Sum Sum Summertime

I stayed up ’til 3 am two nights ago reading this book. Pages were aflippin.’ Tears were aflowin.’ Tissues were asoakin.’ I typically avoid crying late at night because it makes for puffy eyes but I just couldn’t peel myself away. Now I wanna see the movie!

I pulled quite a disappearing act yesterday….oops. Now that I have plenty of time to blog, I’m not nearly as disciplined about posting on a set schedule. Go figure. These days, I have no idea what the date is or which day of the week it is. I don’t even know where my planner is anymore. That says a lot coming from someone who planned her days well in advance, down to the very last second. I’m sleeping later, waking up later, and my meal times are all over the place. It sure feels like sum sum summertime!

Here are the highlights from the last two days.

I went with my dad to the grocery store and found kale for 79 cents/lb. This bushel was 81 cents!! Can you believe it?

I made a Sweet ‘n’ Tangy Kale Salad

I cooked 3/4 of the bushel in a pot with 1 in. of water, stirring for about 7 minutes. It wilted down quite a bit, though not as much as spinach.

I made a dressing of sorts to toss with the steamed kale:

  • 1 tbsp oil (1/2 EVOO 1/2 sesame oil)
  • 1 tbsp balsamic vinegar
  • 1 tbsp spicy mustard (the kind with the seeds)
  • 1 tsp agave nectar
  • a sprinkle of salt

I also added a small handful of walnuts and dried cranberries. I wolfed down the entire monster of a bowl, no probs.

Kale is mighty mighty tasty!

I played tennis with my dad for about 90 min. yesterday, which left my upper body good ‘n’ sore today. Afterwards, he whipped up a seafood, tofu, veggie soup of sorts.

This morning afternoon, I had not one but two AllieBars.

I hit up the gym for 45 min. on the elliptical and 15 min. incline-walking on the treadmill.

Post workout Green Shake:

  • 1/2 orange
  • 1 scoop wheatgrass
  • 1 scoop Green Superfoood
  • 1/2 cup almond milk
  • 1/4 scoop Alive! Shake

Dinner:

I cooked up the last of the kale the exact same way as yesterday.

Fried egg with soy sauce, just how my grandma used to make it for me. I swear soy sauce makes for a delicious egg-topper. Try it!

Cottage cheese + banana + cinnamon

I also had a scoop of Sunflower Seed Butter and ~1/4 of this melted Dark Chocolate w/ Hazelnuts bar.

I received this package from Hillary. This reusable Starbucks cup is exactly what I’ve been wanting the last couple of weeks–thanks, Hill!

While we’re on the topic of packages, I received this one from reader Debbie (who won the AllieBar giveaway) full of local treats. These goodies are long gone in my belly!! Clearly, there are some munchies that escape the camera lens.

Alrighty, it’s time for me to go whip up some AllieBars. I’ve got a new flavor in the works…get excited!

Fried Egg+ Soy Sauce sounds amazing! I’m also loving the kale, I haven’t used kale in forever and nuts and cranberries are the way to go! Sounds like you are having an amazing summer time!

I’m going to have to try kale one of these days… I mean, I buy it every week to feed my rabbit, but I’ve never tried it myself! I guess I just can’t get over the smell…

I’m going to give the egg with soy sauce a go very soon. I love soy sauce and never knew it until moving to Japan. Too bad it has so much sodium, I know they make low sodium varieties in The States, but I don’t know about here.

I’ve never tried soy sauce on an egg, but it looks/sounds good! I’m gonna need to try it now!

Also I need to borrow your daddy! hehe He always makes you the most delicious meals that are right up my alley! I love seafood but am terrified to cook it b/c I don’t really know how – my dad always cooks it for me.

Wow, I think the last time I was up past midnight was in my college years. And even then, it wasn’t very often. :)

I have been so into eggs lately. Especially farm fresh! It really pays to make friends with a girl who has chickens! :)

I bought some Kale at the market on Sunday but am SO nervous to eat it! Does it get soggy when you wilt it in water? I’ve also thought about baking it into kale chips. Oh, and I make a similar dressing. I loooovveee mustard haha.

Tennis is such a good upper body workout. I really want to play more this summer. Very intriguing about the new Allie bar flavour….can’t wait to see what it is!

I’m the same way– despite having more free time in the summer to do things like write, I seem to get even LESS done! I function much better on a schedule, lol.

Just wanted to say I really enjoy reading your blog Allie. I love soy sauce and I really love eggs over easy. We eat them at camp all the time, so I’m totally trying that ASAP.

Girll! I read the book and then the same day I finished the movie- the book wins x10,000!
& The package are sweet! Every time I go into Starbucks I’m so tempted to get that cup but refrain- It’s adorable :)
