Howdy ho! I hope you all had a great weekend. I was sort of a space cadet and didn’t photograph everything. I spent a great deal of time outside enjoying the beautiful weather though so that’s my excuse :) . Thus, I’ll just give you the highlights of the last two days. Sound good? Good.

1. We’ve been Redboxing movies left and right (for those who are unfamiliar, Redbox is a DVD vending machine that lets you rent movies for $1/night). On Friday night, we watched Dear John and then my mom wanted to watch Twilight New Moon last night, which I had already seen. Tonight we’ve got Couples Retreat lined up. I’m excited! I think Vince Vaughn is a pretty funny guy.

2. I’m now reading Dear John. I know I said I’m not a huge Nicky Sparks fan but I wasn’t too impressed with the movie and I want to find out the details they left out and/or changed up. So far so good.

3. We went to a condo-wide Memorial Day Cookout yesterday where I ate a delicious veggie burger (Morningstar), some Pop Chips (!!), watermelon, grapes, and a brownie bite. I didn’t bring my camera but I did shoot a bird’s eye view from our balcony beforehand. The other side had some more people chillaxin.’

4. Other Saturday eats:

5. Super Charge Me Cookies should be called Scarf Down Super Fast cookies. This time I made them with chia seeds, sunflower seeds, and dried cranberries. These never disappoint. My Momma and I ate half the batch last night and then finished them off this morning :) . Just looking at this photo is tempting me to whip up another batch!

6. I played tennis with my Pops for 2 hours in the scorching heat yesterday. We had some great rallies going on that left me drenched in sweat. It felt great!

7. I went to the driving range with my parents today. I hit some golf balls but I got a little frustrated at times. You know….the times when I missed the ball completely. Remember when I took golf at school last fall? Well, I haven’t hit a single golf ball since then and I was a bit rusty!

8. Duke Lacrosse is playing in the NCAA Championship Finals tomorrow. They beat Virginia 14-13 last night. ‘Twas quite a nail biter at the end. Anyone else watch it?

9. I ellipticalled for 20 min. while reading Dear John earlier tonight just to sweat a little. Afterwards I had a gigantic smoothie and then whipped up a quick dinner.

1/2 whole grain wrap with spring mix, grilled tempeh, avocado, goat cheese and yellow peppers.

Alrighty. I’m gonna try to be less of a space cadet this week. I got some fun veggies to play around with at the grocery store so stay tuned for some interesting dishes coming up.

I’ve been hearing not so great things about Dear John (the movie). That’s a little disappointing- it seems like it’d be cute. Looking forward to your interesting dishes coming up! Considering your normal meals, these must be super special! haha

All of your summer eats look fabulous, girl! I am not craving spring mix – I’v been buying spinach and plain romaine as of late. SCM cookies are amazing – they don’t last long at our house at all!

Me and my boyfriend thought Couples Retreat was hilarious, so I hope you enjoy it hahahah, we laughed the whole time. We also enjoy the RedBox DVD Rentals at least once a week, it’s amazing!

Looks like you had a nice weekend! Red bean mochi is soooooo good. Actually, red bean OR mochi in any form is good! :D

I haven’t heard good review of Dear John at all. Is the Nicholas Sparks who wrote the book the actor Nicholas Sparks?! :S

I was a little disapointed with Dear John too – it was good, but not AS good as I thought it’d be :( I want to read the book now you’ve said it though!
That tennis sounds awesome – I like getting good rallies going in badminton, it’s SO satisfying!!

Love the super charge me cookies – I made some recently as well. They are great! I used dried apricots and sultanas in mine. I just wondered what Red Bean Mochi is?

I just rented and watched Dear John last night. I agree it wasn’t that great…but I still cried my eyes out. haha Let us know how the book compares! Couples Retreat on the other hand was pretty good, makes me wanna go on vacation that much more!

GREAT eats! That mochi ice cream sounds really interesting! Love the egg & shrimpie dish, too. Looks like the weather has been fabulous in your world. Gotta LOVE summer. ;)

I’m not a big fan of Nicholas Sparks either, but I am a big fan of Red Box! I’ve never thought of adding shrimp to eggs but I’m definitely going to give it a try (maybe with a bit of Old Bay?) because yours looks delish!

I think I might read the Dear John book too. I haven’t seen the film but if it’s a book I think I’ll enjoy that more.
How great is it that you can play tennis with your dad. I wish we had tennis courts near us, I would so play all the time. It is a great workout.

Oooh yes, isn’t ice-cream mochi like crack?? I hope you eat my share in Hong Kong when you go visit!! Make sure you hit up the 7-elevens or Park’n Shops freezer isle where they have taro flavored mochi. They are my ABSOLUTE favorite!! You can also get melon flavored and other random ones, but ahhh i wish we could be there at the same time.

That birds eye view of your condo bbq surprsied me. haha it totally reminded me of the Sims computer game i used to play. hahah :P

P.s. i was totally going to rent Dear John on Red box. good thing i didn’t!

I watched New Moon last night too! Some of the awkward moments made me cringe a bit. I loved the Twlight series but I think they could have chosen a better cast. Ok, now I’m off to read all your posts from last week that I missed! Yay!

‘Dear John’ made me cry so much! Sometimes you just need a good sappy flick and this is as sappy as if gets. I’m so sure I’ve seen that red bean ice cream as my local asian foods store and now i’m so tempted to get it :) .
