style yogurt, cooked quinoa, and raspberries.

Dr. Kracker Seedlander flatbreads with some goat cheese.

Then I used the leftover cooked quinoa from my muffin making to whip up a cool, refreshing salad. It may be Christmas colored but it tastes just like summer!

Quinoa Tabbouleh Salad

Ingredients:

  • 2 cups cooked quinoa
  • 1/4 cup chopped cilantro
  • 2/3 cup chopped tomatoes
  • 2/3 cup chopping cucumbers
  • 1/2 cup edamame beans
  • 2 T chopped scallions
  • 2 T rice wine vinegar
  • 1 T extra virgin olive oil
  • salt + pepper

Directions:

1. Combine cooked (and cooled) quinoa and veggies in a bowl

2. Add vinegar, oil, and S+P

3. Enjoy!

Dinner on the balcony with the ‘rents. I had some salmon, green beans and the rest of the quinoa tabbouleh salad.

Then I whipped up 4 batches of AllieBars. As always, there was some quality control munching :) .

I think everyone’s posts get a little lazier in the summer. I know I’ve been posting less lately… :-) Your food looks delicious!

I wish I were home so I could binge eat your treats! Following your lead these days and ‘listening to my body.’ It’s too bad that all my body wants is…SUGAR! Ate an entire roll of Digestives last night. You must be ever so proud. ;)

I’ve been so lazy about blogging lately–maybe it’s the summer, maybe it’s the weekend, maybe it’s just general tiredness. I think it’s senioritis!

Dinner on the balcony – gosh you are so lucky! I LOVE being in high-up buildings (like hotels etc) with a view down – it’s awesome :D

I love that we had the same Naturally Nutty/millet combo yesterday…so delicious. I’ve become a bum as well since being home; for some reason, I spend less time posting/commenting then I did when I was busy with school. Hmmm, I guess it’s more of a form of procrastination than I thought :)

We’re too similar, it’s scary. I sat on my derriere all.day yesterday and made a VERY similar quinoa salad a month or two ago. Yours looks way better – love edamame.

When do you sleep at night? I’ve always noticed that your schedule is a little off… Sleep earlier! Wake up earlier! (I sound like a mother.)

I love how you said “whipped up” when baking the Alliebars. You make it sound so easy!

Your food looks delicious! That parfait in particular looks yummy. It is okay to have a low energy day now and then. I find that it recharges my battery.

I’ve been super lazy this summer too! I just tell myself that I need the relaxation after such a grueling year of school. ;)
