The Case Of The Missing Bread

This is all that was left this morning from the Healthy Blueberry Banana Bread-Cake I baked yesterday. I swear I have no idea where the rest of it went. Absolutely no idea. It must have legs or something. Please report any suspicious activity to the bread police immediately by calling 1-800-BREAD-PO. Thank you for your cooperation.

I ate a slice and then used the other one to make a Greek Yogurt + Apricot Parfait.

After some dates + almond butter, a handful of blueberries and a mini bowl of ice cream, it was time to hit the gym. I played tennis with my dad yesterday so I was more than ready for some quality time with the elliptical…and Ms. Oprah. I did 54 min. and then about 20 min. of full body strength training.

Good sweaty times.

Blueberry Kale Smoothie

  • 1 cup kale, steamed
  • 1/2 cup blueberries
  • 1/2 scoop protein powder
  • 1/4 cup of plain yogurt
  • 1/2 scoop wheatgrass
  • stevia, water, and ice

30 min. after gulping down my smoothie it was time to whip up dinner.

In preparation for dinner tonight, I defrosted 5 large scallops. Little did I know they would shrink after defrosting and then shrink even more after cooking. As a result, I ended up with 5 mini scallops! :(

With my salad, I made a quick Kale Goat Cheese Pesto.

The pesto paired nicely with the scallops and served as a great salad ‘dressing.’ It would have looked a lot more like pesto if I was using a food processor but alas I only had my Magic B.

Ingredients:

  • 1 cup kale
  • 1 clove garlic
  • 1 T extra virgin olive oil
  • a splash of lemon juice
  • 1/2 oz. goat cheese
  • 2 T sunflower seeds
  • salt to taste

Blend/process until fully combined.

I’m gonna have some salmon with the fam later since I got jipped in the scallop department.

Oh and look at what my Momma got from work!! Not to mention she just got a brand new Macbook Pro from work too. Gah so jealous!

Avocado for butter and oil. That’s a brilliant idea. I’ve never thought of it but I can only imagine it makes baked goods so incredible.

That parfait looks awesome! I love how colourful your salads are. I’ve actually never tried goat cheese before, actually. I have heard it can be easier to digest for some people compared to regular cheese, so I may have to try it out.

You make the most delicious looking parfaits! And those cute mini scallops! So adorable!

For steamed kale, could I just microwave it for a bit to wilt it down? Sorry I have no idea why I can’t figure this out myself!

I love your parfait! I just bought some incredibly thick yogurt (not Greek-level thick, but very very liquidy thick… if that makes sense) and I’ll definitely be trying to make a parfait with something I’ll bake soon. :D

Holly–

Yep! For my smoothies, I just wash it and microwave it for about 45 seconds. When I cook kale, however, I put it in a pot with about an inch of water.

I know I’m late to comment, but yum, that bread looks insanely good! I love blueberries and bananas together. :D

I’m so notorious for finishing off baked goods in a single day. Warm and carby? Yep. It doesn’t stand a chance.

I used to HATE how prawns and scallops shrank so much when I cooked them – it was like cheating or something! You’d think you had enough, but nooo….grrr!!

One day I brought home FH pumpkin bread a student made for me last winter. I loooooved it and was so excited to finally have some baked goods around. I put it in the kitchen after school, and when I went to go get a slice in the morning, IT WAS GONE!

I didn’t have a bread thief though – just a hungray little bro who really loves everything and anything that is pumpkin related.

I now put post-its on my baked goods that either say “vegan” or “gluten free” – it usually tends to scare them off. :)

Hahaha that tidbit about the bread thief made me laugh out loud. Don’t you just hate it when food goes missing and you can’t remember eating it? I swear I must have blackouts when I eat treats. ;)

Love that pesto idea! That’s smart to put the goat cheese IN the pesto!

Holy cow.. I am so jealous of your mama ;) My phone has been broken for like a year now, and I am stuck in a stupid contract. I want an iPhone so bad!

… Hehe.. I totally thought the mini scallops on your salad were full cloves of GARLIC before I read the actual words. Talk about garlic breath :P

Oooohhh an iPhone 4! I’m actually thinking of getting one, but heard that there was a flaw to it (the reception is wonky). Would you mind telling me how you/your mom likes it? You’re actually the first person I know who has one!
