Those of you who have been reading LLE for awhile may remember me telling you that once upon a time I ate oatmeal day in and day out. I associate oatmeal with a time when I was restricting to an extreme. Thus, I never really have strong urges to eat oatmeal. Granola, oh yes…cereal, definitely…but oatmeal, mmm meh.
I keep hoping our relationship will be healed in time, but that never really seems to be the case.

One particular addition to oatmeal that does keep the spark alive is egg beaters.
I almost always add egg whites or egg beaters to my oatmeal to make it supremely creamy. It also bumps up the protein quite a bit. Although egg whites is arguably more natural than egg beaters, egg beaters is 10x better in my opinion. See my recipes page for tutorials on how to add each one to your oatmeal bowl.
Egg beaters gives the bowl a hint of saltiness (just a hint), a load of creaminess, and a ton of bulk.

Despite my love for crazy combinations, I love egg beater oatmeal all on it’s own, with cinnamon and a little sweetener. However, oatmeal on it’s own doesn’t make for pleasing photographs so I added some bananas chunks, sunflower seeds and raw cacao nibs to the mix.

This afternoon I finished Something Blue, which I’ve been reading for the past week or so.

I read the prequel, Something Borrowed, a couple years ago. I didn’t particularly love the first book all that much but I enjoyed this one a lot. I was even crying on the couch this afternoon…tears of joy.
(I hear Something Borrowed is being made into a movie starring Kate Hudson!)

Dinner was a twist on a classic: burger and fries.

I baked some yucca fries and paired it with a veggie avocado burger on a whole wheat bun.
Let me break it down for ya…
The first time I tried yucca (a root veggie) was at my freshmen dining hall. Of course, it was actually deep fried then but I immediately fell in love with the French-fry like taste.
So when I spotted this yucca at the store the other day, I immediately snatched it up.

First I peeled it.

Then cut it into strips.

Boiled the strips for about 15 minutes, which was a bit too long. Next time I’ll stick to 10 minutes.

Sprayed them with olive oil and baked at 400* for about 20 min.

They taste very similar to potatoes–they’ve got the same starchy texture.

I ate the whole dang 10 oz. yucca! Or should I say yumma!! (Actually I think it’s pronounced yoo-ka but I say YUCK-AH
).
I got these hamburger buns at TJ’s the other day to go along with my recent veggie burger cravings.

I heated up a Boca Burger (I still wish I had gotten Amy’s brand!) and garnished it with some avocado, lettuce and tomato.

Thoughts on Sex And The City 2: Hilarious and cute. It’s worth seeing in theaters, in my opinion, especially if you’ve seen the series. Did you know? I watched the entire series from start to finish 2 summers ago. I was a SATC fanatic. I like Carrie a lot in the series but I must say Samantha was my favorite in this movie. Carrie was sort of getting on my nerves while Samantha was her usual hilarious self, but even better.

I’ve only bought yucca once or twice as I can only get it at one grocery store around here. I have actually never tried egg beaters, I may have to pick them up! I havent added any egg or egg like products to oats before but now I am intrigued as I love creamy oats!

There was a restaurant we used to go to that served yucca fries and they were probably not so great for you so I’m thrilled they go over well baked! I can’t wait to get my hands on some yucca and try this out!
There are certain foods that I associate with “restriction foods” like egg beaters and “Lite” bread. I use to live off of these things and now I just can’t bring myself to buy them anymore.
I like yucca but I think there are other root veggies that make such a better fry…like Kabocha, butternut, sweet potato, and parsnips. Maybe I need to give it another chance, but it just didn’t have much of a taste when I tried it.
Okay, you’ve sold me, I want to see the Sex in the City movie so bad!!!

I’ve never tried yucca (maybe I have and just didn’t know that I did… that happens way too often for me) but they look great! I’m not a fan of potatoes, though, but if yucca is a more nutritious alternative I’ll consider
I like oatmeal! I didn’t know that about egg whites, but I’m actually not a fan of using JUST egg whites in anything. There might be cholesterol and (as I used to see it) unnecessary calories and fat in the yolk, but honestly there’s just as much protein in the yolk as in the whites, and lots of vitamins too. I see everyone using just egg whites everywhere, and… well, I associate egg-white-only with my ED days, too.

I really liked both of those books. There’s a third: Baby Proof, but I haven’t read it.
Adding egg whites is such a good idea to amp up the protein in a bowl of oats! It makes it a perfect post workout breakfast.
Carrie always got on my nerves too (or maybe it was because I envied her wardrobe so dang much!). I liked Charlotte because she was so sweet!
I love yucca! I’ve never boiled it before roasting, I will have to try that. I also love adding egg whites to my oatmeal. I use All Whites in the carton and just add 1-2T right into the oats/milk/water combo on the stovetop and it cooks perfectly.
I love the title of this post! Those fries look fantastic! As do the oats…love me some oats!! I know she is scatter brained and all over the place, however; I love Carrie. I watched all of the seasons this past year with my roommate. They were a go to for good nights, bad nights, and nights where we just wanted something on the TV. I love all of those characters!
The first time I had yucca was at this Guatamela/Salvador/Mexican restaurant called Guasalmex. My plate came with steamed or fried yucca and I ordered the steamed. It was sooo good with the salsa! Which store did you go to for the yucca?

I got into the whole SATC thing really late too…caught up all within a few months time (crazy!!) I have to say that my favorite character is Carrie as well. She’s a doll.
Question for you…is the Yucca considered a starch as is the potato??
Now that I’m eating eggs again, I guess I should give them a try in oatmeal? I’ll have to check out your recipe.

Weirdly I think oatmeal is more filling than other cereal, it certainly keeps me sustained for longer than other breakfasts. I love the look of your oatmeal, what a good addition egg beaters are. Not sure if I would be brave enough to try it though!

I read some movie reviews that said SATC 2 wasn’t very good, but I wanted to see it so I am glad you liked it. Never tried yucca but it sure looks nummy! (kinda looks like a big ‘ole parsnip covered in potato skin

Odd… while in the depths of my eating disorder, oatmeal was a major fear food. In fact, I still have problems with it sometimes! Weird how different things “scare” different people. But your bowl of oatmeal does look delicious! But for me, its just too hot to eat anything hot, especially in the mornings!
I love egg beater oatmeal. The bulk it adds is a definite plus. And thanks for showing how you prepared the yucca root! I’ve been seeing it at the farmers market and have wanted to try it but didn’t know how to even begin. Now I know! haha

I’ve heard such amazing things about egg whites and egg beaters in oats and I tried it one time with AWFUL results. Think egg chunks in oats.. not appetizing. I couldn’t eat oats forever after that. So I’m so afraid to try it again!

I actually wasn’t a huge fan of the second movie–I think it strayed from the series too much and some of the Middle East references were not in good taste at all. But it was definitely entertaining and had some great cinematography.
Miranda was my favorite in the series by far. So funny!

I liked SATC2 also! Very cute although the fashion was a little out there for my taste. My favorite character is..I can’t choose. I like them all for different reasons. Samantha was fab in the movie though!!
