Beets. It’s What’s For Dinner

This morning I woke up feeling like I had been hit by a truck. I had a crazy dream and felt very sleep deprived, despite getting a full 8 hours of sleep. Hmm.

Enter: 72% decaf.

(It’s like we’re talkin’ about chocolate here or something).

The Smooth and Really Mellow Blend did the trick and I felt much better afterwards. Thank Coffee!

Sunny-side up egg on a cinnamon raisin English muffin with expired laughing cow cheese.

A few of you have asked how I make my egg so perty-ful. Allow me to let you in on my trick….

In order to avoid having an overcooked bottom or undercooked top, I keep the pan covered and allow the steam to cook the top of the egg–that way I don’t have to flip the egg!

Workout: Elliptical 60 min. while watching a E! Specials on J. Biebs and J. Aniston.

And then the Kale Smoothies continued!

In the MB:

  • 4 strawberries
  • 1/2 frozen banana
  • 1/2 cup plain 1% yogurt
  • 1 cup kale, steamed
  • 1/2 scoop wheatgrass
  • water, stevia ‘n’ ice

The MB was being testy today, hence the green bits. I think it was getting jealous with all my talk of getting a Vitamix. Don’t worry, MB, that’s a looooong time comin’!

This was my first time making beets. You know, other than opening a package from TJ’s.

I wrapped them in foil and roasted them at 375* F for about an hour.

Wow. I just have one question…where have beets been all my life?

The roasting felt like an eternity. I was hovering over the toaster oven like a 5 year old girl waiting for her birthday cake!

It was well worth the wait though.

And for dessert? Look what my dad brought home from the grocery store (after I finally finished off the last carton of ice cream and no longer had to have it staring at me all day).

He claimed he had to get 3 cartons to get the savings. Uh huh.

1) Cherry Nirvana Soy Delicious! I’m not sure how, but I’ve ended up eating that far more regularly than actual ice cream (though for regular old ice cream, some kind of moose tracks type is my fave).

2) Sunny sunny

3) Yes, but mainly because it felt like a good way to finally say something and stop lurking.

Omg, I LOVE butter pecan ice cream. I got it from this ice cream shoppe and ate it with some butter pecan coffee. It was a bit of a b.p. overload but pretty dang good!

I think I’m going to pick up some beets tonight and try roasting them your way. I’ve tried them before and couldn’t get over the “dirt” taste, but maybe they’ll taste better slow roasted? Hmmm…

I love coconut vanilla ice cream. Yum! I can’t stand runny egg yolks, so I have to scramble them or fry them or make an omelette out of them. :D

I’ve NEVER had a beet in my life. It’s one of those foods that I automatically said that I didn’t like w/o really trying (you know, like cottage cheese…which is on my grocery list this week). Is there any other vegetable that you could compare it to!? Can you describe the taste!?!? I’m a little intrigued…may need to add beets to the list too.

my absolute favorite ice cream is chocolate chip cookie dough…but i dislike how a lot of ice creams just have a bit of tiny cookie dough bites…sooo I’m going to have to switch my vote to Butterfinger ice cream!! oh baby…i never ever have ice cream at my house because i have no self control with it….Props to u!!
I hardly eat whole eggs…I like to stick with my eggwhites..scrambled with good old ketchup :)

1) I used to not like coffee flavoured ice cream, but once I had one that had REALLY good coffee flavour, and I fell in looooooove. I love cookies and cream, too! (NOT a fan of chocolate. Blegh.)

2) I like to eat my eggs hard-boiled. I always have to add oil to fried eggs and it doesn’t sit well with my tummy :(

1. Right now I’m digging vanilla because I can add anything I want to it. So yummy!
2. I’ve also been noshing on poached eggs lately. I didn’t used to like runny yolks, but now I can’t get enough.

Wow those english muffins look amazing Ill have to buy some as soon as I get to the store! Fabulous smoothie mixture kale is probably a great sub for spinach! Yum eats as always your such a healthy girl so inspiring! My favorite ice cream is butter toffee from friendlys :) I love omelets! Any type :)

This local ice cream place where I live has the most delicious ever oatmeal cookie low fat frozen yogurt (not tart) but jeez, it’s cinnamony and fantastic.
I like my eggs scrambled usually! With ketchup :)

Cookies n cream is the best. When I get cravings for ice cream, I NEEEDDDD cookies n cream. No ifs ands or butts. If im going to ’splurge’, im getting mahh fave. :)
buttt if they dont have it, MOCHA ALMOND FUDGE PLEEEZZ :D

I love plain ole vanilla ice cream – it’s probably because I have to get cocnut milk ice cream, so eating vanilla ice cream makes it seem kind of “normal”! I love beets too. I really need to try roasting them like that. I have some fresh beets in the fridge! Thanks for the idea!

I have never had a beet before I’m kind of afraid of them! I should just suck it up and try some one of these days!

Right now my favorite flavor of ice cream is s’mores oh man its soo good too bad it’s seasonal for the summer!

I like my eggs scrambled, I’m not a fan of runny eggs but your egg looks so pretty!

Favourite ice cream/…chocolate brownie! Or banana :)
Eggs wise, I was always a scramble girl, or nothing at all – I never got the egg thing!

Favorite ice cream = soft serve swirl, with rainbow sprinkles. It’s been way too long since I had a cone!! And I hate eggs. I know, I’m a horrible person, but cracking them just skeeves me out! Hope you have a great weekend!

I just wanna say I found your blog 2 days ago I think and I've been obsessed. I like how you upload so much photos and your food is always interesting. Because of you, I have a list to go grocery shopping and theres some stuff of yours I wanna try like the oat crepes ;] and some salad stuff. Im thinking of trying kale if I can find it. Anyways cant wait for your next post. Moo haha.

Lately I’ve been on a hunt for the most delish store-bought ice cream, I personally love ciao bella gelato but want to try something more! Is there any other brand of ice-cream you love (besides Breyers)?

Favorite ice cream flavor is probably a really good mint chocolate chip (boring, I know) or frozen tart fro-yo–I’m not a huge ice cream person. My favorite egg method is poached or sunny side up too!

Hope you’re staying out of the heat! I’m roasting (hehe) alive!

Dippy eggs aka sunny side up are my favorite! I cover my eggs like you after putting a drizzle of water over the yolk.. works out perfectly! I love chocolate ice cream. yum yum yum!

Butter almond is such a random flavour! I bet it’s super tasty though. I used to love PB chocolate so now I attempt to make smoothies that flavour. Maybe I’ll try to make some coconut ice cream that flavour actually…hmm I’m getting cravings now. As for eggs…hard boiled all the way. But I’m dying to try your method b/c the runny yolk has my taste buds kinda curious.

1.my fav. flavor of icecream is: mint ting a ling, peanutbutter cup, or strawberry

My mom taught me to make eggs the EXACT same way, and I love it! I actually prefer to get my bottom a little bit more brown and crispy.. but I love the way the yolk is garunteed to be perfect and runny :) I love eggs !

Oh my gosh — I can’t wait to cook my eggs like yours! I love sunny side up eggs but I end up burning the bottom or slicing the yolk as I turn it over. Thanks for the tip!

My favorite flavor of ice cream is Cookies N Cream or Butter Pecan. So delicious. I also just like plain old soft serve from McD or DQ.

I love, LOVE roasted beets, I will have to try to roast them myself, I’ve only had the canned ones or boiled, or off the whole foods salad bar, but those look great and easy, but messy!
